BBQ BEEF SANDWICHES
Here is a recipe for stove top cooked barbecue beef that just uses a few simple ingredients you probably have on hand. You can easily pop it all into a crock pot to cook too.

Steps:
- Place the beef roast into a pot, either a stove top pot or slow cooker.
- In a medium bowl, mix the barbecue sauce, orange preserves, mustard, brown sugar and onion. Pour this mixture over the beef
- Cover the pot and cook on the stove, over low heat, for 7 to 8 hours. If you are using a slow cooker, set it to low and cook for the same amount of time, 7 or 8 hours.
- To bake the bbq beef in the oven, set the oven temperature to about 300ºF. Place everything in the pot as directed above, then pop the pot into the heated oven and bake for several hours.
- When it is well cooked and very tender, remove the beef from the pot. You can either cut the meat into thin slices or shred it with two large forks. Put the shredded or sliced beef back into the pot and stir it into the sauce. Cover and cook again on low for 20 to 30 minutes until it is all nice and hot.
- Fill your favorite buns with the barbecue beef.

BARBECUED BEEF SANDWICHES
This recipe came from a military wife almost 30 years ago (thanks Elise) and it couldn't be much easier. Simply combine all ingredients and cook for 3 hours, then shred the meat. Serve it on buns of your choice...and then sit back and take in the compliments! Everyone loves this recipe, and I've used it at fund raising events with great success! Excellent with potato salad or coleslaw.

Steps:
- Place roast in a Dutch oven, and sprinkle with chopped onions. Cover with tomatoes, water, sugar and Worcestershire sauce. Season with salt and pepper.
- Cook over medium heat with lid slightly ajar for 3 hours.
- Remove meat, and shred with 2 forks. Discard bones, fat and gristle. place shredded meat back into sauce, and cook until liquid is reduced, 15 to 20 minutes.

- In a large bowl, combine the first 11 ingredients. Cut roast in half; place in a 5-qt. slow cooker. Pour ketchup mixture over roast. Cover and cook on low for 8-10 hours or until meat is tender., Remove meat and shred with two forks. Skim fat from cooking juices. Return meat to slow cooker; heat through. Using a slotted spoon, serve beef on buns.

BISTRO-STYLE BEEF STEAK SANDWICH

Steps:
- Stack beef steaks; cut lengthwise in half and then crosswise into 1" strips.
- Heat 1 Tbl. olive oil in non-stick skillet over med-high heat til hot.
- Stir-fry beef strips and garlic (1/2 batch at a time), 1-2 minutes or til outside surface is no longer pink.
- Remove from skillet and season with 2 Tbl. soy sauce and pepper.
- Reduce heat to medium.
- Add 2 teaspoons oil to pan (if needed), and stir-fry onion 5 minutes.
- Add mushrooms and continue cooking 2-3 minutes or til veggies are tender.
- Add red pepper, wine and remaining 1 Tbl. soy sauce, bring to a boil.
- Reduce heat and return beef to skillet.
- Heat through.
- Pile beef mixture onto bottoms of rolls.
- Top each with 2 slices cheese.
- Place on cookie sheet with tops next to bottoms cut side up, and broil just til cheese is melted and inside tops are lightly toasted.

TEXAS BARBECUED BEEF SANDWICHES

Steps:
- Finely chop the celery so that you have 2 cups; chop the onions finely to have 2 cups.
- Mix onion and celery with wine, beef broth concentrate, tomato paste, Worcestershire sauce, and chili sauce until well-blended.
- Cook mixture in a saucepan for 20 to 25 minutes, then press mixture through a sieve.
- Cool.
- Place chuck steak in a shallow pan or glass dish.
- Pour marinade over top.
- Turn steak in marinade several times and allow to marinate for 2 hours at room temperature.
- Drain the steak, reserving the marinade.
- Place steak on grill 6 inches above gray coals.
- Grill 30 minutes, brushing with marinade and turning every 5 minutes.
- Heat the remaining marinade and keep warm.
- Toast rolls on grill.
- Cut the beef into paper-thin slices and place on rolls.
- Spoon hot marinade over meat and replace tops of buns.
