RED BEAN SOUP WITH ANDOUILLE SAUSAGE (CROCK POT)
Posting this for ZWT 2006 (French, Cajun & Creole region). I absolutely love red beans & rice though I make it my own weird way and when I found this recipe, I had to try it. I played with the spices some as it was rather bland the original way. I serve this kind of gumbo style with a scoop of cooked rice put into the bowls before I add the soup.

SLOW COOKER RED BEANS & SAUSAGE
Being from Louisiana, my go-to comfort food is red beans and rice. The Crock-Pot makes it so easy and the recipe reminds me of Sunday family dinners going back generations. Serve it as a slow-cooker side dish or make it a meal with hot buttered corn bread. -Lisa Bowie, Las Vegas, Nevada

- Soak the beans at least 8 hours overnight with the 8 cups of water and the tablespoon of salt. If you forget to do this step you can do the “quick soak method” outlined below in the notes.
- Drain and rinse the beans in a colander. Add the rinsed beans to the slow cooker or the Instant Pot.
- Add in the 3 1/2 cups water and half the seasoning packet. Cover and cook on low for 6-10 hours (depending on your slow cooker and how quickly it cooks). For the Instant Pot: Add the 3 1/2 cups water and half the seasoning packet to the pot. Cover and secure the lid. Make sure the valve is set to “sealing.” Set the manual pressure cook button to 15 minutes on high pressure. When the timer beeps indicating the time is up you can do a quick release by moving the valve to “venting.” Open the pot when it allows you to do so.
- If there is excess liquid, drain it off. Add in the rest of the seasoning packet. Add in 1 or 2 cans of tomato sauce, depending on how saucy you like it. Add in the sliced sausage and stir. Salt to taste. Scoop into bowls and serve.

- Rinse and drain the beans and place them in the bottom of a large (7- to 8-quart) slow cooker. Add the sausage, carrots, celery, tomatoes, and garlic on top. Carefully pour the chicken broth over the ingredients in the slow cooker, and then sprinkle with the Creole seasoning, smoked paprika, and black pepper. Cover and cook on low for 8 to 10 hours or until the beans are tender.
- Use a ladle to scoop about 3 cups of soup (without sausage) into a separate bowl and use an immersion blender to puree until smooth (or use a potato masher to mash). Stir the pureed soup back into the slow cooker. Adjust the seasonings to taste, adding additional Creole seasoning if desired or adding hot pepper sauce or cayenne for heat (to the entire slow cooker or to individual bowls).
