Fried apple slices can be served savory with a sprinkle of salt or sweet with a dusting of powdered sugar or drizzle of caramel sauce. When you deep fry at home, make sure you are actively engaged and use a thermometer to regulate the oil temperature. Keeping the lid of the pot you are using near by is a good idea.

Vegetable oil, or other high smoke-point oil such as canola or peanut for frying
1 large egg white
1 cup beer, slightly flat
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon cinnamon, optional
1/8 teaspoon cayenne pepper, optional
3 large Granny Smith apples or other firm apple, peeled and cored
Sea salt, powdered sugar or caramel sauce for serving

Steps:

  • Pour enough oil into a medium saucepan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 375 degrees F.
  • Whisk the egg white until frothy then gently stir in the beer, flour, salt, cinnamon and cayenne pepper until smooth.
  • Slice the apples into 1/4-inch rings and pat dry. Working in batches, dip the apple slices into the batter and allow excess batter to drip off.
  • Prepare a plate lined with paper towels or a clean dishcloth.
  • Fry 1 to 2 minutes on each side until golden brown and crispy. Using a slotted spoon, transfer the fried apples to paper towels to drain excess oil. Sprinkle apples with a pinch of salt or if serving as a dessert, with powdered sugar.

12 oz redd's apple ale, 1 bottle
3 red apples
¼ cup powdered sugar
oil, for frying, can be vegetable, canola, or peanut

Steps:

  • Heat oil in a large pot so it's at least 4 inches (10 cm) deep. If you have a thermometer, be sure the oil reaches at least 360ºF (185ºC) for frying.
  • In a bowl, whisk together flour, cinnamon, and Redd's Apple Ale until smooth.
  • Slice off the top and bottom of the apples, and slice each apple into ½-inch (1 cm) thick rounds.
  • With a teaspoon or large piping tip, cut out a circle in the center of the apple ring to make it look like a donut.
  • With a paper towel, pat down the apple slices.
  • Dip the apple slices in the batter.
  • Fry them two to three at a time. Flip each apple slice once during frying and fry until both sides are golden brown.
  • Carefully remove from the oil and place onto paper towels or a drying rack.
  • Cool, then sprinkle with powdered sugar.

3 Granny Smith apples, peeled and cored
Salted Cinnamon Sugar, recipe follows
3 tablespoons sugar
2 tablespoons cinnamon
1/2 teaspoon kosher salt

Steps:

  • Pour enough oil in a medium saucepan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 375 degrees F.
  • In a medium mixing bowl whisk the egg white until frothy. Stir in the beer. Add the flour and salt. Mix until the batter is smooth. Set aside.
  • Cut the onion into 1/2-inch slices and separate into rings. Slice each apple into 5 rings and pat dry with paper towels.
  • Dip the apples slices into the batter and allow any excess batter to drip off. Fry for 1 to 2 minutes each side until golden brown. Using a slotted spoon, transfer the fried apple rings to paper towels to drain. Repeat with the onion rings.

1/4 cup stout beer, such as Guinness
2 jumbo yellow onions, cut into 1/4-inch rings
Vegetable oil, for deep-frying

Steps:

  • Whisk together the flour, granulated garlic, cayenne and 1 tablespoon each salt and black pepper in a large bowl until well blended. In a separate large bowl, whisk together the buttermilk, milk and beer.
  • Dunk the onion rings in the beer mixture and then toss in the flour mixture to coat evenly. Shake off the excess flour and lay the rings on a baking sheet. Let sit for 30 minutes.
  • Meanwhile, fill a heavy pot with 3 inches of vegetable oil and heat to 350 degrees F. Sift the flour mixture to remove any clumps.

1 ½ pounds cod fillets
2 quarts vegetable oil for frying

Steps:

  • In a medium bowl, stir together flour, baking powder, baking soda, and cornstarch.
  • In a large bowl, beat together eggs and milk. Mix in beer. Stir in flour mixture. Season with salt, black pepper, and garlic powder.
  • In an electric deep fryer or a heavy saucepan, heat oil to 375 degrees F (190 degrees C).

  • Beat together egg and milk.
  • Add flour, salt and baking powder mix well.
