Red Thai curry paste, rich with dried red chiles, is great with beef, chicken, fish, or shrimp.

1 tablespoon vegetable oil
1/4 cup red curry paste
1 pound sirloin steak, trimmed and cut against the grain into very thin strips
1/2 pound green beans, trimmed and cut in half crosswise
2 cups large diced pineapple (12 ounces)
1 1/2 cups low-sodium chicken broth
1 cup unsweetened coconut milk
Cooked jasmine rice, for serving
1/2 cup fresh basil leaves, torn

Steps:

  • In a large skillet or wok, heat oil over medium-high. Add curry paste and cook, stirring, until fragrant, 30 seconds. Add steak and cook, stirring, until browned, 2 minutes. Add green beans and pineapple and cook, stirring, until pineapple starts to release juices, 1 minute. Add broth and coconut milk and bring to a boil. Reduce heat and cook at a rapid simmer until green beans are crisp-tender, 8 minutes. Serve over rice, topped with basil.

I just love a good curry. The secret, in my opinion, is the best curry paste you can find so if you have a local Asian grocer that stocks a homemade paste buy it! This recipe is extremely flexible in terms of the veggies or meat you add. Other yummy ingredients would be red peppers, mushrooms, a bit of eggplant or beef instead of chicken.

2 chicken breasts, sliced into strips
1 clove garlic, minced
3 shallots, minced
100 g green beans, trimmed and cut in half
1 (225 g) can bamboo shoots
1 red chile, trimmed and sliced
250 g fresh pineapple, sliced
1 tablespoon vegetable oil
2 tablespoons green curry paste
1 (400 ml) can coconut milk
1 stalk lemongrass, bruised
1 tablespoon fish sauce
1 lime
250 g basmati rice
coarsely chopped coriander, to garnish

Steps:

  • Heat a large frying pan or wok and add the cooking oil, curry paste and three tablespoons of coconut milk.
  • Stir-fry for a couple minutes, then add the garlic, chilli and shallots.
  • Fry another 2-3 minutes then add the meat and cook until it is coloured on all sides.
  • Add the bruised lemon grass to the pan along with the beans, fish sauce and the rest of the coconut milk.
  • Lower the heat and simmer gently for 25 minutes or until the meat is tender.
  • Add a squeeze of lime juice at the end.
  • While the curry is simmering, wash the rice and place it in a pot with three times as much water (about 750ml).
  • Boil, then take the heat down to low, cover and leave to cook for 10 minutes.
  • Remove the pan from the heat and leave the rice without taking off the lid for another 10 minutes.
  • Just before serving, stir in the bamboo shoots, a bit of coriander and pineapple.
  • Heat through and serve over rice, garnished with another sprinkle of coriander.

1 tablespoon olive oil, or as needed
4 tablespoons red curry paste
2 teaspoons fish sauce, or more to taste
1 teaspoon crushed lemongrass, or more to taste
1 teaspoon crushed ginger, or more to taste
3 skinless, boneless chicken breasts, cut into small pieces
2 red bell pepper, cut into strips
2 yellow bell pepper, cut into strips
2 onions, diced
1 (14 ounce) can coconut milk
1 (8 ounce) can pineapple tidbits, drained
3 cups uncooked white rice
6 cups water

Steps:

  • Heat oil in a wok over medium heat. Add curry paste, fish sauce, lemongrass, and ginger and cook and stir to release the oils, about 30 seconds. Add chicken, stir to coat, and cook until browned and no longer pink in the center, 5 to 7 minutes. Stir in bell peppers and onions and cook for 1 minute. Add coconut milk and pineapple; simmer until sauce thickens, 15 to 20 minutes.
  • Meanwhile, bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes.
  • Taste and adjust seasonings in curry before serving over cooked rice.

1 lb boneless skinless chicken breasts cut into bite-size pieces
2 cloves garlic, finely chopped
1 teaspoon finely chopped gingerroot
2 to 3 teaspoons red Thai curry paste (depends on how spicy you like it)
1 small onion, sliced
1 cup frozen peas
1 can (13 oz) coconut milk (not cream of coconut)
1 tablespoon packed brown sugar
1 tablespoon soy sauce
1 medium red bell pepper, sliced
1/4 cup finely chopped fresh cilantro leaves
1 tablespoon chopped fresh basil leaves
1 can (8 oz) sliced water chestnuts
1 can (20 oz) pineapple chunks in natural juice, drained
Cooked white rice for 5 servings

Steps:

  • In 4-quart saucepan or Dutch oven, heat oil over high heat. Add chicken, garlic and ginger; cook and stir 2 to 3 minutes. Add the curry paste; cook and stir 1 to 2 minutes.
  • Stir in remaining ingredients. Reduce heat; cover and simmer 30 to 40 minutes or until sauce has thickened and chicken is no longer pink in center.
  • Serve with rice.

I prefer the taste of homemade red curry paste, and the same goes for green curry paste. It is a more authentic flavour, and much more fun to make from scratch in your own kitchen, than to drive to the supermarket to pick up a jar. However, be prepared for lots of chopping! For a change, substitute shrimp for the beef, and add 3/4 cup fresh or canned, drained, pineapple pieces in place of the flaked coconut. Don't forget the basil! If you are accurate in your measurements the curry paste should yield 10 tablespoons - I seem to obtain around 8. The remainder can be stored in a sealed jar in the refrigerator. The recipe feeds 4 people if other Thai dishes are included in the meal. Adapted from a recipe by Vatcharin Bhumichitr.

2 tablespoons vegetable oil
1 lb beef steak, thinly sliced (or veal steak)
2 garlic cloves, finely chopped
2 tablespoons red curry paste (Nam Prik Gaeng Daeng paste, see below)
10 ounces coconut cream
3/4 cup beef stock
1 -2 tablespoon Thai fish sauce (amount per your preference)
2 -3 teaspoons brown sugar (amount per your preference)
2 fresh red chilies, seeded and sliced diagonally (optional)
4 ounces fresh coconut, shavings (optional)
3 ounces baby spinach leaves
20 fresh basil leaves
6 large dried red chilies, seeded and roughly chopped
3/4 teaspoon salt (I use less, for preference)
1 teaspoon finely chopped galangal (substitute fresh gingerroot if galangal is unobtainable)
1 tablespoon finely chopped tender lemongrass
3 tablespoons finely chopped garlic
3 tablespoons finely chopped shallots
1 tablespoon coriander seed
1 teaspoon cumin seed
1 teaspoon dried shrimp paste

Steps:

  • For the Nam Prik Gaeng Daeng paste: In a mortar and pestle, pound the ingredients for the red curry paste in the order listed, adding one at a time. Alternatively, a much easier method is to use a stick-blender. Blend all the paste ingredients together, with a few drops of water, until they form a fine paste.
  • For the curry: Heat a wok on high, and add the vegetable oil. When hot, stir-fry the beef strips in batches for 1 minute, removing each batch when cooked. Set aside.
  • Sauté the garlic until golden brown, then stir 2 tablespoons of curry paste into the wok and fry for a few seconds. Add the coconut cream and stir well, bringing to the boil. Add the beef stock, and return to the boil, stirring constantly.
  • Reduce to a simmer and stir in the Thai fish sauce, brown sugar, chilies, coconut shavings (if using) and baby spinach leaves. Heat gently but thoroughly.
  • Just before serving, stir in the basil leaves.
  • Serve with rice.

This is a super quick pasta dish that the whole family loves. I often make a double portion of the sauce for the next day. Then I serve the sauce on top of the pasta instead of mixing it all together at once.

1 pound penne or other pasta of your choice
2 tablespoons olive oil
1 pound ground beef
1 (15 ounce) can pineapple chunks, drained, liquid reserved
1 medium leek, cleaned and thinly sliced
3 tablespoons mild curry powder
1 tablespoon instant vegetable bouillon granules
salt and freshly ground black pepper to taste
½ cup ketchup
4 tablespoons tomato paste
1 cup heavy cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Meanwhile, heat oil in a large skillet. Add ground beef and cook, stirring, until browned, about 5 minutes. Add drained pineapple chunks and leek and cook over medium-high heat for about 5 minutes. Pour in about 1/2 of the pineapple juice. Season with curry powder, bouillon, salt, and pepper.
  • Stir in ketchup and tomato paste until well combined. Cover and simmer over low heat, 5 to 8 minutes. If sauce seems dry, add more pineapple juice.
  • Pour in cream and mix to combine. Cook for 2 more minutes.
  • Drain pasta and add to the skillet with the sauce. Mix well and serve.
