Beef Taco Salad with Chunky Tomato Dressing image

There's nothing dainty about this salad. With mounds of chili-spiced beef and sharp cheddar cheese over a bed of crisp greens, all doused with a chunky tomato lime dressing and topped with a shards of corn chips, it has high-impact flavor and heartiness to satisfy even the biggest appetites.

3/4 pound lean ground beef (90 percent lean or higher)
2 cloves garlic, minced
1 (15.5-ounce) can black beans, drained and rinsed
1 tablespoon chili powder
1/4 teaspoon cayenne pepper, plus more to taste
1/3 cup water
4 medium tomatoes, diced
2 tablespoons olive oil
2 tablespoons fresh lime juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 hearts romaine lettuce, chopped
1/2 cup grated Cheddar
2 ounces baked corn tortilla chips (about 32 chips)

Steps:

  • To prepare the meat, heat a large skillet over a medium-high heat. Add the beef and cook until no longer pink, stirring occasionally and breaking the meat up with the spoon. Add the garlic and beans and cook for 2 minutes more. Add the chili powder, cayenne and water and stir until well combined and some but not all of the liquid has been absorbed. Remove from the heat and allow the mixture to cool slightly. Meat mixture may be made up to 3 days ahead and stored in an airtight container in the refrigerator.
  • To make the tomato dressing, in a medium bowl, combine tomatoes (with their juices), oil, lime juice, salt and pepper. Dressing may be prepared up to 2 days ahead and stored in an airtight container in the refrigerator.
  • Place 2 cups of lettuce on each plate or in a lunch container. Top each serving with 1 cup of the beef mixture then sprinkle with 2 tablespoons of cheese. If making to-go, pack 3/4 cup of the tomato mixture in a separate sealable container and put about 8 chips in a separate bag. Right before eating, pour a portion of the tomato mixture with the liquid on top of each salad, and crush tortilla chips on top.

1/2 (15-ounce) package refrigerated piecrusts
1 (8-ounce) package shredded Italian three-cheese blend, divided
3 medium leeks, thinly sliced (about 1 cup)
2 tablespoons olive oil
8 plum tomatoes, sliced
1 cup loosely packed fresh basil leaves, coarsely chopped
3 garlic cloves, coarsely chopped
1/2 (2.1-ounce) package fully cooked bacon slices, chopped
1/2 cup mayonnaise
1/4 cup freshly grated Parmesan
1 tablespoon fresh lemon juice
1/2 teaspoon pepper
Garnish: fresh basil sprigs

Steps:

  • Preheat the oven to 450 degrees F.
  • Coat a 9-inch tart pan with cooking spray. Fit piecrust into pan according to package directions.
  • Bake for 10 minutes or until golden. Remove crust from oven; sprinkle with 1 cup of the cheese blend.
  • Lower the oven to 375 degrees F.
  • Saute leeks in hot oil in a skillet over medium-high heat until tender; sprinkle over crust. Arrange tomatoes over leeks; sprinkle with basil and garlic.
  • Stir together remaining 1 cup cheese blend, chopped bacon, and next 4 ingredients in a bowl. Spoon cheese mixture over tart, spreading to edges.
  • Bake for 25 minutes or until golden. Cut tart into 4 slices. Garnish, with basil sprigs, if desired.

1 leek
500 g of quality stewing beef
1 cup dry red wine
1 carrot
1 yellow onion
bay leaf
plain flour
1 teaspoon thyme
sea salt
ground black peppercorns
1 beef stock cube
olive oil

Steps:

  • Top and tail leek so that you have the white stalk only.
  • Slice leek lengthwise and then chop into 1 inch segments.
  • Chop carrot into bite size segments.
  • Chop onion.
  • Place flour and seasoning into a bag.
  • Place beef into the bag and shake so that beef is coated with flour and seasoning.
  • In a heavy base frypan, place 1 or 2 tablespoons of oil.
  • On low heat brown beef, remove and place into a casserole.
  • Add a little more oil and stir fry leek, onion and carrot for 2 minutes.
  • Remove and add to casserole.
  • Place the red wine and the stock cube in the frypan and simmer until wine is reduced to half.
  • Add to casserole.
  • Add thyme and 2 bayleaf.
  • Place in a moderate oven and cook slowly for about 90 minutes.
  • Place a lid on the casserole to obtain best results.
  • Serve with mashed potato,steamed french beans with an oil and garlic dressing and steamed button squash or baby zucchini.

3 -5 slices bacon
1 medium red onion, minced
1 pint water
4 ounces honey
4 ounces red wine vinegar
3 ounces tomato paste
2 tablespoons Dijon mustard
1 tablespoon cornstarch
1 teaspoon Worcestershire sauce
1 teaspoon lemon pepper
hot sauce (e.g. Tabasco)

Steps:

  • Fry the bacon until very crisp.
  • Reserve and measure the drippings - you will need 2 or 3 ounces of melted fat.
  • Set the bacon aside and crumble 3 rashers when it is cool.
  • In a medium saucepan over medium heat, sauté the onions, stirring often, until they are all quite brown or are turning black.
  • In the meantime, pour the water, honey and vinegar into a bowl.
  • Mix thoroughly with a whisk.
  • Add cornstarch and whisk thoroughly again.
  • Add tomato paste and whisk thoroughly again.
  • Add the mustard to the onions and gently but thoroughly mix together.
  • Now pour the water, vinegar, honey, cornstarch and tomato paste melange into the saucepan with the mustard and onions.
  • Add the crumbled bacon and optional hot sauce.
  • Stir constantly over medium-high heat until thickening and boiling.
  • Refrigerate in a tightly sealed container.

Another luscious creation from Rachael Ray. I have used turkey bacon; substituted one bunch of scallions for leeks, and cider vinegar for the red wine vinegar with great results. This one is perfect in summer, when these veggies are in season and you don't want to fire up the stove.

4 small steaks, 1 to 1 1/2-inches thick
extra virgin olive oil, for drizzling, plus 1/2 cup
salt & freshly ground black pepper
8 slices bacon, chopped
2 small leeks or 4 large leeks, trimmed of rough tops and roots
1 tablespoon Worcestershire sauce
3 tablespoons red wine vinegar
1 tablespoon Dijon mustard
splash water
2 romaine lettuce hearts, shredded
2 big beefsteak tomatoes

Steps:

  • Heat a grill pan or grill to medium-high heat.
  • Bring steaks to room temperature, drizzle with extra-virgin olive oil and season with salt and pepper on both sides.
  • Place the steaks on the grill, cook meat 10 to 12 minutes for pink centers. Turn twice and let meat rest 5 minutes before slicing.
  • While meat cooks, brown bacon in a drizzle of extra-virgin olive oil in a medium to large skillet over medium-high heat.
  • Chop the leeks then soak in a large bowl of water or separate the chopped leeks by running under water. Dry the leeks in a kitchen towel.
  • Place cooked bacon on paper towels to drain. Pour off all but about a tablespoon of bacon drippings then add leeks and wilt down. Season cooked leeks with salt and peppe, to taste.
  • Transfer the cooked bacon to a food processor and add Worcestershire, vinegar, mustard, some black pepper and a splash of water. Turn processor on and stream in 1/2 cup extra-virgin olive oil.
  • On each dinner plate, arrange a bed of shredded romaine and thickly sliced tomatoes. Slice meat against the grain of the steak. Arrange the steak over the sliced tomatoes. Scatter the leeks over the sliced steaks and pour bacon dressing down over the top.
