Steps:
- Preheat the oven to 375 degrees.
- Put the chopped garlic in 1 TBS of the olive oil with half of the rosemary on the side to use later.
- Toss the potato pieces with olive oil, half of the rosemary, and salt and pepper.
- Bake for 20 minutes, tossing occasionally in order to crisp the outsides.
- Toss with the garlic and remaining rosemary and continue to bake until the potatoes are soft on the inside, about 15 minutes more.
ROSEMARY ROASTED POTATOES
Steps:
- Preheat the oven to 400 degrees F.
- Cut the potatoes into halves or quarters, as long as they are all about the same size. Place the potatoes in a large bowl and add the garlic and rosemary. Generously sprinkle with salt and oil. (The potatoes will absorb a lot of oil and salt; they will taste bland if we don't go big here.)
- Lay the potatoes in a single layer on a sheet tray and roast in the oven for 15 to 20 minutes. Check the potatoes halfway through the cooking process to rearrange so the potatoes will have even cooking time and get evenly browned. The potatoes should be nice and brown and really well flavored. Transfer to a serving bowl and serve. Hot potato!

Steps:
- In a saucepan large enough to hold all of the potato chunks, bring water to a boil.
- Add potatoes, and boil for 2 minutes. You are not trying to cook the potatoes through at this point.
- In a large bowl, combine the oil, garlic, rosemary, salt and pepper. Be generous with the salt, or the potatoes will be bland.
- Drain the potatoes well, and add to the oil and garlic mixture.
- Mix gently, but thoroughly.
- Cover bowl, and let sit for at least 20 minutes, and up to 2 hours.
- Preheat oven to 450.
- Place potato mixture in a roasting pan.
- Bake for 20 minutes.
- Toss potatoes with a spatula.
- Return to the oven for 10 more minutes until cooked through and golden brown.
- Check seasonings, and add more salt or pepper as needed.
- Serve immediately.

- Begin by measuring the oil into the roasting tin, then pop it into the oven to heat through. Wash the potatoes but don't scrape the skins off, then cut them into cubes of roughly ½ inch (1 cm). Place them in a clean tea cloth and dry them as thoroughly as you can, then transfer them to a large plate. - Bring a large saucepan of water to the boil, add salt and the potatoes and cook for 5 minutes.
- Drain, then put ina large baking tin.
- Add the squash, onions and 2 TBs of the oil.

- Preheat the oven to 200C.
- Place the peeled and halved potatoes in a large saucepan and cover with water. Salt the water and bring to the boil, reducing to medium heat and allowing to cook for about 8-10 minutes.
- When the outer edges of the potatoes have softened a little, but the potato is not cooked through, drain into a colander and allow to steam dry for 5 minutes.
- Tip the potatoes back into the saucepan, add the lid, and holding it on securely give it a shake to roughen up the outside of the potatoes.
- Meanwhile, heat up the oil in a large, high-sided baking tray in the preheated oven. This should take maybe 10 minutes or so.

- When golden brown removes the pan from the oven and using tongs transfer the potatoes out of the pan onto a plate covered in a kitchen towel to soak up any excess oil.
- Serve immediately in a lovely serving dish.
