In Provence, the garlic-infused mayonnaise called aioli is typically served with a platter of raw and boiled vegetables and sometimes fish. With its intense creamy texture and deep garlic flavor, it turns a humble meal into a spectacular one. In this recipe, an assortment of colorful roasted vegetables stand in for the raw and boiled ones. It makes a very elegant side dish to an entrée of roasted fish or meat, or can be the main event of a vegetable-focused meal. The aioli can be made up to three days ahead and stored in the refrigerator. The vegetables are best roasted right before serving.

1 small head broccoli, cut into florets and the stem cut into bite-size pieces
1 small head cauliflower, cut into bite-size florets
3 medium beets, peeled and cut into 3/4-inch wedges
3 medium turnips, peeled and cut into 3/4-inch wedges
1 acorn squash, halved, seeded and cut into 1-inch wedges
2 bunches scallions, trimmed and halved lengthwise
Extra-virgin olive oil, for drizzling
Kosher salt, to taste
Freshly ground black pepper, to taste
Pomegranate seeds, for serving (optional)
1 to 3 garlic cloves, grated or mashed to a paste
1 teaspoon lemon juice, more to taste
1/8 teaspoon fine sea salt, more to taste
1 large egg
1 large egg yolk
3/4 cup extra-virgin olive oil

Steps:

  • Heat oven to 425 degrees. Place broccoli and cauliflower together on one large rimmed baking sheet or pan, and beets and turnips on another. Place squash and 1 bunch scallions on individual pans. Toss all vegetables with olive oil, salt and pepper until well coated. Roast scallions 12 to 15 minutes; broccoli and cauliflower 20 to 30 minutes; squash 30 to 40 minutes; and beets and turnips 40 to 50 minutes. Toss all periodically while roasting.
  • Combine garlic, lemon juice and salt in a blender or food processor and let sit a minute or two. Add eggs and blend until combined. With the blender running, slowly add the olive oil in a thin, steady stream. You can use a mortar and pestle if you prefer. Taste for seasoning and add more salt and lemon juice if needed.
  • Arrange roasted vegetables on platter and sprinkle with pomegranate seeds if using. Serve with the aioli on the side.

2 tablespoons vegetable oil
1 onion, chopped
1 clove garlic, minced
1 teaspoon chopped fresh ginger root
1 green bell pepper, chopped

1 (10.5 ounce) can beef broth
1 tablespoon cornstarch
1 teaspoon white sugar
1 tablespoon soy sauce
1 tablespoon oyster sauce

Steps:

  • In a large skillet over medium high heat, saute the beef slices in the oil for 5 minutes, or until well browned. Add the onion, garlic and ginger and saute for 5 more minutes. Then add the green bell pepper, carrot and beef broth. Reduce heat to low and let simmer.

3 pounds crudites, such as carrots, celery, radishes, endives, and Little Gem lettuces
Kosher salt and freshly ground pepper
1 small head cauliflower or 1 bunch Broccolini, or a combination, cut into florets
2 bunches assorted baby beets, preferably gold and Chioggia, trimmed and peeled
8 ounces small new potatoes, scrubbed
6 hard-cooked eggs, peeled and halved
Extra-virgin olive oil, for drizzling
2 recipes Poached Shrimp
Tonnato Mayonnaise
Vegan Green-Goddess Dip
Lemon wedges, for serving

Steps:

  • Prepare an ice-water bath. Peel carrots and trim tops; slice in half lengthwise. Clean celery and slice into sticks. Trim radishes. Slice endives and Little Gems into wedges. Place crudites in ice-water bath until crisp and beginning to curl, 10 minutes. Drain well; wrap in paper towels. Refrigerate in resealable plastic bags up to 1 day.
  • Bring a large pot of water to a boil; season generously with salt. Add cauliflower and cook until crisp-tender, 2 to 4 minutes. Transfer to ice-water bath. Return pot of water to a boil, add beets, and cook until fork-tender, about 22 minutes. Drain, let cool slightly, and cut into wedges. Store in an airtight container up to 1 day.
  • Meanwhile, bring potatoes to a boil in another pot of water; season generously with salt. Cook until easily pierced with the tip of a knife, 8 to 9 minutes. Drain; let cool completely.
  • Season eggs and cooked vegetables with salt and pepper; drizzle with oil. Serve with crudites, shrimp, tonnato mayonnaise, dip, and lemon wedges.

A Passover meal doesn't have to cause a ruckus in the kitchen, or leave you scrambling to serve it. Our herb-coated beef tenderloin and creamy garlic aioli require little hands-on time, and you can enjoy the main at room temperature. With a little prep, you'll be good to gather.

2 heads garlic
3 tablespoons extra-virgin olive oil
1 large egg
4 teaspoons fresh lemon juice
Kosher salt and freshly ground pepper
3/4 to 1 cup vegetable oil
1 center-cut beef tenderloin (3 pounds), trimmed and tied
1 cup each packed fresh dill, cilantro, and parsley leaves

Steps:

  • Preheat oven to 400°F. Trim tops of garlic by about 1/2 inch; place in parchment-lined foil and drizzle with 1 tablespoon olive oil. Wrap to seal and roast until soft, 1 hour. Unwrap and let cool completely.
  • Slip garlic cloves out of their jackets and into a blender. Blend with egg, lemon juice, 1/2 teaspoon salt, and 1/8 teaspoon pepper until smooth. With motor running, slowly stream in 3/4 cup vegetable oil until thick and smooth; if too thin, add up to 1/4 cup more oil. Refrigerate in an airtight container at least 30 minutes and up to 3 days; season to taste before serving.
  • Place beef on a rack set in a rimmed baking sheet; season generously with salt and pepper. Refrigerate, uncovered, at least 4 hours and up to overnight. Preheat oven to 275°F. Pat beef dry; brush with remaining 2 tablespoons olive oil. Transfer to a roasting pan or large ovenproof skillet, such as cast iron. Roast until a thermometer inserted in center reads 125°F for medium rare, 60 to 65 minutes. Tent with foil; let stand 15 minutes.
  • Finely chop herbs on a large cutting board and spread out in an even layer. Untie roast and roll in herbs, pressing to coat. Transfer to a serving platter, slice, and serve with aioli.

BEEF WITH HORSERADISH-BEET AIOLI



Beef With Horseradish-Beet Aioli image

For this modern take on traditional boiled beef, a beef fillet is very gently simmered (never boiled) with root vegetables in stock, then sliced up rosy rare and dolloped with a homemade horseradish aioli and some flaky sea salt. It's piquant, juicy and on the lighter side of a beefy main course. Tenderloin works best here, but it's not generally considered kosher, so if you are making it for Passover, Rosh Hashana or another Jewish holiday, use a boneless rib roast or center cut London broil. The magenta-colored beet horseradish keeps in the fridge for weeks, and it's also great on roast beef sandwiches.

3 pounds center-cut beef tenderloin, boneless rib roast or center-cut London broil, trimmed
2 teaspoons kosher salt, more as needed
1 1/2 teaspoons black pepper
Finely grated zest of 1 lemon
2 garlic cloves, finely grated on a microplane or mashed
3 large leeks, white and light green parts, trimmed, halved lengthwise and rinsed
1 tablespoon extra-virgin olive oil
1/2 cup dry white wine
5 cups mixed root vegetables, such as parsnip, carrot, turnip, celery root and rutabaga, trimmed, peeled and cut into 3/4-inch chunks (1 1/2 pounds trimmed)
10 smashed and peeled garlic cloves
6 cups good-quality beef stock (or chicken stock in a pinch)
1 small bunch thyme, tied with kitchen twine
1 bay leaf
Lemon juice, as needed
Coarse sea salt, as needed
Chopped chives, for garnish
1 medium horseradish root (about 10 ounces), peeled and cut into large chunks
1 small raw beet, peeled
2/3 cup white wine vinegar
1 1/2 tablespoons granulated sugar
1/2 teaspoon kosher salt
1 large egg, at room temperature
1 large egg yolk, at room temperature
Juice of 1/2 lemon
1/2 teaspoon kosher salt
1 cup extra-virgin olive oil

Steps:

  • Prepare the beef: Pat the beef dry and season all over with salt, pepper, lemon zest and grated garlic. Cover with plastic wrap and refrigerate at least 1 hour or overnight.
  • Prepare the fresh horseradish and beets: In a food processor fitted with the grating blade, grate horseradish and beet. Replace the grating blade with the food processor chopping blade. Add vinegar, sugar and salt. Process until mixture is finely chopped, stopping occasionally to scrape down the sides of the bowl, 2 to 3 minutes.
  • Prepare the aioli: In a medium bowl, whisk together egg, egg yolk, lemon juice and salt. Whisking constantly, add oil in a thin, steady stream until fully incorporated. (Or do this in the blender if you prefer.) Aioli should be emulsified, but somewhat loose. Stir in 2 to 4 tablespoons horseradish mixture, to taste; reserve remaining horseradish mixture and serve alongside aioli and beef. Chill aioli until needed; it will keep for up to 5 days.
  • Remove beef from refrigerator. If needed, fold the thin end of the meat over itself so the meat becomes an evenly thick log, then tie ends with kitchen twine. (Skip this step if the meat is already an evenly thick log.)
  • Bundle three leek halves together with kitchen twine, securing them in at least two places so that the leeks don't slip out. Repeat with remaining leek halves.
  • Heat oil over medium-high heat in the bottom of a wide Dutch oven. Add beef and brown well on all sides, about 10 minutes. Transfer meat to a platter. Stir in wine and cook, scraping up any browned bits from bottom of pan, until reduced by half, about 3 minutes.
  • Add leeks, root vegetables, garlic and stock to the pot. Tie thyme branches together with twine and drop into the pot. Stir in bay leaf. Bring mixture to a simmer.
  • Add meat and any juices on the plate and cook, partly covered, at a gentle simmer (do not let it come to a boil) until meat reaches desired doneness (120 degrees on an instant-read thermometer for rare), 15 to 25 minutes. Immediately remove meat from pot, transfer to a plate, and tent with foil to rest 10 minutes.
  • If vegetables are not quite tender, continue to simmer them until they are. Taste stock and season with salt and a squeeze of lemon.
  • Slice the meat thinly just before serving. To serve, spoon vegetables into shallow bowls and arrange meat on top. Ladle a little of the broth over and around meat and vegetables. Sprinkle with coarse sea salt and chopped chives. Serve with aioli and additional fresh horseradish and beets.

3 large egg yolks, room temperature
1 1/2 tablespoons wine vinegar
2 -3 tablespoons fresh lemon juice
3/4 teaspoon salt

1 cup olive oil
3/4 cup vegetable oil
3 -4 tablespoons plain yogurt or 3 -4 tablespoons sour cream
2 (13 3/4 ounce) cans beef broth
2 cups water (or as needed)
1 medium onion, unpeeled, halved
1 bay leaf
3 lbs center-cut beef tenderloin, fat trimmed, tied
4 leeks, trimmed, well rinsed (white parts only)
1 lb slender carrot, pared, trimmed, halved crosswise (about 6-8)
8 ounces green beans, trimmed
1 lb small red new potato, scrubbed
salt (to taste)
watercress leaf (to garnish)

Steps:

  • Make Light Aioli: Place garlic, egg yolks, vineger, 2 T. lemon juice, the salt, and cayenne in food processor or blender and process until garlic is pureed. With machine running, add both oils in thin, steady stream to make mayonnaise.
  • Transfer mayonnaise to serving bowl and fold in 3 T. yougurt. Taste and add more yogurt and lemon juice if needed. Mayonnaise should have a pleasant tang. Refrigerate covered at least 30 minutes to allow flavors to blend.
  • Place beef broth, the water, onion, and bay leaf in Dutch oven or heavy casserole large enough to fit beef without crowding; heat to boiling. Place beef in boiling broth and add water if needed to completely immerse meat. Adjust heat to maintain a steady simmer, cover pan, and cook until instant-read thermonmeter inserted in center of beef reads 125 degrees, about 25 minutes. Transfer beef to platter and let stand to cool.
  • Meanwhile, add leeks and carrots to broth; simmer covered about 15 minutes. Add green beans and continue to simmer just until vegetables are tender, about 5 minutes. Transfer vegetables to a second platter to cool completely. Reserve broth for other use.
  • Using vegetable peeler, remove strip of peel from the middle of each potato. Place potatoes in saucepan and add cold water to cover. Heat to boiling. Salt water and boil potatoes covered just until tender, 10-20 minutes. Drain, rinse under cold running water, and transfer to platter of vegetables to cool.
  • Beef and vegetables should be served cool at room temperature. If necessary, refrigerate lightly covered.
  • To serve, cut beef into 1/4"-thick slices. Arrange beef slices overlapping on large platter, then arrange vegetables around beef. Garnish with watercess. Pass aioli.
