Follow Alton Brown's Food Network recipe to make Gyro Meat with Tzatziki Sauce at home; the creamy cucumber-yogurt sauce goes perfectly with ground lamb.

1 medium onion, finely chopped or shredded
2 pounds ground lamb
1 tablespoon finely minced garlic
1 tablespoon dried marjoram
1 tablespoon dried ground rosemary
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Tzatziki Sauce, recipe follows
16 ounces plain yogurt
1 medium cucumber, peeled, seeded, and finely chopped
Pinch kosher salt
4 cloves garlic, finely minced
1 tablespoon olive oil
2 teaspoons red wine vinegar
5 to 6 mint leaves, finely minced

Steps:

  • Process the onion in a food processor for 10 to 15 seconds and turn out into the center of a tea towel. Gather up the ends of the towel and squeeze until almost all of the juice is removed. Discard juice.
  • Return the onion to the food processor and add the lamb, garlic, marjoram, rosemary, salt, and pepper and process until it is a fine paste, approximately 1 minute. Stop the processor as needed to scrape down sides of bowl.
  • To cook in the oven as a meatloaf, proceed as follows:
  • Preheat the oven to 325 degrees F.
  • Place the mixture into a loaf pan, making sure to press into the sides of the pan. Place the loaf pan into a water bath and bake for 60 to 75 minutes or until the mixture reaches 165 to 170 degrees F. Remove from the oven and drain off any fat. Place the loaf pan on a cooling rack and place a brick wrapped in aluminum foil directly on the surface of the meat and allow to sit for 15 to 20 minutes, until the internal temperature reaches 175 degrees F. Slice and serve on pita bread with tzatziki sauce, chopped onion, tomatoes and feta cheese.
  • To cook on a rotisserie, proceed as follows:
  • Form the meat mixture into a loaf shape and place on top of 2 overlapping pieces of plastic wrap that are at least 18 inches long. Roll the mixture in the plastic wrap tightly, making sure to remove any air pockets. Once the meat is completely rolled in the wrap, twist the ends of the plastic wrap until the surface of the wrap is tight. Store in the refrigerator for at least 2 hours or up to overnight, to allow the mixture to firm up.
  • Preheat the grill to high.
  • Place the meat onto the rotisserie skewer. Place a double-thick piece of aluminum foil folded into a tray directly under the meat to catch any drippings. Cook on high for 15 minutes. Decrease the heat to medium and continue to cook for another 20 to 30 minutes or until the internal temperature of the meat reaches 165 degrees F. Turn off the heat and allow to continue to spin for another 10 to 15 minutes or until the internal temperature reaches 175 degrees. Slice and serve on pita bread with tzatziki sauce, chopped onion, tomatoes, and feta cheese.
  • Place the yogurt in a tea towel, gather up the edges, suspend over a bowl, and drain for 2 hours in the refrigerator.
  • Place the chopped cucumber in a tea towel and squeeze to remove the liquid; discard liquid. In a medium mixing bowl, combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar, and mint. Serve as a sauce for gyros. Store in the refrigerator in an airtight container for up to a week.
  • Yield: 1 1/2 cups

½ cup shredded, seeded cucumber

Steps:

  • Prepare Tzatziki Sauce: In a small bowl stir together Greek yogurt, cucumber, red wine vinegar, dill, minced garlic and salt. Cover and chill up to 4 hours until ready to serve.
  • Prepare Beef Gyros: Preheat oven to 325 degrees F. Line a 9x5-inch loaf pan with parchment paper; coat paper with cooking spray.
  • In a food processor combine the 1 cup onion and the water; cover and process until smooth. Press pureed onion through a fine-mesh sieve to remove excess liquid; discard liquid. Return onion to food processor. Add the ground beef, egg, bread crumbs, oregano, marjoram, garlic, salt and pepper). Cover and process until mixture forms a paste.
  • Lightly press meat mixture into prepared loaf pan. Place loaf pan in a 13x9-inch baking pan. Pour enough boiling water into baking pan to reach halfway up sides of loaf pan. Bake 35 to 40 minutes or until done (160 degrees F) (see Tip). Drain off fat. Cool 10 minutes. Remove; cut into slices about 1/4-inch thick.
  • Fill pita bread with meat, tomato, cucumber and red onion slices; top with cheese. Serve with Tzatziki Sauce.

Steps:

  • Place red onion in a food processor and process until finely chopped.
  • Remove the onion from the food processor and place in a tea towel, squeezing to remove all the juices.
  • Return the onion back to the food processor with the remaining ingredients and pulse for approximately 1 minute until you get a paste like consistency. TIP: The gyro beef mixture will form together in the food processor, similar to a ball of dough.
  • Place mixture in a glass baking dish. Flatten and smooth the meat into a nice meatloaf.
  • Place in a water bath and cook at 325°F for 60-75 minutes or you have an internal temp of 165°F-170°F.
  • Once removed from the oven, drain the fat.
  • Allow to cool for 5-10 minutes and place on a wire rack (I also put a pan under the rack to catch any drippings) and place a heavy object on top to compress the gyros meat. I used a cast iron skillet with 3 cans inside the skillet for additional weight.
  • Remove the weight and let rest for 30 minutes.
  • Slice the meat into desired sized slices.
  • Place meat slices on a baking sheet and broil for 3-5 minutes until crispy!
  • Serve in pita bread with lettuce, sliced onion, sliced tomato and this Authentic Greek Tzatziki Sauce.

1 1/2 lbs chicken breast, pork, lamb or beef
3-4 tablespoons Homemade Greek Seasoning ((click link for recipe))
2 tablespoons extra virgin olive oil
1 medium yellow onion (cut in half and then thinly sliced)
Toppings: Finely shredded red cabbage, thinly sliced red or yellow onions, chopped tomatoes (thinly sliced onions, chopped tomatoes)
8 whole wheat pitas of flatbreads
Homemade Tzatziki Sauce ((click link for recipe))
dried sumac (, for sprinkling on top (optional))

Steps:

  • Add the Greek Seasoning to the meat, toss to combine, and let marinate for at least 15 minutes.
  • Heat the oil in a large skillet over medium-high heat. When the oil is hot, add the strips of meat and cook until golden brown on all sides. Add the sliced onions and continue to saute until the onions are tender and translucent, about 5-7 minutes. If the mixture is too dry, add a little more olive oil. Add more Greek Seasoning to taste.
  • Wrap the pitas/flatbreads in aluminum foil and warm them in the oven.
  • Spread 1/4 cup of the chicken mixture on each pita and top with red cabbage, onions, tomatoes and drizzle with tzatziki sauce. Sprinkle with dried sumac. Serve immediately.

My version of Alton Brown's delicious gyro recipe.

Tzatziki Sauce (recipe link in directions)
lettuce
sliced tomatoes
sliced sweet onion
1 medium size onion, roughly chopped
1 lb ground beef
1 lb ground lamb
2 large cloves of garlic
1 Tbsp dried marjoram
1 Tbsp dried ground rosemary (or a small sprig of fresh, taken off the main stem)
2 tsp Kosher salt
1/2 tsp ground black pepper

Steps:

  • Run the onion in a food processor for about 15 seconds. Place the onion in the center of a kitchen towel and squeeze out the juice and return to the food processor.
  • Add the meat, garlic, spices, salt and pepper to the onion, and process. Do so until it looks like a fine paste, about a minute. Place the mixture in a loaf pan and press evenly.
  • Bake in a water bath (place loaf pan inside another pan filled with water) at 325°F (165°C) for about an hour or more until temperature reaches 165-170°F (75°C.)
  • Remove from the oven, drain fat, and place on a cooling rack.
  • Cover meat with aluminum foil and a heavy weight (Alton suggests a brick) for about 15 minutes until internal temperature is 175°F (79°C) (I found the times are not quite accurate, and I didn't know if the brick actually had an effect, but I think the important part is getting the meat to the correct temperature.)
  • Place meat on a cutting board and slice as thinly as possible with an electric knife (using anything else would be much more difficult.)
  • I added the following step myself as I think it mimics the rotisserie a bit more. Add a few slices to a nonstick frying pan (very little or no oil) and heat gently until the meat browns a little.
  • In another pan, heat the pita bread.
  • Finally, place the meat on one half of the pita, topped with tzatziki sauce, lettuce, tomatoes, and onion. You could also put a little Greek dressing on the tomatoes too (extra virgin olive oil, vinegar, salt, oregano.)
  • Serve Homemade Greek Gyros with rice pilaf or a Greek salad, and enjoy!

  • Once the time is up let the pot sit undisturbed for 15 minutes. Then move the valve to venting. Open the pot and stir. Season to taste with salt and pepper.
  • Make the tzatziki sauce. Combine yogurt, cucumber, dill, salt and garlic in medium bowl. Stir until creamy and combined. Salt and pepper to taste.
  • Serve beef over pita folds with Tzatziki sauce, onions, tomatoes, lettuce and feta.

Now I just need to figure out gyros so that I can have it on that. Cooking time is for the chilling it is not necessary but I like mine served cold.

.75oz - 1lb new york strip steak
1 teaspoon Mediterranean Spice Blend
1 tablespoon avocado oil
½ cup plain greek yogurt
¼ cup grated cucumber
1 tablespoon lemon juice
½ teaspoon dry dill
½ teaspoon garlic powder
salt to taste
4 flatbreads
1/4 cup thinly sliced red onion
3/4 cup sliced cucumber
1/2 cup halved cherry tomatoes

Steps:

  • Heat grill to medium high heat, approximately 375-400 degrees F.
  • Season both sides of the steak with Mediterranean Spice Blend and avocado oil. Rub in to the steak.
  • Make sure grill grates are clean and rub down with olive oil soaked rag or spray with cooking spray.
  • Place seasoned steak on the grill. Grill each side for 4-6 minutes depending on the thickness of the steak and your desired doneness. Remove steak from grill and let sit for 10 minutes.
  • While the steak is resting to a bowl add yogurt, grated cucumber, lemon juice, dry dill, garlic powder and salt. Stir together and set aside.

1/4 cup finely chopped parsley
1/4 cup crumbled feta cheese
1 tbsp oregano
1 tsp crushed red pepper flakes
1 tsp cumin
1/2 tsp salt
2 cloves garlic, minced
3/4 cup plain Greek yogurt
1 lemon, juiced
2 tbsp chopped chives
2 cloves garlic, minced
salt & pepper, to taste
4 buns
1/4 red onion, sliced
1 beefsteak tomato, sliced
butter lettuce

Steps:

  • Make the tzatziki sauce by mixing Greek yogurt, 2 minced garlic cloves, chopped chives, lemon juice together. Add salt & pepper to taste, and let sit in the fridge.
  • In a bowl, combine ground beef, chopped parsley, feta cheese, oregano, crushed red pepper, 2 minced garlic cloves until just combined. Be careful to not over mix, and don't add salt yet!
  • Form into 4 patties and set aside on a plate. Heat a large skillet over medium heat for 5 mins.
  • Add 1-2 tbsp of oil to the pan and allow to heat for another 30 seconds.
  • Add burgers to the skillet and give a generous pinch of salt to each pattie. Sear on both sides for about 3 minutes, until cooked through.
  • Toast the buns face down in a pan until golden. Slather homemade tzatziki on both sides and top with burger, sliced red onion, tomatoes & butter lettuce.

4 white or wheat pitas
½ red onion (thinly sliced)
1 tomato (thinly sliced)
romaine lettuce
1 medium cucumber + ½ teaspoon salt (peeled and sliced )
2 cups cold plain Greek yogurt
4 teaspoons minced garlic
⅓ cup chopped dill (fresh or frozen, (may sub 2 tablespoons dried dill))
1 ½ tablespoons freshly squeezed lemon juice

Steps:

  • Place steak, olive oil, garlic, oregano, salt, pepper, and juice from 1/2 lemon in a large resealable bag. Press excess air out and seal bag. Refrigerate for 1-8 hours.
  • Spread cucumber slices out on a paper towel. Sprinkle generously with salt on both sides and allow to rest for 5 minutes. Wrap cucumber slices in paper towels, squeeze excess liquid out, and transfer to a food processor or blender.
  • Add remaining sauce ingredients to blender and pulse until smooth and creamy. Cover and chill until ready to use.
  • Preheat grill, grill pan, or cast iron skillet, to medium-high heat. Use tongs to transfer steak to grill and discard excess marinade. Cook steak for 6-8 minutes on each side until desired doneness (I recommend leaving just a hint of pink in the center for super juicy, tender meat with lots of flavor!)
  • Transfer steak to a cutting board and allow meat to rest for a few minutes before slicing very thinly across the grain.

4 cloves garlic, smashed
Juice of 1 lemon
2 tsp. red wine vinegar
2 tbsp. extra virgin olive oil
2 heaping tbsp. plain yogurt
1 tbsp. dried oregano
Salt and pepper
1 1/2 lbs. boneless, skinless chicken breast
Onion (or Beef) Marinade
1½ tablespoons dried oregano
1½ teaspoons salt
1 tablespoon onion powder
1½ tablespoons garlic powder
2 teaspoons freshly ground black pepper
2 teaspoons beef bouillon powder
2 teaspoons dried parsley flakes
1 teaspoon dried thyme
1½ tablespoons sweet paprika powder
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1/4 cup Olive Oil
2 teaspoons Red Wine Vinegar
2 large onions, sliced
1 1/2 lbs. beef stir fry meat
Tzatziki Sauce
¼ lb. cucumber, peeled and finely chopped
2 garlic cloves, peeled
2 tbsp extra virgin olive oil

Steps:

  • Combine all chicken marinade ingredients. Place in a ziplock bag and marinate overnight or for several hours.
  • Combine all onion (or beef) marinade ingredients. Place one half in a ziploc bag and the other half in another ziploc bag. Marinate the onions in one bag, the beef in another overnight or for several hours. If you are not using beef, just make half the marinade.
  • Once you are ready to cook the meat, the chicken breasts can be grilled, baked, or pan fried until they reach an internal temperature of 165 degrees. The beef can be browned in a large skillet with the onions.
  • While the beef and/or chicken are cooking, make up the tzatziki sauce. Place the cucumber in a fine strainer, salt it abundantly and let it stand for 5 minutes. Squeeze all the excess water out of the cucumber.
  • Add the garlic and olive oil to a food processor and blend until it forms a smooth paste.
  • Place the cucumber, garlic paste, dill and yogurt in a big bowl along with some salt and pepper. Mix thoroughly. Set aside.
  • To assemble the gyros, place some beef or chicken, marinated onions on top of a homemade or store bought pita. Top with tzatziki sauce, tomatoes, and feta cheese if desired.

1/4 teaspoon allspice powder
1/4 cup grated onions (squeezed to remove liquid)
1 1/4 teaspoon salt + 1/2 teaspoon black pepper
1 cup Greek yogurt
1 clove garlic, grated
1 tablespoon lemon juice
1 teaspoon dill weed (or more!)
Pita bread, sliced onions, tomatoes, shredded lettuce

Steps:

  • In a large bowl combine the ground lamb, beef, garlic, all spice powder, onions, salt, and pepper. Mix to combine. Shape the meat into 12 small patties. Alternately, you could just shape them into 4-5 larger ones. Set aside.
  • In a small bowl, combine the ingredients for the tzatziki sauce. Add salt and pepper to taste. Set aside for serving.
  • In a large skillet, heat 1 tablespoon of oil and fry the patties for 3-4 minutes (smaller) and 6 minutes (larger) or until they are cooked to desired doneness.

¼ teaspoon pepper
1 cucumber (sliced)
1 cup shredded lettuce
2 roma tomatoes (diced)

16 ounces plain Greek yogurt
1 cucumber (peeled and seeded)

1 teaspoon red wine vinegar

Steps:

  • Pour beef broth into the bottom of the Instant Pot.
