2 tablespoons extra-virgin olive oil
2 tablespoons white wine vinegar
Kosher salt and freshly ground black pepper
One 15-ounce can cannellini beans, drained and rinsed
One 15-ounce can kidney beans, drained and rinsed
1/4 cup chopped fresh flat-leaf parsley
1 stalk celery, finely diced
1 scallion, green and white parts, thinly sliced on the diagonal
1/4 small red onion, minced

Steps:

  • Whisk together the oil, vinegar, 1/4 teaspoon salt and 1/8 teaspoon pepper in a medium bowl. Add the beans, parsley, celery, scallions and red onions and stir until well combined. Add additional salt and pepper to taste. Serve at room temperature.

1/4 cup freshly chopped cilantro leaves
Kosher or fine sea salt and freshly ground black pepper
1 (15.5-ounce) can black beans, drained and rinsed
1/2 mango, peeled, flesh removed from the pit and cut into 1/2-inch dice (1 generous cup)
1/2 small jicama (about 1/2 pound), peeled, and cut into 1/2-inch dice (about 2 cup; see Note)
1/2 small red onion, cut in 1/2, then into thin slivers (about 1/4 cup)

Steps:

  • This is a delicious way for me to sneak more fruit and vegetables into our family dinners. More than a 15-minute side dish, this can be dressed this up by spooning it into a radicchio-leaf cup for a first course, complement the next batch of salmon fillets or steaks off the grill, or taken along on your next picnic.
  • Whisk the olive oil, vinegar, and cilantro together in a large bowl until blended. Season lightly with salt and pepper. Add the beans, mango, jicama, and onion and toss gently to coat with the dressing. Season with salt and pepper, to taste. Serve right away or let stand at room temperature for up to 30 minutes. Toss and check the seasoning before serving.

Classic Bean Salad image

You can use any kind or combination of canned beans to make this classic picnic salad, but a mix of white beans, chickpeas and red kidney beans makes it especially colorful. Although this is delicious when freshly made, it gets even better as it sits. If you have time, make it at least an hour or two before serving; it can rest at room temperature for up to 4 hours - but after that, slip it into the fridge. If you want to make this the day before, add the celery and parsley just before serving, so they stay crisp and green.

2 small shallots (or 1 large shallot), peeled
3 tablespoons apple cider vinegar, plus more to taste
1 tablespoon Dijon mustard
Salt and freshly ground black pepper
1/2 cup extra-virgin olive oil, plus more to taste
1 (15-ounce) can chickpeas, drained and rinsed
1 (15-ounce) can cannellini or Great Northern beans, drained and rinsed
1 (15-ounce) can red kidney beans, drained and rinsed
1/2 cup thinly sliced celery
1 cup mixed coarsely chopped fresh parsley and celery leaves

Steps:

  • Mince 1 shallot and place in a large bowl. Thinly slice remaining shallot and set aside.
  • Add vinegar, mustard and a pinch each salt and pepper to the bowl with minced shallot and whisk to combine. Slowly whisk in oil. Season with more salt and pepper to taste.
  • Add chickpeas, cannellini beans, kidney beans, celery, herbs and sliced shallot to the bowl and toss until evenly coated. Taste and add more salt or vinegar. Drizzle with additional olive oil and top with more black pepper, if desired, and serve.

1 large mango, diced, divided (about 1 3/4 cups)
3 tablespoons fresh lime juice
3 tablespoons water
2 tablespoons olive oil
1/2 teaspoon ground cumin
1/2 teaspoon table salt
15 ounces canned black beans, drained and rinsed
1 cup tomatoes, diced
1/2 cup onion, sweet, diced
1/4 cup fresh mint leaves or 1/4 cup fresh cilantro, fresh, cut into thin slivers
1 tablespoon canned jalapeno pepper

Steps:

  • In a large bowl, mash 1/4 cup of diced mango with a fork; whisk in lime juice, water, oil, cumin and salt.
  • Add remaining diced mango, beans, tomato, onion, mint and jalapeno to bowl; toss to mix and coat. Serve immediately or cover and refrigerate up to 1 day. Yields about 1/2 cup per serving.

This is a really good addition to your menu when you're serving chicken enchiladas. It's not just another salad. I have even prepared it using pineapple instead of the mango and it's also good that way. None of us likes cilantro, so we leave it out. I've also used picante sauce from a jar in place of the Jalapeno pepper on occasion. I really don't remember where I got the recipe. I suspect it was in some magazine at some time or another.

3/4 cup frozen corn, caramelized
1 tablespoon olive oil or 1 tablespoon canola oil
1 tablespoon brown sugar
1 small mango, peeled and diced
1/2 red bell pepper, diced
1/2 small jalapeno pepper, minced
1/4 bunch fresh cilantro, chopped
1/2 avocado, peeled and diced
1 teaspoon garlic, minced
1/4 cup red onion, thinly sliced and marinated
2 1/2 tablespoons fresh lime juice
1 teaspoon lime zest

Steps:

  • Marinate the sliced red onion in the lime juice and lime zest for 30 minutes in a small bowl.
  • Meanwhile, caramelize the corn by heating a saute pan over medium-high heat with the oil.
  • Add corn and the sugar and saute until the corn is golden brown.
  • Remove from heat and let cool.
  • Combine all of the salad ingredients with the marinated onions and cooled corn.
  • Toss gently and add salt to taste.
