Steps:
- Cook the rice according to the directions on the package.
- Preheat the oven to 350 F.
- In a large casserole dish, mix the cooked rice, chicken broth, Ro*tel, chicken and 3/4 of the cheese. Spread evenly in the dish.
- Sprinkle with the remaining cheese.
- Bake for 30 minutes or until the chicken is cooked thoroughly.

- Preheat oven to 350 degrees.
- Boil chicken breasts until done.
- While chicken is boiling, mix cream of mushroom soup , cream of chicken soup, and Minute rice with Velveta and Rotel.
- Dice chicken, add to cheese mixture, and bake for 20 minutes.

Stir in yogurt, Rotel, chili powder, rice and beans. Pour mixture over the chicken. Top with shredded cheese. Bake 30-40 minutes. Top with Fritos and serve with a nice, fresh salad.
