Call them kabobs, kebabs, or shish kabobs. Either way, what's a summer grill without them? Marinate sirloin chunks in soy sauce with garlic, ginger, and olive oil. Skewer with veggies and get to grilling!

Marinade Ingredients:
1/3 cup extra virgin olive oil
1/3 cup soy sauce
3 tablespoons red wine vinegar
1/4 cup honey
2 cloves garlic, minced
1 tablespoon minced fresh ginger
Freshly ground black pepper to taste
Kebab Ingredients:
1 1/2 pounds top sirloin steak, cut into 1 1/2-inch cubes
1 large bell pepper
1 - 2 medium red onions
1/2 - 1 pound button mushrooms

Steps:

  • Marinate the meat: Mix the marinade ingredients together in a bowl and add the meat. Cover and chill in the fridge for at least 30 minutes, preferably several hours or even overnight. (Heck, I've kept the meat marinating for a couple days, still great.)
  • Soak skewers in water: Soak the wood or bamboo skewers in water for at least 30 minutes before grilling. This will help prevent them from completely burning up on the grill.
  • Thread the meat and veggies onto the skewers: Cut the vegetables into chunks roughly the width of the beef pieces. Taking care not to poke yourself, thread the meat and vegetables onto double bamboo skewers. One way to do this safely is to put the piece that you are trying to pierce on a cutting board, and then push the skewers through the piece to the board. Using double skewers will help you turn the kebabs on the grill. If you keep a little space between the pieces, they will grill more evenly. Paint the kebabs with some of the remaining marinade.
  • Grill on high, direct heat: Prepare your grill for high, direct heat. Grill for 8 to 10 minutes, depending on how hot your grill is, and how done you would like your meat, turning occasionally.
  • Let rest: Let the meat rest for 5 minutes before serving.

Use the reserved marinade to baste the kabobs as they cook for extra flavour! Buy the beef in a block so you can cut them into large cubes. Makes 8 skewers.

750g / 1.5 lb beef tri tips (, sirloin steak tips or other steak cut, (Note 1))
3 capsicum / bell peppers ((red, yellow green))
1 large red onion
16 small mushrooms (, 3.25cm / 1.3" wide)
1 tsp minced garlic ((2 large garlic clove))
1 tsp onion powder ((or sub with garlic powder))
2 1/2 tbsp soy sauce ((Note 2))
2 tbsp Worcestershire sauce
2 tbsp balsamic vinegar
1 tbsp vegetable oil ((or other neutral flavoured oil))
1/4 tsp black pepper
16 flat metal skewers (, 25 - 30cm / 10 - 12" (Note 3))
Olive oil (, for drizzling and cooking)
Finely chopped parsley (, garnish (optional))

Steps:

  • Cut the beef into 3.25cm / 1.3" wide cubes.
  • Mix Marinade in a bowl. Add beef. Marinate for 1 - 24 hours, minimum 20 minutes.
  • Cut capsicum and onion into 3.25cm / 1.3" wide squares.
  • Thread beef (reserve Marinade), vegetables and mushrooms on each skewer. I use 2 pieces of vegetables between each piece of beef. Thread loosely - don't smush together tightly (helps even cooking).
  • Brush kebabs lightly with Reserved Marinade (including vegetables), then drizzle with olive oil.
  • Heat BBQ or large skillet over high heat. Add 1 tbsp oil, then when smoking, cook kebabs in batches for 2 minutes on each side until slightly charred (4 sides = 8 minutes in total), basting with Reserved Marinade as you go.
  • Transfer to plate, cover loosely with foil and rest for 3 minutes before serving. Garnish with parsley if desired. See note for pictured Pink Dipping Sauce.

1 1/2 to 2 pounds boneless beef sirloin
3 cloves garlic, minced
2 teaspoons smoked paprika
1/2 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup red wine vinegar
1/2 cup olive oil
Special equipment: 4 (12-inch) metal skewers

Steps:

  • Cut the beef into 1 1/2 to 1 3/4-inch cubes and place into a large mixing bowl. Set aside.
  • In the bowl of a food processor combine the garlic, paprika, turmeric, cumin, salt, pepper and red wine vinegar. With the processor running drizzle in the olive oil.
  • Pour the marinade over the meat and toss to coat. Place in the refrigerator in an airtight container or a sealable plastic bag and allow to marinate for 2 to 4 hours.
  • Preheat the grill to medium-high heat. Thread the meat onto the skewers leaving about 1/2-inch in between the pieces of meat. Place on the grill and cook, with lid lowered, 2 to 3 minutes per side, 8 to 12 minutes in all (8 minutes for rare and 12 for medium). Remove from the heat to aluminum foil, wrap and allow to rest for 2 to 3 minutes prior to serving.

1-2 tsps honey

Steps:

  • To prepare this Greek beef souvlaki recipe, cut the beef into equal sized (3 cm/1 inch) cubes and set aside.
  • Prepare the marinade for the beef kabobs. In a large bowl add all the ingredients for the marinade and the meat and blend to coat. Cover the bowl with plastic wrap and let them marinade for at least 1 hour in the fridge. Preferably leave them to marinade overnight so they soak up even more all those wonderful flavours.

40 ounces pineapple chunks, undrained
1/2 cup packed brown sugar
2/3 cup cider vinegar
1/4 cup soy sauce
2/3 cup catsup
2 teaspoons ground ginger
1 1/2 teaspoons honey or 1 1/2 teaspoons liquid smoke
3 lbs round tip roast, cut into cubes
1/2 lb fresh mushroom cap
1 small onion, quartered
1 green pepper, cut into 1 inch pieces
4 -6 red potatoes, boiled and cubed

Steps:

  • Drain pineapple saving juice.
  • Combine juice and next 6 ingredients, mix well.
  • Pour in large shallow dish.
  • Add meat, cover and marinate in refrigerator over night.
  • Drain meat, retaining marinade.
  • Bring marinade to a boil in a saucepan.
  • Add mushrooms, reduce heat and simmer, uncovered, for 10 minutes.
  • Drain, saving marinade.
  • Alternate meat, pineapple, mushrooms, onions, green peppers and potatoes as desired on skewers.

1.5 lb. boneless sirloin steak (cut into 1-inch cubes)
2 tablespoons olive oil
1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon sea salt)
1/2 teaspoon black pepper
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper

Steps:

  • If using wooden skewers, soak them in water for 30 minutes. I prefer to use metal skewers.
  • Place the beef cubes in a large bowl. Add the remaining ingredients and use your hands or a large spoon to mix well.
  • Thread the seasoned beef cubes on the skewers and place them on a large rimmed broiler-safe baking sheet. You can line the baking sheet with foil for easier cleanup.
  • Heat your broiler on high (450-500 degrees F).
  • When the broiler is hot, broil the kabobs, directly under the heating element (4 inches below), until cooked to your liking. I broil them for 3 minutes on each side. Serve immediately.

2 bottles 7 seas Italian dressing
1 whole fresh mushrooms

2 lbs. top sirloin (cut into 1 1/2" cubes )
2 red bell peppers (sliced into 1 1/2" chunks)
1 pint cherry/grape tomatoes
2 small or 1 large zucchini (cut into 1/4" slices)
1 large red onion (cut into 1 1/2" chunks)
1/4 cup olive oil
3 tablespoons lemon juice
2 tablespoons balsamic vinegar
1 tablespoon dried oregano
2 tsps EACH paprika, garlic powder
1 tsp EACH onion powder, ground cumin, ground coriander, sugar, salt
1/4 tsp EACH cayenne pepper, pepper
1/2 large cucumber, peeled
1/2 teaspoon salt
4 oz. oz. cream cheese (cubed and softened (I use 1/3 less fat))
2 oz. feta at room temperature ((about 1/3 cup loosely packed feta))
8 oz. plain Greek yogurt ((1 cup))
3 cloves garlic, peeled
1/3 cup loosely packed fresh dill
2 tablespoons lemon juice
1 tablespoon red wine vinegar
Salt and pepper to taste

Steps:

  • Add vegetables to a freezer bag or large bowl. Set aside.
  • Whisk all of the Marinade ingredients together in a large bowl or large freezer bag (whatever dish you are going to use to marinate your beef). Remove 2 tablespoons Marinade and add to vegetables. Toss to coat. Refrigerate.
  • Add beef to remaining Marinade and toss to coat. Marinate 4-6 hours in the refrigerator.
  • Meanwhile, dice cucumber and add it to a fine mesh sieve. Sprinkle with 1/2 teaspoon salt and stir. Let sit at least 15 minutes then press down on cucumbers with the back of a spoon to release extra juices. Set aside.
  • Add feta and cream cheese to food processor and pulse until cheeses are mixed. Continue to mix 3-4 minutes until cheeses are very smooth. Add remaining Whipped Feta Tzatziki ingredients, including cucumber, and pulse until smooth. Refrigerate. Stir in milk a little at a time if needed when ready to serve in order to thin to desired consistency.
  • NOTE: Soak wooden skewers for at least 30 minutes in water before grilling or broiling.
  • When ready to cook, thread beef, and veggies onto skewers.
  • Grease and preheat grill to medium high heat. Grill skewers until lightly charred all over, approximately 2-3 minutes per side. You can check a beef cube for doneness if desired. Let rest 5 minutes before serving.
  • Serve with chilled Whipped Feta Tzatziki. Kabobs are also delicious with couscous/rice/quinoa and/or pita bread.
  • Preheat oven to 450 degrees F. Line a rimmed baking sheet with foil for easy clean up. Lightly spray with nonstick cooking spray.

1 pound sirloin steak (lean boneless)
8 ounces Russian salad dressing (or your favorite vinaigrette dressing.)
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1/8 teaspoon pepper
1/8 teaspoon garlic powder
10 slices bacon (cut in half (optional))
2 red peppers (green or yellow peppers, medium size, cut into 1 inch squares)
1 onion (large, cut into 2 inch pieces)
1/2 pound fresh mushrooms
1 pint cherry tomatoes

Steps:

  • Trim the fat from the steak and cut it into 1 1/2 inch cubes. Place the meat in a shallow, non metallic container. Combine the salad dressing, lemon juice, Worcestershire sauce, pepper and garlic powder and pour the mixture over the meat. Cover and marinate in the refrigerator for 8 hours.
  • If you are using wooden skewers soak them for an hour before using so they don't burn.
  • Drain the meat, reserving the marinade in a bowl. If using the bacon, wrap it around the meat and secure with a toothpick.
  • Alternate the meat and vegetables on 4 skewers or more if you have short skewers. Grill the kabobs over medium hot coals for 15 minutes or until the desired degree of doneness While they are cooking, turn and baste the kabobs frequently with the reserved marinade.

My Mom has cooked this recipe for as long as I remember. Now that I live on my own, I can't wait to go back home over the holidays to have this excellent dish. Mom would probably be upset that I gave it away, but it is so delicious that I think everyone should have a chance to experience it. Technically shish kabobs use lamb, so these should be called beef kabobs, but this is the family recipe and what we call it.

⅓ cup vegetable oil
½ cup soy sauce
¼ cup lemon juice
1 tablespoon prepared mustard

Steps:

  • Whisk the vegetable oil, soy sauce, lemon juice, mustard, Worcestershire sauce, garlic, black pepper, and salt together in a bowl; pour into a resealable plastic bag. Add the beef, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 8 hours or overnight.
  • Add the mushrooms to the bag, coat with the marinade, squeeze out excess air, and reseal the bag; marinate in the refrigerator another 8 hours.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.

1/4 cup soy sauce
1/4 cup olive oil
1 Tablespoon dijon mustard
1 Tablespoon minced garlic

1 1/2 pounds sirloin steak or sirloin tips (cut into 1-inch cubes)
1 pound baby Yukon gold potatoes

Steps:

  • In a medium bowl, mix the marinade ingredients together. Reserve 1 tablespoon of the marinade.
  • Place the cubed meat into a large plastic zip-tight bag and pour all but the reserved marinade over it, then seal and squish to coat well. Place in the refrigerator for 1-6 hours to marinate. This is also a good time to place wooden skewers in water to soak.
  • Meanwhile, boil the potatoes in a large pot of salted water until just tender enough to pierce with a fork, about 6-8 minutes. Drain well, then toss with 2 tablespoons of olive oil, rosemary, and mustard. Set aside.

1 pound sirloin steak (cut into 1 inch cubes)
1 small onion
2 tablespoons creamy peanut butter (unsalted)
1 tablespoon tomato paste
1 tablespoon olive oil
2 teaspoons AllSpice
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
1/4 teaspoon powdered ginger
Cooking spray

Steps:

  • In the bowl of a food processor, grate the onion until it's finely chopped. Add the peanut butter, tomato paste, olive oil, all spice, salt, crushed red pepper and powdered ginger. Continue to blend until the mixture is well combined and smooth.
  • Transfer the sauce from the blender to a large bowl. Add the beef to the sauce and toss to coat. Cover and refrigerate for 20 minutes to allow the beef to marinade.
  • When ready to grill, thread the beef onto wooden or metal skewers. Pour any leftover marinade on top of the beef kabobs.
  • Preheat the grill to medium-high heat, and grease the grill with cooking spray.
  • Cook on the preheated grill, flipping once, until meat is browned, about 10-15 minutes.

These easy Beef Shish Kabobs are an easy summer meal, great for entertaining!

1 ½ pounds sirloin steak
2 bell peppers
1 large red onion
½ cup oil
¼ cup Worcestershire sauce
2 tablespoons soy sauce (low sodium)
2 tablespoons apple cider vinegar
1 tablespoon garlic powder
1 tablespoon honey
1 teaspoon onion powder
½ teaspoon chipotle chili powder (optional, for a bit of kick)

Steps:

  • Cut steak, peppers, and onion into roughly equal sized pieces (about 1-1.5").
  • In a large freezer bag or storage container, stir together the oil, Worcestershire sauce, soy sauce, vinegar, garlic, honey, onion powder, and chipotle powder if using.
  • Add steak and let marinate for at least one hour, and up to 6 hours.
  • If using wooden skewers, soak for 10 minutes before skewering beef and vegetables.
  • Skewer beef cubes and vegetables, alternating as you like. I try to ensure 3-5 cubes of beef per skewer, depending on how long the skewers are.
  • Preheat the grill to medium-high.
  • Place kabobs directly over the heat, cooking for 4-5 minutes before flipping and cooking another 4-5 minutes. See notes for cook times depending on your preference for doneness.
  • Remove and let sit 5 minutes before serving.

1 bottle (8 ounces) French or Russian salad dressing
2 tablespoons lemon juice
2 tablespoons Worcestershire sauce
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1 pound beef top sirloin steak, cut into 1-1/2-inch cubes
8 to 10 bacon strips, cut in half
1 sweet red pepper, cut into chunks
1 green pepper, cut into chunks
2 small zucchini squash, cut into chunks
8 medium fresh mushrooms
1 large onion, quartered, optional

Steps:

  • In a small bowl, whisk the first five ingredients. Place half of marinade in a large resealable plastic bag. Add beef; seal bag and turn to coat. Refrigerate 8 hours or overnight. Cover and refrigerate remaining marinade., Drain beef, discarding marinade in bag. Wrap bacon around beef cubes. On four metal or soaked wooden skewers, alternately thread beef and vegetables., Grill, covered, over medium heat 10-15 minutes or until beef reaches desired doneness and vegetables are tender, turning occasionally and basting frequently with reserved marinade.

The key to great kabobs is to give your meat plenty of time to marinate and don't rush it! I like to marinate at least 4 to 6 hours.

2 lbs good quality beef (I used top sirloin, cut into 1 1/2" pieces)
2 Bell peppers (any color, sliced into 1 1/2" wide pieces)
1 large Purple Onion (sliced into 1 1/2" wide pieces)
15 medium bamboo or wood skewers
1 cup mild olive oil
1/2 cup fresh lemon juice (from 2 medium lemons)
1 tsp salt (we love fine sea salt)
1 tsp freshly ground black pepper
4 garlic cloves (pressed)
3 Tbsp fresh or frozen dill (chopped (or 1 Tbsp dry dill weed))
2 dry bay leaves

Steps:

  • Combine all of your marinade ingredients in a large glass or plastic bowl (do not use aluminum) and stir to combine.
  • Slice meat and transfer it into the marinade bowl, stirring well to coat. Marinate beef in the refrigerate4 to 6 hours, stirring a few times while marinating to make sure meat is evenly marinated. Note: Sometimes after long periods of refrigeration, the oil in the marinade can firm up a bit; it will liquify again if you let the marinated meat sit at room temp 30 minutes before skewering.
  • Soak bamboo or wooden skewers at last 30 min. After the meat is done marinating, slice veggies and skewer them with meat onto Bamboo skewers. Brush/ pour remaining marinade over skewers.
  • Grill over med/high heat for about 8-10 minutes or until you've reached the desired doneness, rotating every 2-3 minutes for even grilling. Remove kebobs from grill and let them rest at least 5 minutes before eating. If you cut into them right away, they will juice out and end up dry. Serve with your favorite steak sauce

1 medium onion (peeled and grated (red or white))
1 lb lean ground lamb
1 lb lean ground beef ((90/10 mix))
4 cloves garlic ( peeled and finely chopped)
2 tbsp parsley (finely chopped )
1 tsp salt
1/2 tsp black pepper
1 tsp ground turmeric
1 tsp paprika
ground sumac ((optional))
1 lemon ((optional))
toum garlic spread ((optional))

Steps:

  • Grate the onion (See Note 1) and place onion in a sieve set over a bowl to drain. Press and squeeze out all the excess water. Discard onion juice or save for soup or other use.
  • In a bowl add the ground beef, lamb, shredded onions, garlic, parsley, salt, pepper, turmeric, paprika, and mix well. Divide meat mixture evenly into eighths and form the meat onto 8 skewers, molding and flattening meat around skewer with wet hands to make each kebab about 8" long (See Note 2). For a traditional look, gently press meat between thumb and index finger once meat is on skewer (see photos). If not using skewers, shape meat into eight 8" hot dog/sausage shapes. Set kabobs aside.
  • Clean your grill and heat to 350°F. Oil your grill so these don't stick. Place the skewers on grill and cook until browned on each side and cooked through, 3-4 minutes per side.
  • Allow meat to rest for 3-5 minutes and sprinkle with a little ground sumac, squeeze of lemon and or toum garlic spread. Serve immediately.
