BEEF AND ALE STEW WITH HORSERADISH DUMPLINGS



Beef and ale stew with horseradish dumplings image

Got a crowd to feed? Mary's hearty beef and ale stew recipe is perfect and the oven does most of the work for you. For this recipe you will need a deep ovenproof casserole dish with a lid.

2-3 tbsp light olive oil
1kg/2lb 4oz braising beef, cut into cubes
250g/9oz shallots or silverskin pickling onions, halved
2 carrots, thinly sliced
200g/7oz button mushrooms, left whole
50g/1¾oz plain flour
500ml/18fl oz ale
150ml/5fl oz beef stock
2-3 tbsp onion marmalade
1-2 tbsp Worcestershire sauce
3 bay leaves
gravy browning (optional)
salt and freshly ground black pepper
175g/6oz self-raising flour, plus extra for dusting
75g/1¾oz suet, shredded
3-4 tbsp hot horseradish sauce, from a jar
2 tbsp chopped parsley

Steps:

  • Preheat the oven to 160C/140C Fan/Gas 3.
  • Heat 1 tablespoon oil in a deep ovenproof casserole dish over a high heat. Add the beef in batches and brown all over, adding more oil if needed. Transfer to a plate using a slotted spoon and set aside. Pour another tablespoon oil into the casserole dish, then add the shallots, carrots and mushrooms and fry for few minutes, stirring.
  • Meanwhile, put the flour in a bowl, whisk in a little ale to make a smooth paste, then whisk in the rest of the ale.
  • Return the beef to the casserole, then pour in the ale mixture and stock. Stir over a high heat until thickened and boiling. Stir in the onion marmalade, Worcestershire sauce, bay leaves and gravy browning (if using) and cook, stirring, for few minutes. Season with salt and pepper, cover, then bake for 2-2½ hours, or until the meat is tender.
  • To make the dumplings, put the flour and suet in a bowl and season with salt and pepper. Gradually add 150ml/5fl oz water and stir to make a soft, sticky dough. Tip onto a floured work surface and gently knead until smooth.
  • Flour a sheet of non-stick baking paper. Put the dough on top and roll out to about 15x25cm/6x8in. Spread over the horseradish cream and scatter with parsley. Roll up the dough, from the long side, to make a Swiss roll shape. Chill for 45 minutes, then slice into eight pieces.
  • When the beef is tender, remove from the oven and increase the oven temperature to 220C/200Fan/Gas 7. Remove the bay leaves and add the dumplings. Return to the oven, without the lid, for 25 minutes, or until the dumplings are golden and puffed up. Serve the beef and ale stew piping hot.

3 -4 lbs corned beef brisket (I use corned round, not brisket)
1 teaspoon pepper
1 tablespoon canola oil
3 diced carrots
3 carrots, quartered lenthwise
1 medium onion, chopped
1 medium onion, quartered
2 celery ribs, diced
1/4 cup packed dark brown sugar
1 1/2 teaspoons dried thyme
2 cups ale (I use Killians Irish Red)
1 -2 tablespoon Dijon mustard
1 small head of cabbage, cut into 6 wedges (about 2 pounds)
1/2 cup milk
1 teaspoon Dijon mustard
3 -4 tablespoons prepared horseradish, squeezed dry (reserve juice)
1 cup corned beef, cooking liquid
3/4 teaspoon dried thyme
1/2 teaspoon pepper
4 teaspoons cornstarch
2 tablespoons minced fresh parsley or 2 tablespoons chives

Steps:

  • Heat nonstick Dutch oven over high heat. Sprinkle meat with pepper and brown in oil on all sides, about 6 minutes. Remove meat & set aside.
  • Lower heat to medium and add diced onion,diced carrots, celery, brown sugar and thyme to pot drippings. Cook stirring until soft, about 7 minutes. Lower heat, add ale and mustard and cook 1-2 minutes, scraping up browned bits from bottom of pot.
  • Return meat to pot, cover and cook over low heat about 3-1/2 hours. Keep heat just below simmer. Don't let it boil.
  • Add cabbage, remaining sliced carrots, quartered onions and continue cooking covered until vegetables and meat are tender, about 40 minutes. Remove meat and let stand 15 minutes before slicing. Remove cabbage and large vegetable pieces with a slotted spoon and place on serving platter and keep warm. Reserve pan juices for gravy.
  • Horseradish Gravy:.
  • Strain and skim fat from pan juices. In pot over medium heat, combine 1 cup strained pan juices with milk, horseradish, mustard, thyme and pepper. Dissolve cornstarch in 2 T. reserved horseradish liquid. (Use water or more cooking liquid if not enough juice remained.).
  • Stir cornstarch slurry into pan mixture and cook, stirring until mixture boils and thickens slightly, 2-3 minutes. Remove from heat and stir in chopped parsley or chives. Serve gravy with sliced meat and vegetables.

What's more comforting on a cold winter night than beef and stout stew with buttery mash? You can make this stew ahead and freeze it for busy weeknights

3 tbsp vegetable oil
1 ½kg braising beef , cut into 3.5cm pieces
4 large onions , thickly sliced
3 tbsp plain flour
500ml stout
800ml beef stock
6 thyme sprigs
450g chestnut mushrooms , halved
handful parsley , to serve

Steps:

  • Heat oven to 170C/150C fan/gas 3. Put a large non-stick, flameproof casserole dish on a high heat and add 1 tbsp oil. Season the beef and brown in batches until well coloured on both sides, making sure you don't overcrowd the dish. Remove each batch and set aside on a plate.
  • Add the remaining oil to the pan and lower the heat to medium. Toss in the onions and cook for about 10 mins until softened and golden brown. Stir in the flour and cook, stirring, for 1-2 mins.
  • Add the stout and stir well to deglaze the pan, scraping up any sticky bits. Return the beef to the pan, pour in the stock and add the thyme. Bring to the boil, then put the lid on and cook for 1½ hrs.
  • Add the mushrooms to the casserole, stir well and return to the oven for a further 1½ hrs.
  • Season to taste and stir in half the chopped parsley. Scatter over the remaining parsley to finish and serve with mash, if you like.
