1 pound shell pasta
1/4 cup olive oil
1 carrot, peeled and diced
1 small red onion, diced
1 1/2 teaspoons kosher salt
1/2 teaspoon red pepper flakes
1/4 teaspoon dried thyme

PASTA AND BEAN SOUP

Pasta and Bean Soup image

The chef Tom Valenti channels his late grandmother in his cooking, utilizing her ''stove top approach to life'' by braising and stewing and slow cooking the kinds of food that snowstorms were made for. Her pasta and bean soup, a treat for carb-lovers with its addition of mashed potatoes to thicken the broth, was one of many old-country comfort foods that she fed Mr. Valenti during his childhood.

Time 40m

Yield 8 servings

Number Of Ingredients 17

2 tablespoons olive oil
1/4 pound prosciutto di Parma, in medium dice (double smoked bacon can be substituted)
1 small carrot in small dice
1 small Spanish onion in small dice
1 stalk celery, in small dice
2 cloves garlic, smashed and peeled
Coarse salt
Freshly ground black pepper
1 heaping tablespoon tomato paste
1 quart store-bought reduced-sodium vegetable broth or homemade vegetable stock
2 medium baking potatoes, peeled
1 1-pound 13-ounce can cannellini beans, rinsed and drained
1 cup ditalini pasta, cooked and drained
1 tablespoon chopped fresh rosemary
Pinch crushed red pepper
1/4 cup freshly grated Parmesan cheese, more for sprinkling
Extra virgin olive oil

Steps:

  • Heat olive oil in a large heavy-bottomed pot over medium heat. Add prosciutto and cook, stirring, until prosciutto begins to render its fat, about 4 minutes.
  • Add carrot, onion, celery and garlic. Season with salt and pepper, and cook, stirring, until softened but not browned, about 5 minutes. Add tomato paste, stir to coat other ingredients, and cook for 2 minutes. Add broth, one quart water and potatoes. Raise heat to high and bring to a boil, then lower heat and simmer until potatoes are very soft, about 25 minutes. Transfer potatoes to a bowl and mash them.
  • Return potatoes to pot and stir them into soup. If not serving immediately, let cool, cover and refrigerate for a few days or freeze for up to 1 month. Reheat before proceeding.
  • Add beans and pasta. Cook over medium heat until beans are warmed through, about 5 minutes. Stir in rosemary, crushed red pepper and cheese. Taste and adjust seasoning with salt and pepper, if necessary.
  • To serve, ladle some soup into each of 8 bowls. Top with more cheese and a drizzle of extra virgin olive oil.

ITALIAN BEAN SOUP WITH PASTA

Italian Bean Soup With Pasta image

This hearty soup is made in the style of the Italian "pasta e fagioli"-a lusty main dish with beans, ham, sausage, veggetables, and pasta. For an Italian finishing touch, grind white pepper to taste and stir a spoonful of olive oil into each bowlful. Serve with cheese, if you wish. I found this on My Great recipes cards. I have not tried this recipe, but I'm posting it for a request.

10 THINGS YOU CAN DO WITH LEFTOVER PASTA WATER - UNO …
10-things-you-can-do-with-leftover-pasta-water-uno image

From unocasa.com
  • Use it in sauces and pesto. As we’ve mentioned, the starch and salt in pasta water acts as a seasoning, in addition to being an excellent binding and thickening agent.
  • Soften legumes. Legumes include various foods such as beans, peas, and linseed, all of which are excellent for the immune system and offer a range of other health benefits.
  • Make bread and pizza dough. Pasta water is a phenomenal ingredient in pizza dough or bread baking. All doughs require liquid with a pinch of salt, and pasta water ticks both these boxes, plus the starchy goodness will help your dough come together beautifully.
  • Steam veggies. Save water and energy by using your leftover pasta water to steam veggies for a healthy and tasty meal. You could even add your veggie steamer above the boiling pasta to cook both at once: thrifty and eco-friendly!
  • Make a soup base. Pasta water makes an excellent base for a hearty soup or broth. Use it to steam your veggies, then add that well-flavored pasta water to some stock, leave it to cook, and season to taste – a remarkable soup/broth base awaits!
  • Use it for the washing up. Believe it or not, the starch in pasta water can also be used as a natural detergent! Clean even the most tarnished pots and pans effortlessly with warm pasta water.
  • Create a foot spa. It might sound like we’re losing it a bit here, but if your feet are sore or swollen after a long day, try warming some leftover pasta water and creating a DIY foot spa.
  • Improvise a hair mask. Recreate a spa-like deep conditioning hair experience in your own home, on the tightest of budgets, by massaging some leftover pasta water into your roots, leaving it for 10 minutes, then rinsing it out and following with your regular shampoo.
  • Play with it. We were all instructed not to play with our food when we were little. But pasta water can be effortlessly transformed into homemade play dough that your kids will love!
  • Water the plants. Even if you don’t want to do anything creative with your pasta water, you can still use it to water your plants. The minerals absorbed by the water are great for growing greenery.
