2 tablespoons soy sauce
¼ cup sesame oil
2 tablespoons Korean chile powder
1 ½ teaspoons garlic, minced
2 teaspoons sesame seeds
¼ cup chopped green onion
2 teaspoons rice wine vinegar, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the bean sprouts, and cook uncovered until tender yet still crisp, about 15 seconds. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the bean sprouts are cold, drain well, and set aside.
  • Whisk soy sauce, sesame oil, chile powder, garlic, and sesame seeds together in a large bowl. Stir in bean sprouts and toss until well coated with the sauce. Sprinkle with green onions and season with rice wine vinegar. Refrigerate before serving.

Delicately crunchy and bright tasting, this easy southern Vietnamese favorite is technically a pickle because the vegetables steep in brine. But it is eaten in large amounts like a salad, usually with intensely flavored fish or pork kho (dishes simmered in savory caramel sauce). The vegetables provide a refreshing contrast to the inky, deep flavors of kho but they're also terrific paired with dumplings or sandwiches. The bean sprouts and carrot are typically combined with flat Chinese chives. Since those kinds of chives can be hard to find, you can also use thin green scallion tops.

2/3 cup granulated sugar
1 1/2 teaspoons fine sea salt
1 cup distilled white vinegar
1 pound bean sprouts
1 carrot, peeled and cut into matchsticks
5 small or 4 medium scallions, green parts only, cut into 1 1/2-inch lengths (see Note)

Steps:

  • To make the brine, combine the sugar, salt, vinegar and 1 cup water in a large saucepan and warm over medium heat, stirring occasionally, until the sugar and salt dissolve. Remove from the heat and completely cool.
  • At least 40 minutes and up to 2 hours before serving, add the bean sprouts, carrot and scallions to the brine. Use your fingers to toss the vegetables. Set aside at room temperature for 30 minutes, turning the vegetables 2 or 3 times to expose them evenly to the brine. At first, the vegetables won't be covered by the brine, but then they will shrink. They're ready when they're almost covered with brine and taste pleasantly tangy and are a mix of crunchy and soft. If needed, let them sit for 10 minutes longer.
  • Drain the vegetables and pile them high on a plate. Serve at room temperature within 2 hours to enjoy them at their peak.

1 lb mung bean sprouts
1 qt salted water for cooking ((1/2 tsp sea salt for 1 quart of water))
1/2 tsp sesame seeds
1/2 tsp sesame oil
1/2 tsp fine sea salt ((Trader Joe's fine sea salt - 440 mg sodium per 1/4 tsp))
1 tsp green onions ((chopped))
ice bath
dash black pepper ((optional))

Steps:

  • Rinse mung bean sprouts in water and drain.
  • In a pot, bring 1 qt of water and 1/2 tsp sea salt to boil.
  • Prepare an ice bath with a bowl of ice water.
  • Add bean sprouts to boiling water and bring back to boil. Cook for 2-3 minutes (after it starts boiling again) or until sprouts just starting to look cooked. Sprouts should be slightly crunchy and will start to look translucent and dull in color. Do NOT OVERCOOK.
  • When cooked, transfer the sprouts to ice bath immediately.
  • When sprouts are completely cooled, drain.
  • Grab a handful of sprouts and squeeze the liquid gently with your hands. Repeat for remaining sprouts.
  • Season bean sprouts with sea salt, sesame oil and sesame seeds. Garnish with some chopped green onions.

Steps:

  • Bring a medium size pot of water with 1 teaspoon of salt to boil.
  • Add mung bean sprouts and blanch for 2 minutes. It's important to use a timer here so you don't overcook them. Drain and rinse under cold water until the bean sprouts are cold. Drain again.
  • Gently squeeze the sprouts to remove excess water and pat dry with a paper towel.
  • Transfer to a bowl and add sesame oil. Toss the beans sprouts until they are evenly coated and sprinkle garlic, scallions, sesame seeds, and salt.
  • Toss again and serve cold.

1 -2 cucumber, peeled, thinly sliced
2 cups bean sprouts (must be fresh, not canned)
1 teaspoon salt
2 tablespoons rice vinegar
2 tablespoons toasted sesame oil
1/4 cup soy sauce (may use lite)
1/4 teaspoon hot sauce (i use Siriacha)
1/8 teaspoon dry mustard
1 teaspoon grated fresh gingerroot
2 teaspoons honey
2 tablespoons toasted sesame seeds

Steps:

  • Place the cucumbers and sprouts in a glass bowl and sprinkle with salt. Toss well and chill for 1 hour. Rinse and drain well.
  • Put all the dressing ingredients in a jar and shake well to combine. Pour over the cucumber/sprouts, and mix well. Top with sesame seeds.
  • NOTE: I find that letting the salad sit a few ours in the fridge helps the texture and flavors mix. In fact, I prefer this salad the next day.

1/2 pound carrots, peeled
1/2 pound daikon radish, peeled
1 1/2 cups water
1/2 teaspoon kosher salt
1/4 cup rice vinegar
2 tablespoons sugar
1 pound mung bean sprouts (about 6 cups loosely packed)
5 large scallions or 8 smaller ones, trimmed, smashed flat with the side of a cleaver, sliced lengthwise into ribbons, and then cut crosswise into 2 to 3-inch lengths
1 tablespoon kosher salt
1/2 teaspoon sugar
1/2 cup rice vinegar
4 cups water

Steps:

  • Set out the ingredients of your choice on one or more plates or shallow bowls to accompany any meal.;
  • Cut the tip off each carrot on a long diagonal. Use a mandoline or other vegetable slicer or a coarse grater to slice the carrots into strips, or use a knife to cut into matchsticks. You should have approximately 2 cups. Place the carrots in a large strainer and set aside. Use the same method to make daikon strips. You should have approximately 2 cups. Add to the carrots in the strainer and mix well with your hands. Sprinkle on the salt and toss to mix. Place over a bowl or in the sink and let stand for 20 to 30 minutes. Meanwhile, in a nonreactive saucepan, combine the water, vinegar, and sugar and bring to a boil. Remove from the heat; cool to room temperature. Don't cook the vegetables, bathe them. Rinse the vegetables briefly with cold water, then squeeze dry and transfer to a medium bowl. Pour over the vinegar mixture and stir gently with a wooden spoon to ensure all the vegetables are well moistened. Let stand for 1 hour before serving. To serve, lift the salad out of the vinegar bath and mound attractively on a plate.
  • Rinse the bean sprouts well in cold water, drain, and place in a large bowl. Add scallions and set aside. Place the remaining ingredients in a nonreactive saucepan and bring to a boil, stirring with a wooden spoon to dissolve the salt and sugar. Remove from the heat and let cool to room temperature. Pour the vinegar mixture over the sprouts and scallions and stir gently to immerse all the vegetables. Let stand at room temperature for 1 to 2 hours. Drain the bean sprouts and serve mounded on several plates.

9 oz bean sprouts ((1 bag))
1 green onion/scallion
1 Tbsp toasted white sesame seeds
1 clove garlic
1 Tbsp roasted sesame oil
½ Tbsp soy sauce
¼ tsp kosher salt (Diamond Crystal; use half for table salt)

Steps:

  • [Optional] Remove the brown part and stringy root part. I recommend doing this extra step when you eat raw bean sprouts or when they are seasoned with light flavor sauce. You can taste the clean bean sprouts.
  • Rinse the bean sprouts under cold water and drain well.
  • Bring a large pot of water to a boil. Once boiling, add bean sprouts to cook for 1 to 1.5 minutes.
  • Drain into a colander and set aside for 5 minutes as you don't want to dilute the sauce with remaining water.
  • Meanwhile, cut the green onion/scallion into small pieces. Grind the sesame seeds in a mortar and pestle. Grate the garlic, or use a garlic press to crush the garlic.
  • In a medium bowl, combine all the ingredients for the seasonings and mix well. It might look little but it's more than enough.
  • Add the bean sprout and green onion/scallion in the bowl and combine all together. Serve chilled or at room temperature.
