Number Of Ingredients 6

2 packages (8-1/2 ounces each) cornbread/muffin mix
1 can (14-3/4 ounces) cream-style corn
2 large eggs, room temperature, lightly beaten
1-1/2 cups shredded reduced-fat Mexican cheese blend, divided
1-1/2 cups chopped cooked chicken breast
3/4 cup red enchilada sauce

Steps:

  • Preheat oven to 400°. In a large bowl, combine muffin mix, corn and eggs; stir just until moistened. Stir in 1 cup cheese. In another bowl, toss chicken with enchilada sauce., Fill each of 24 foil-lined muffin cups with 2 tablespoons batter. Place 1 tablespoon chicken mixture into center of each; cover with about 1 tablespoon batter., Bake until golden brown, 13-15 minutes. Sprinkle tops with remaining cheese. Bake until cheese is melted, 3-5 minutes longer. Cool 5 minutes before removing from pan to wire racks. Serve warm. Refrigerate leftovers.

2 cups diced peppers (of your choice)
1 (16-ounce) jar roasted tomato salsa
1 teaspoon salt
1 teaspoon chipotle pepper
1/2 teaspoon dried oregano
2 boxes Jiffy corn muffin/bread mix (or enough cornbread batter for two 9 x 9 -inch pans)
2 eggs
2/3 cup milk
8 ounces frozen corn (thawed)
4 ounces cheddar cheese (divided)
4 ounces pepper jack cheese (divided)

Steps:

  • Bake for 1 hour.

3 cups frozen corn
1 tablespoon vegetable oil
1/4 cup white flour
1/4 cup cornmeal
1 egg
2 garlic cloves
10 -20 cilantro stems, fresh
1 hot pepper
1/4 teaspoon salt
1 teaspoon baking powder
milk

Steps:

  • Add oil to frying pan, on medium heat brown corn until fairly caramelized, will start to make popping sound when done. This browning adds a lot of the flavor.
  • Add browned corn, garlic cloves, hot peppers (or hot sauce), cilantro, and salt to food processor and blend until all ingredients are mixed.
  • Add above mix to a glass bowl, add egg, flour, corn meal, baking powder and mix well with spoon. If necessary add milk to thin. Mixture should be able to hold its shape on a spoon but thin enough to pat down into muffin tin.
  • Spray muffin tin with PAM, spoon in mixture to fill each muffin to 90% full. Put in 375°F oven for 20 minutes, or until tops start to brown slightly.

Fast, easy and tasty -- perfect with a stew or chili. These also freeze well. I first found this recipe in an older Bonnie Stern cookbook many years ago and have been making these ever since.

3/4 cup cornmeal
1 cup all-purpose flour
1/4 cup white sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 egg, lightly beaten
1 cup 1% low-fat milk
1/4 cup unsalted butter, melted

Steps:

  • Preheat oven to 425 degrees.
  • Spray muffin tin with nonstick spray or line with paper muffin cups.
  • Combine cornmeal, flour, sugar, baking powder and salt.
  • Stir well.
  • Combine beaten egg, milk and melted butter (if using normal butter add less salt).
  • Stir into the dry mixture and combine just until blended.
  • Chopped jalapenos (from a tin) can also be added, as can chopped red pepper and/or tinned corn kernels.
  • Scoop batter into prepared muffin pans.
  • Sprinkle cheddar cheese on top of muffins before baking if desired.
  • Bake for 20-25 minutes .

MOM'S TEX MEX CORNBREAD MUFFINS

My mom used to make these to go with her chili on cold days. They are spicy, cheesy corn bread muffins that are excellent. I hope you enjoy them too. You can also use montery jack cheese instead of cheddar cheese. Your favorite salsa works best in these and i have found that home made salsa is the best at making these unbelievable.

2 cups cornmeal mix
1 1/2 cups milk
1 egg
1/4 cup vegetable oil
1 1/2 cups sharp shredded cheddar cheese
2/3 cup mild salsa, drained
1 teaspoon hot sauce (optional)
cooking spray
1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 450 degrees F.
  • Grease muffin pan with cooking spray.
  • Mix egg, milk, cornmeal and oil together in a bowl.
  • Fold in 1 1/2 cup cheese and salsa.
  • Add hot sauce for a spicier muffin.
  • Bake at 450 for 20-25 minutes.
  • During the last 5 minutes sprinkle the tops of the muffins with shredded cheddar cheese.
  • Remove from oven and let cool for 5 minutes before serving.

  • Mix together oats, cornmeal, baking powder, seasoning, and salt.

  • Pour into sprayed muffin tins and bake for around 20 minutes.
  • Don't use muffin or cake wrappers in your tins or the outsides of your muffin won't get that nice crunchy outside.

1/2 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 cups buttermilk
2 tablespoons mayonnaise
2 tablespoons butter, Melted
1/3 cup shortening
4 large eggs

Steps:

  • Heat oven to 425°F.
  • Grease two 12 muffin tins or line with liners.
  • Put all dry ingredients in large bowl and mix well.
  • Add buttermilk, mayonnaise, butter and shortening to dry ingredients.
  • Mix well.
  • Add eggs and blend thoroughly.
  • Pour into prepared muffin tins and bake 10-12 minutes till lightly browned.
  • Use toothpick to test for doneness.
  • NOTE: I added 1 C shredded cheddar cheese on some and cinnamon sugar on some.

1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon pepper
1 (15.25 ounce) can black beans (rinsed and drained)
1 (14.5 ounce) can diced tomatoes with green chilies (undrained)
1 (11 ounce) can whole kernel corn (drained)
1 (10 ounce) can enchilada sauce
2 green onions (diced)
1/4 cup fresh cilantro (chopped)
1 (8.5 ounce) package Jiffy cornbread mix
2 eggs
1 cup shredded Mexican cheese blend

Steps:

  • In a large skillet, brown ground beef over medium heat until no longer pink; drain excess grease.
  • Stir in the cumin, salt, chili powder and pepper.
  • Transfer to a slow cooker; stir in the beans, tomatoes, corn, enchilada sauce, onions and cilantro.
  • Cover and cook on low for 6-8 hours or until heated through.
  • In a small bowl, combine muffin mix and eggs; spoon over meat mixture. Cover and cook 1 hour longer or until a toothpick inserted near the center comes out clean.
  • Sprinkle with cheese; cover and let stand for 5 minutes before serving.

6 cups maseca masa corn flour, for tamales
1 cup corn oil
1 1/2 teaspoons baking powder
2 cups sugar (or to taste)
2 cups pineapple juice
2 (15 ounce) cans pineapple chunks in juice

Steps:

  • Pre-heat oven to 350°F.
  • With an electric mixer, blend the corn flour, corn oil, sugar,baking powder and the pineapple juice to obtain a consistent mixture.
  • Pour the mixture to half level in each 4-inch muffin mold.
  • Add five pineapple tidbits into each mold and fill the rest with the mixture.
  • Bake for 20 minutes.
