This is a good belly-warmer for when it's cold. Or, if you're like me, you can eat stews/soups anytime of year. ;)

2 1/2 lbs beef stew meat, cut into bite sized cubes
1 cup chopped onion
4 medium potatoes, peeled and diced small
3 large carrots, peeled and thinly sliced
2 (14 ounce) cans sauerkraut, undrained
2 (14 ounce) cans diced tomatoes, undrained
6 cups beef broth
1 bay leaf
2 tablespoons chopped parsley
1 teaspoon thyme
1 tablespoon brown sugar
1/2 teaspoon pepper
1/2 teaspoon paprika

Steps:

  • Place beef cubes, onion, diced potatoes, sliced carrots, sauerkraut and diced tomatoes in the slowcooker; mix around.
  • Pour all remaining ingredients over top.
  • Cover slowcooker and cook on low for about 7 hours.
  • Remove bay leaf, stir well and then serve.

I had leftover sauerkraut and one pound of ground beef in my refrigerator so I did a search and found this one. It's originally a South Beach recipe.

1 lb extra lean ground beef (less than 10% fat)
2 -3 teaspoons olive oil (depends on your pan)
1 cup onion, chopped
1 tablespoon garlic, minced
2 cups chicken stock (or 1 14 oz. can chicken broth)
28 ounces beef broth (2 14-oz cans)
14 ounces diced tomatoes with juice, canned
14 ounces sauerkraut, undrained
1 cup water (optional)
1 tablespoon brown sugar (use Splenda for South Beach Diet)
1 tablespoon Worcestershire sauce
3 -4 dried bay leaves
3 tablespoons parsley, minced (1-2 T dried parsley)
1 teaspoon rubbed sage
fresh ground black pepper

Steps:

  • In heavy frying pan, heat 1 teaspoons olive oil, add ground beef and brown well, breaking into small pieces with turner. This will take as much as ten minutes but don't rush the browning step.
  • While ground beef browns, combine chicken stock, beef stock, canned tomatoes, sauerkraut, Splenda or brown sugar, Worcestershire sauce, bay leaves, parsley and sage in large stock pot. Bring to a low simmer.
  • When beef is well browned, add to soup in pot. Deglaze pan with a bit of the soup liquid, scraping off any browned bits, and add to soup.
  • Wipe out frying pan and add other 2 teaspoons olive oil. Saute onions 2-3 minutes, until starting to soften, then add garlic and saute 1-2 minutes more. Add to soup, reduce heat under soup pot and let soup simmer at low heat about one hour. After an hour, taste for seasoning and add water if soup seems too strong. Simmer 15 minutes more if adding water. Season to taste with fresh-ground black pepper before serving. Serve hot, with sour cream if desired.

1 pound smoked sausage, such as kielbasa, diced
1 large onion, finely chopped
1 rib celery, finely chopped
1 tablespoon minced garlic
1 cup hard cider
1 (32-ounce) jar sauerkraut, drained and rinsed briefly
8 cups canned low-sodium chicken broth
1 cup peeled and cubed potatoes
3 sprigs fresh thyme
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat a large soup pot over medium-high heat and add the sausage. Cook until the sausage is caramelized and the fat is rendered, 4 to 6 minutes. Add the onions and celery and cook, stirring occasionally, until vegetables are soft and lightly browned, about 4 minutes. Add the garlic and cook, stirring, for 1 minute. Add the cider and cook until almost completely reduced. Add the sauerkraut, broth, potatoes, thyme and pepper and bring to a boil. Reduce the heat to a low simmer and cook, stirring occasionally, until potatoes and sauerkraut are very tender and the broth is flavorful, 45 minutes to 1 hour. Taste and adjust the seasoning, if necessary. Serve immediately, with hot, crusty bread on the side.

To ensure a balanced flavor, rinse the sauerkraut before adding it to this soup. This tones down the intense sharpness of the sauerkraut and allows the smokey kielbasa and other aromatics to shine through.

3 tablespoons unsalted butter
14 ounces kielbasa, diced
1 onion, diced
2 stalks celery, diced, plus 1/4 cup celery leaves, roughly chopped
1 1/4 pounds russet potatoes, peeled and diced
1 1/2 teaspoons caraway seeds
1 14.5-ounce can sauerkraut, drained and rinsed
Kosher salt and freshly ground pepper
1/2 cup heavy cream
2 tablespoons spicy brown mustard
1/4 cup fresh dill, roughly chopped

Steps:

  • Melt the butter in a large wide pot or Dutch oven over medium heat. Add the kielbasa and cook, stirring occasionally, until golden and crisp, 3 to 5 minutes. Remove with a slotted spoon to a plate, leaving the drippings in the pot.
  • Add the onion, diced celery and potatoes to the pot and cook, scraping up any browned bits with a wooden spoon, until the onion and celery are softened, about 5 minutes. Add the caraway seeds and sauerkraut and cook, scraping up any remaining browned bits, 1 to 2 more minutes. Add 6 cups water, 1/2 teaspoon salt and a few grinds of pepper. Cover and bring to a boil. Uncover, reduce the heat to a rapid simmer and cook until the potatoes are tender, 15 to 20 minutes.
  • Stir together the heavy cream and mustard in a small bowl. Once the potatoes are tender, reduce the heat to medium low and whisk the heavy cream mixture into the soup. Return the kielbasa to the pot. Increase the heat to medium and simmer until thickened slightly, 3 to 5 minutes. Season with salt and pepper.
  • Divide the soup among bowls. Top with the chopped celery leaves and dill.

Steps:

  • Sauté ground beef and pork and onions with olive oil in a soup pot until brown.
  • Add sauerkraut and mushrooms (with their liquids) and pickles; stir together with the meat.

2 Polish sausage (kielbasa)
6 potatoes, cooked and sliced about 1/2 thick
2 lbs sauerkraut
1 can cream of mushroom soup
2 large onions, diced
1 tablespoon caraway seed
salt and pepper

Steps:

  • Slice kielbasa into 1 inch rounds; brown in skillet.
  • Brown the onions.
  • Drain juice from sauerkraut and add 1 to 2 tablespoons sugar.
  • In a large casserole, make layers of sliced potatoes, sauerkraut, kielbasa, and onions.
  • Mix soup with 1/2 cup water and pour over other ingredients.
  • Sprinkle with caraway seeds.
  • Cover and bake at 375 degrees for about 1 hour.
  • Uncover and bake an additional 15 to 20 minutes until top is brown.

10 ounces sauerkraut
9 ounces bacon, chopped
1 onion, chopped
1 large garlic clove, crushed
4 1/4 cups cold water
1/2 teaspoon paprika
2 teaspoons chopped fresh dill
5 ounces smoked sausage, sliced (your choice of sausage)
5 ounces sour cream
sea salt & freshly ground black pepper

Steps:

  • Rinse the sauerkraut in cold water and leave to drain.
  • Place sauerkraut, onion, garlic and cold water in a large saucepan with seasoning.
  • Bring to the boil, then simmer for 15 minutes.
  • Meanwhile, fry the chopped bacon in a deep frying pan until the fat starts to run.
  • Stir in the paprika and mix into the sauerkraut mixture.
  • Return to a gentle simmer for another 15 minutes then add the dill and sausage of your choice.
  • Stir in the cream, check the seasoning and reheat until just on the point of boiling.
  • Serve with rye bread.
