1 egg, beaten
1 cup grated cheddar cheese
1/2 cup mayonnaise (not Miracle whip)
1 (10 3/4 ounce) can cream of chicken soup
1 small onion, diced
salt
1/2 cup Italian breadcrumbs

Steps:

  • Cook and drain broccoli.
  • Add beaten egg, chopped onion, mayonnaise, undiluted soup, cheese and salt.
  • Mix well and place in greased casserole dish (1 1/2 qt.).
  • Top with bread crumbs.
  • Bake at 350°F for 40 minutes.
  • Enjoy!

I've seen and tried MANY of these similar casseroles, but somehow none of them quite match the flavor of this one! My Mom tweaked it to her own taste, and it has stood the test of time! An honest and true favorite in my family for 2 generations now, I can tell you that this one is IT! :)

4 chicken breasts
1 (8 ounce) package frozen broccoli florets
8 ounces pepperidge farm herb seasoned stuffing mix (Blue package)
1/2 cup oleo, melted
1 (10 1/2 ounce) can cream of chicken soup
3/4 cup Hellmann's mayonnaise
1/4 cup broccoli juice (reserved from cooking the broccoli)
1 teaspoon lemon juice (heaping)
2 teaspoons salt

Steps:

  • In a large pan, cover chicken breasts with water, add 2 teaspoons salt and seasonings. Bring to a boil and simmer 1 hour. Let cool and break into large pieces.
  • Cook frozen broccoli as per directions, reserving 1/4 cup of liquid.
  • In a large casserole dish, layer 1/2 chicken pieces, then all of the cooked broccoli, then layer the rest of the chicken pieces.
  • Mix soup, mayonnaise, broccoli juice and lemon juice in a small bowl.
  • Pour soup mix over chicken & broccoli and poke through to make sure it seeps throughout the casserole.
  • Mix stuffing in melted oleo and cover top of casserole with it.
  • Bake COVERED at 350 degrees for 45 minutes.
  • Uncover and bake 15 minutes longer to brown the top.

6 boneless skinless chicken breast halves, cooked
2 bunches broccoli, cut up
6 ounces French-fried onions
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup milk
1/4 lb Velveeta cheese
1/4 cup margarine

Steps:

  • Cut chicken into bite-size pieces and place in a 9-by-13-inch pan or large casserole dish. Layer broccoli on top.
  • In a saucepan, combine soup, milk, cheese and margarine; heat until thick. Pour sauce over broccoli.
  • Sprinkle with French fried onions and bake at 350 degrees for 50 minutes or until broccoli is tender and dish is hot.

1 can cream of mushroom soup
8 ounces sour cream
salt and pepper
garlic powder
fresh broccoli florets
shredded cheddar cheese, to taste (enough to cover top of casserole)
grated parmesan cheese, to taste (enough to cover top of casserole)
Ritz cracker crumbs (our preference) or breadcrumbs, to taste (enough to cover top of casserole)

Steps:

  • Lay chicken breasts in casserole dish.
  • Place broccoli florets around the chicken breasts (around edge of dish).
  • Sprinkle with salt, pepper and garlic powder.
  • Mix soup and sour cream together.
  • Pour over chicken and broccoli.
  • Sprinkle shredded cheddar cheese over casserole.
  • Sprinkle Parmesan cheese on top.
  • Sprinkle Ritz cracker crumbs or bread crumbs on top.
  • Bake at 350 for 45 minutes or until chicken is done.
  • (I cover for the first 25 minutes or so.) Serve with rice.

1 (3 -4 lb) whole chickens
1 head broccoli or 10 ounces frozen broccoli
1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can cream of mushroom soup or 1 (10 3/4 ounce) can cream of broccoli soup
1 cup mayonnaise
2 cups uncooked rice
1/2 grated onion
1 cup shredded cheddar cheese
2 cups buttered bread crumbs
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Boil chicken in large pot of water until done.
  • Remove and allow to cool.
  • Meanwhile,cook broccoli in chicken water 5 minutes or until crisp/tender.
  • Remove with slotted spoon and spread in 9x13 pan.
  • Cook rice in broccoli/chicken water 20 minutes or until done.
  • Drain rice and place in large mixing bowl.
  • Add soups,mayonnaise, onion, salt, and pepper.
  • Shred chicken into rice mixture and mix well.

1 (10 ounce) can low-sodium cream of mushroom soup
2 skinless, boneless chicken breasts, cubed
2 (10 ounce) packages frozen cauliflower and broccoli mix
2 tablespoons butter
1 ½ cups milk
¾ teaspoon salt
3 tablespoons all-purpose flour
1 ½ cups shredded Cheddar cheese, or more to taste
1 pinch garlic powder, or to taste
½ cup seasoned bread crumbs, or more to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine 1/2 the mushroom soup and an equal amount of water in a saucepan over medium heat. Add chicken. Bring to a simmer and cook until chicken is no longer pink in the center, 3 to 5 minutes.
  • Heat 1 frozen, unopened bag of cauliflower and broccoli mix in the microwave until hot, 4 to 6 minutes. Let stand about 2 minutes; open bag and transfer vegetables to a bowl. Repeat with remaining bag.
  • Melt butter in a saucepan over medium heat. Add milk and salt; stir in remaining cream of mushroom soup. Add flour slowly, stirring constantly with a whisk to prevent lumps. Add Cheddar cheese. Cook and stir until cheese sauce is thick, 5 to 7 minutes. Add garlic powder.
  • Layer half the cooked vegetables into the bottom of a baking pan or casserole dish. Add half of the cooked chicken. Pour in half the cheese sauce. Add a light layer of bread crumbs. Add remaining vegetables, remaining chicken, and remaining cheese sauce. Top with a light layer of bread crumbs. Cover pan with aluminum foil.
  • Bake in the preheated oven until bubbling, 20 to 30 minutes.

Nonstick cooking spray or butter, for the baking dish
4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 medium head broccoli, cut into small florets
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lemon juice
10 ounces Cheddar, grated (about 2 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
  • Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
  • Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
  • Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. 1 box stove top stuffing (chicken flavored)

Steps:

  • 1. Cook chicken on stove top. Reserve 2cups of chicken broth
  • 2. Debone cooled chicken.
  • 3. Make stuffing according to box, but add 2cups of broth.
  • 4. Add Cream Of Chicken Soup to mixture.
  • 5. Add bag of broccoli.
  • 6. Lastly add chicken to mixture.
  • 7. Once all ingredients are mixed,bake casserole at 350 for 30 minutes. Flavorful to taste as it cools.

After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.
