CHEESY BEEF AND BEAN BAKE
A great recipe for those days when you want a tasty main dish without spending a lot of time in the kitchen.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet over medium high heat, combine the ground beef and salt and pepper to taste. Saute for 10 minutes, or until well browned. Add the tomato sauce, onion and Worcestershire sauce. Reduce heat to low and simmer for 10 minutes.
- Prepare potatoes according to package directions. Place beef mixture into a casserole dish. Layer the beans over the beef and smooth prepared potatoes over the beans.
- Sprinkle the cheese over the potatoes and bake uncovered at 375 degrees F (190 degrees C) for 30 to 40 minutes.

Steps:
- Heat oven to 200C/180C fan/gas 6. Put the flour, oats, butter and sugar in a bowl, squash together with your fingers into a crumble texture, sprinkle over a baking tray and bake for 10 mins, stirring and roughly breaking up halfway through cooking. Can be done up to 2 days ahead, and stored in an airtight container.
- Meanwhile, put the strawberries, sugar and cornflour in a large pan. Stir together and set over a medium heat. Cook until the strawberries just start to release their juices and soften, then stir in the remaining berries. Transfer to an ovenproof baking dish.
- When the crumble topping is cooked, sprinkle it over the fruit, and place back in the oven for a further 15 mins until bubbling and golden. Leave for 5 mins before serving with ice cream or custard.

- Cut steak into thin strips. Combine mustard, chili powder, salt, pepper and garlic in a bowl; add steak and toss to coat. Transfer to a 3-qt. slow cooker; add tomatoes, onion and bouillon. Cover and cook on low for 6-8 hours. Stir in beans; cook 30 minutes longer. Serve over rice.

BEEF & BEAN HOTPOT

- Heat a large non-stick pan, add the beef then fry over a medium-high heat until browned, stirring often and breaking up any lumps with a spoon. Crumble in the stock cube and mix well.
- Add the vegetables, stir to mix with the beef and pour in enough boiling water (about 1.3 litres) to cover. Bring to the boil, then lower the heat and stir well. Cover the pan and simmer gently for about 30 mins or until the vegetables are tender.
- Tip in the baked beans, sprinkle with Worcestershire sauce or Tabasco to taste, stir well and heat through. Taste for seasoning and sprinkle with parsley. Serve with extra Worcestershire sauce or Tabasco, for those who like a peppery hot taste.

BEEF AND CHEESE CRUMBLE
Ok, so this sounds disgusting but it is awesome! My mum came up with the idea when we were little and I have perfected it - well sort of. I make this differently every time and my weights are approximate so I hope it works out all right!

- Brown the beef.
- Add the tinned tomatoes.
- Add the oxo cubes - crumble them evenly over the top and then mix inches.
- Add the remaining ingredients.
- Hint: At this stage you can also add any other flavourings/herbs/spices/vegetables you like, this is a very flexible recipe!
- At this stage the beef should be quite liquidy. Don't take any out but turn the heat down and let it reduce naturally. Keep an eye on it so it doesn't become too dry. The ideal end product should look fairly dry but easily yield liquid when a spoon is pressed onto the mixture. This can take anything from 10-30 minutes, depending on what is added!
- While the mixture is reducing make the crumble.
- Put all of the crumble topping except for the cheese for sprinkling into a bowl and mix them so they look like chunky breadcrumbs.
- Put the beef mixture into an ovenproof dish.
- Pour the crumble mixture on top of the beef.
- Put in a 180C oven for 20 minutes.
- After the 20 minutes add the grated cheese to the top, put the crumble back in the oven for another 10-15 minutes (until the cheese is melted/brown/crispy according to taste).

- TOPPING 3/4 cup wholemeal flour 1/3 cup rolled oats 1 oz butter 1/3 cup grated cheese 1/2 tsp dried mixed herbs Fry mince over a medium heat in its own fat, turning, until evenly browned.
- Add the onion, celery, mushrooms and carrot and fry for 5 minutes.
- Stir in the flour and cook a further minute. Add the stock, sauce and salt and pepper to taste. Bring to the boil, stirring.
- Cover and simmer 30 - 40 minutes.
- To make Topping:- Place the flour and rolled oats in a bowl.
- Rub in the butter until mixture resembles coarse breadcrumbs.
- Stir in the cheese, herbs and salt and pepper to taste. Transfer the meat to a greased casserole and spoon topping over.
- Bake at 375 F for 20 - 30 minutes.

- Heat vegetable oil in large non stick skillet or wok. Add frozen beans.
- Pour on chicken broth and mix. Cover and cook at medium-high heat for 5 to 7 minutes or until desired tenderness. Transfer beans to a large bowl and set aside.
- Stir fry onions and peppers for 5 minutes. Add to beans and toss.
- In a separate bowl whisk together olive oil, lemon juice and peel,oregano, garlic and mustard. Season with salt and pepper. Pour over beans and toss to coat.
- Just before serving sprinkle with crumbled goat cheese.

TOMATO AND GOAT'S CHEESE CRUMBLE
This savoury crumble is a twist on the more usual quintessential English dessert crumbles. It's a really tasty supper dish and comes from the BBC Good Food "101 Veggie Dishes" book. - Pre-heat the oven to 375 F, 190 C/ gas mark 5.
- Roughly chop the tomatoes, leaving the cherry ones whole; heat 2 tablespoons oil in a pad, add the chopped tomatoes and seasoning and cook for 10 minutes (stirring occasionally) until softened; remove from the heat and stir in cherry tomatoes.
- Spoon half the tomato mix into an oven proof dish (1 litre/1 ¾ pints size) and crumble half of the goat's cheese on top; repeat the layers.
- Heat remaining olive oil in a frying pan and lightly fry the pine nuts and breadcrumbs; remove from the heat and stir in half the parmesan; scatter breadcrumb mix over the tomatoes and cheese, then top with the rest of the parmesan.
- Bake for 20-25 minutes, until golden.
