Categories     Side Dish

Number Of Ingredients 13

1 TBS EACH: Unsalted Butter & Neutral Oil ((Peanut, Vegetable or Grapeseed))
2-3 Cloves Garlic (- peeled & finely diced)
2 teaspoons Fresh Ginger (- grated (or 1 teaspoon Ginger Powder))
1 small Head Cabbage (- thinly sliced (about 2 pounds) (SEE NOTES))
1 small Yellow Onion (- thinly sliced)
2 large Carrots (- peeled & shredded)
3 large Scallions (- sliced; white/light green part and dark parts separated)
Kosher Salt & Pepper
2 TBS Reduced Sodium Soy Sauce
1 TBS EACH: Honey & Rice Vinegar
1 ½ tsp Mirin
¼ tsp Toasted Sesame Oil
1/8 - ¼ tsp Crushed Red Pepper Flakes - or more to taste

Steps:

  • Make the sauce: In a small bowl or liquid measuring cup, combine all the ingredients from the sauce list. Whisk well to thoroughly combine. Set aside.
  • Stir-fry onions & aromatics: In a large sauté pan over medium-high heat, melt the butter with the oil. Add the onion and stir-fry until almost softened, about 3 minutes. Add the garlic and ginger to the pan along with the white/light green parts of the scallions. Cook, stirring, until fragrant about 1 minute.
  • Add cabbage & carrots: Increase the heat to high and immediately add the cabbage and carrots to the pan and stir well. Let the cabbage cook for 1 minute undisturbed (you want the cabbage to slightly char). Stir and toss the mixture well and then allow to cook undisturbed for another 1 minute. Toss rapidly and continue to cook, stir-frying, for 1 minute.
  • Add sauce: Add the sauce to the pan and toss well so everything is coated. Cook until the cabbage is just tender and softened, about 1 minute.
  • Taste: Remove from heat and stir in the dark green parts of the scallions. Taste and adjust for seasoning with salt, pepper, fresh lime juice and/or sriracha. Transfer to a serving plate.
  • Serve: Top with optional garnishes and serve hot. Enjoy!

SPICY STIR-FRIED CABBAGE

Spicy Stir-Fried Cabbage image

This is a vegetarian version of a classic Chinese stir-fry. The authentic versions I've encountered include some pork or bacon, but the chilies, ginger, garlic, star anise and the cabbage are flavorful enough without meat. I've added carrots for color.

Provided by Martha Rose Shulman

Categories     dinner, easy, quick, weekday, one pot, main course

Time 10m

Yield Serves four

Number Of Ingredients 11

4 garlic cloves, minced
2 teaspoons minced ginger
1/2 teaspoon red pepper flakes
1 star anise, broken in half
2 teaspoons soy sauce (more to taste)
2 tablespoons Shao Hsing rice wine or dry sherry
2 tablespoons peanut or canola oil
1 small cabbage, 1 to 1 1/2 pounds, quartered, cored and cut crosswise into 1/8-inch shreds
1 medium carrot, cut into julienne
Salt to taste
2 tablespoons minced chives, Chinese chives or cilantro

Steps:

  • Combine the garlic, ginger, red pepper flakes and star anise in a small bowl. Combine the soy sauce and wine or sherry in another small bowl.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and tilting it back and forth. Add the garlic, ginger, pepper flakes and star anise. Stir-fry for a few seconds, just until fragrant, then add the cabbage and carrots. Stir-fry for one to two minutes until the cabbage begins to wilt, then add the salt and wine/soy sauce mixture. Cover and cook over high heat for one minute until just wilted. Uncover and stir-fry for another 30 seconds, then stir in the chives or cilantro and remove from the heat. The cabbage should be crisp-tender. Serve with rice or noodles.

SPICY STIR-FRIED PORK WITH CABBAGE

Spicy Stir-Fried Pork With Cabbage image

A fast Chinese-style stir-fry of tender strips of boneless pork, fresh green cabbage and a sweet and spicy sauce made with sriracha, ketchup and tomatoes.

Provided by Lynne Webb

Categories     Pork

Time 30m

Number Of Ingredients 15

1 lb boneless pork loin chops (see notes)
1 tablespoon cornstarch
1 tablespoon low-sodium soy sauce
1 tablespoon Chinese rice wine or sherry
Freshly ground black pepper
1 to 2 tablespoons vegetable oil
3 cloves garlic (very finely chopped)
1/2 red bell pepper (seeded cut into thin strips)
1/2 medium head green cabbage (cored and chopped (4 to 5 cups))
6 to 8 scallions (chopped)
1 teaspoon toasted sesame oil
3 tablespoons ketchup
1 to 2 teaspoons sriracha (use more or less to taste)
1 tablespoon sugar
1/2 cup diced tomatoes

Steps:

  • Trim any excess fat from the edges of the pork chops and slice them against the grain into very thin (1/8-inch) strips.
  • Tip: For easier slicing, wrap each chop individually in plastic and freeze briefly (10 to 15 minutes).
  • Whisk the cornstarch, soy sauce and rice wine (or sherry) together in a small bowl. Add the pork, season with a few grinds of black pepper and toss to coat evenly with the cornstarch mixture. Set aside at room temperature for 10 minutes.
  • To make the sauce, combine the ketchup, sriracha, sugar and tomatoes in a separate bowl and set aside.
  • Film the bottom of a large skillet or wok with the vegetable oil and heat over high heat.
  • Add the pork and stir-fry until no longer pink, about 1-1/2 minutes. Transfer to a plate and set aside.
  • Add the cabbage to the wok, a handful at a time, and begin stir-frying.
  • After about 1 minute, add the red bell pepper and continue cooking until the veggies are crisp-tender, 2 to 3 minutes longer.
  • Add the ketchup mixture and toss to combine with the cabbage. Return the pork to the pan and add the scallions.
  • Drizzle with sesame oil, combine well and continue cooking just long enough for the sauce to thicken slightly. Taste and adjust the seasonings as desired.
  • To serve, plate individual servings alongside steamed white or brown rice.

SPICY STIR-FRIED CORNED BEEF AND CABBAGE

Spicy Stir-Fried Corned Beef and Cabbage image

This clever use of fresh cabbage and leftover boiled corned beef is inspired by Chinese American-style kung pao chicken. It gets fiery heat from chiles, tingling spice from Sichuan peppercorns and delightful crunch from roasted peanuts.

Provided by Justin Chapple

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 15

3 scallions, white parts minced and green parts cut into 1-inch pieces
2 tablespoons minced peeled fresh ginger
2 cloves garlic, minced
2 to 3 teaspoons crushed Sichuan peppercorns, optional
1 tablespoon hoisin sauce
1 tablespoon soy sauce
1 tablespoon dry sherry
1 tablespoon distilled white vinegar
2 teaspoons cornstarch
3 tablespoons peanut or canola oil
1/3 cup dried red chiles, such as Tianjin
One 1-pound piece boiled corned beef, cut into 1-inch pieces
One 1-pound wedge green cabbage (about 1/2 small head), cut into bite-size pieces
1/2 cup roasted peanuts, preferably unsalted red-skinned peanuts
Cooked rice, for serving

Steps:

  • Mix the scallion whites, ginger, garlic and Sichuan peppercorns (if using) together in a small bowl. Whisk the hoisin sauce, soy sauce, sherry, vinegar and cornstarch together in another small bowl.
  • Heat a very large cast-iron skillet or wok over high heat. Add the oil and swirl to coat the pan. Add the chiles and stir-fry until they blister and deepen in color, 5 to 10 seconds. Transfer the chiles to a large bowl with a slotted spoon. Add the corned beef and stir-fry until lightly browned and heated through, 2 to 3 minutes; transfer the beef to the bowl with the chiles.
  • Add the cabbage and scallion mixture to the skillet and stir-fry until the cabbage starts to soften around the edges, 2 to 3 minutes. Return the corned beef and chiles to the skillet. Add the hoisin sauce mixture and stir-fry until hot, about 1 minute. Stir in the peanuts and scallion greens. Transfer to a serving platter. Serve right away with steamed rice.
