1-1/2 pounds beef Top Sirloin Steak Boneless, cut 1 inch thick
2 teaspoons coarse grind black pepper
3/4 teaspoon salt
3/4 teaspoon sweet paprika
2 cloves garlic, minced
1 tablespoon olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
2 jars (7 ounces each) roasted red peppers, rinsed, drained, finely chopped
1/2 cup dry white wine
2 tablespoons tomato paste
3/4 teaspoon dried thyme leaves, crushed or 2 teaspoons minced fresh thyme
1 cup ready-to-serve beef broth
2 teaspoons cornstarch

Steps:

  • 1)Heat oil in large skillet over medium heat until hot. Add onion and 3 cloves garlic; cook and stir 2 to 3 minutes or until onion is tender. 2)Add red peppers, wine, tomato paste and thyme, stirring until tomato paste is blended. Combine broth and cornstarch in small bowl, mixing until smooth. Stir into pepper mixture; bring to a boil. Reduce heat to medium-low; simmer 10 to 12 minutes or until slightly thickened, stirring occasionally. Keep warm. 3)Meanwhile cut beef steak into 1¼ x 1¼ x 1-inch pieces. Combine pepper, salt, paprika and 1 clove garlic in large bowl. Add beef; toss to coat. Thread beef pieces evenly onto six 12-inch metal skewers, leaving small space between pieces. 4)Place kabobs on grid over medium, ash-covered coals. Grill, covered, 5 to 7 minutes (over medium heat on preheated gas grill, 7 to 9 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. To broil, place kabobs on rack in broiler pan so surface of beef is 3 to 4 inches from heat. Broil about 9 to 11 minutes for medium rare (145°F) to medium (160°F) doneness, turning once.

1/2 cup reduced-sodium soy sauce
1/4 cup rice vinegar
1/3 cup sugar
1/4 teaspoon red pepper sauce
6 boneless skinless chicken breasts (2 lb), each cut lengthwise into 4 strips
1 large red bell pepper, cut into 24 pieces
Cooking spray

Steps:

  • Heat gas or charcoal grill. In 2-quart saucepan, mix peanut butter, soy sauce and vinegar until smooth. Stir in sugar and pepper sauce. Cook over medium-high heat about 2 minutes, stirring constantly, until thickened. Place 3/4 cup sauce in small serving bowl to use as dipping sauce.
  • On each of 6 (12-inch) metal skewers, thread 4 chicken strips and 4 bell pepper pieces alternately, leaving about 1/4-inch space between each piece. Brush chicken and bell pepper with some of the remaining sauce.
  • Spray kabobs with cooking spray to prevent sticking. Place kabobs on grill over medium heat. Cover grill; cook 5 minutes. Turn kabobs and brush with sauce; cook 2 to 3 minutes longer or until chicken is no longer pink in center. Discard any remaining sauce used for brushing kabobs during grilling. Serve kabobs with reserved sauce for dipping.

2 pounds skirt, flank or sirloin tip steak, cut into thin, wide strips against the grain
1 cup teriyaki sauce
1 tablespoon minced ginger, plus 1 teaspoon
1 tablespoon minced garlic, plus 1 teaspoon
1 teaspoon salt
1/4 cup smooth peanut butter, plus 1 tablespoon
1/2 cup unsweetened coconut milk
1 1/2 teaspoons sesame oil
2 teaspoons soy sauce
1 teaspoon brown sugar
1 tablespoon lime juice
1/2 teaspoon Thai fish sauce
1/4 teaspoon cayenne pepper
1 tablespoon chopped cilantro
1 tablespoon toasted chopped peanuts
1 cup julienned carrots
1 cup julienned celery
2 cups shiso greens

Steps:

  • Place the beef strips in a medium-sized bowl and pour the teriyaki sauce over them. Add 1 tablespoon of ginger, 1 tablespoon garlic and the salt to the bowl and stir to combine. Marinate, refrigerated, while you make the dipping sauce. In a small bowl, combine the remaining ginger, peanut butter and coconut milk in a small bowl and whisk together. Add the sesame oil, soy sauce, brown sugar, lime juice, fish sauce, cayenne pepper and 1 teaspoon garlic to the bowl and whisk to combine. Place the sauce in a serving bowl and garnish with the cilantro and chopped peanuts. To serve the satays, set-up a Hibachi or indoor grill on the dining table with the carrots, celery and shiso around the grill. Remove the beef strips from the refrigerator and use skewers to thread the meat. Have your guests grill the satays themselves over the grill, about 30 seconds to 1 minute on each side for medium-rare. Serve, with the dipping sauce and veggies on the side.

3 cloves garlic, minced
1/4 cup plus 1 teaspoon soy sauce for dipping
1 tablespoon toasted sesame oil
1 teaspoon light-brown sugar
1/2 teaspoon ground cumin
1/8 teaspoon red-pepper flakes
1 pound boneless rib-eye roast, sliced against the grain into 32 3-by-1/4-inch strips
2 teaspoons canola oil
1/3 cup reduced-sodium canned vegetable broth, or water
1/4 cup smooth peanut butter
1/2 teaspoon ketchup
1/4 teaspoon rice vinegar
Coarse salt and ground pepper
Sesame Rice, for serving (optional)

Steps:

  • In a bowl, combine 2/3 of the garlic with 1/4 cup soy sauce, sesame oil, brown sugar, cumin, and red-pepper flakes. Thread 2 pieces of beef onto each of 16 skewers; arrange in a shallow dish. Pour marinade over beef; refrigerate covered 45 minutes or preferable overnight, turning once.
  • Meanwhile make dipping sauce: Heat canola oil in a small saucepan over medium heat. Add remaining garlic; cook, stirring, until soft, 3 minutes. Add broth and 1/4 cup water; bring to boil. Remove from heat; whisk in peanut butter, ketchup, vinegar, and remaining teaspoon soy sauce. Let cool completely.
  • Heat a grill to high. Season beef with salt and pepper. Remove skewers from marinade, letting excess drip off. Discard marinade. Grill beef 1 to 2 minutes per side for medium. Serve hot with dipping sauce on the side.

4 lbs top sirloin steaks, thinly sliced and threaded onto wooden skewers
6 tablespoons soy sauce
6 tablespoons sesame oil
2 tablespoons rice wine vinegar
4 tablespoons grated fresh ginger
2 tablespoons minced garlic
2 tablespoons olive oil
2 tablespoons sesame oil
1 tablespoon grated fresh ginger
2 tablespoons crushed red pepper flakes
1 bunch green onion, thinly sliced
1 lb blanched unsalted peanuts
1/4 cup soy sauce
1 tablespoon chopped cilantro
salt & freshly ground black pepper

Steps:

  • Combine marinade ingredients and spread evenly over beef skewers.
  • Marinate in refrigerator at least 2 hours.
  • Heat olive and sesame oils in a saucepan.
  • Add ginger,garlic,green onions and cook, covered, over low heat for 30 seconds.
  • Add the crushed red chiles and cook 30 seconds more (make sure heat is very low as chili flakes can burn easily).
  • Add peanuts and soy sauce and add just enough water to cover the peanuts.
  • Bring to a boil and then reduce heat to a simmer for 30 minutes.
  • Remove from heat and cool slightly.
  • Puree in batches in a blender until smooth.
  • Stir in chopped cilantro and season with salt and pepper to taste.
  • Grill the serloin skewers 2-3 minutes per side (or to desired doneness).
  • Serve skewers with dipping sauce and enjoy!
