WHITE BEAN RAGOUT

This quick ragout of white beans and sweet tomatoes might just be my favorite recipe of the summer.

½ pound dried cannellini beans, soaked and cooked (or two 15-ounce cans, drained and well-rinsed, preferably Goya)
¼ cup extra virgin olive oil
1½ cups chopped yellow onions, from about one large or two small onions
3 large garlic cloves, minced
1 pint cherry or grape tomatoes, halved
1½ cups low sodium chicken or vegetable broth
1½ teaspoons tomato paste
1½ teaspoons balsamic vinegar
Salt and pepper
2 tablespoons fresh chopped basil
2 tablespoons fresh chopped mint

Steps:

  • Heat the olive oil in a large pan over medium heat. Cook the onions, stirring frequently, until soft and translucent, about 8 minutes. Do not brown. Add the garlic and cook one minute more.
  • Add the tomatoes, beans, chicken broth, tomato paste and balsamic vinegar. Season with salt and pepper to taste. (I use about 1 teaspoon salt and ¼ teaspoon pepper, but it depends on what type of beans you use; canned will have some salt already.) Bring to a simmer and cook until tomatoes are slightly softened but still hold their shape, 3-5 minutes. Taste for seasoning. Note that the sauce may have a strong vinegar flavor at first, but it will mellow out. Right before serving, stir in the fresh basil and mint. Transfer to serving dish, garnish with more fresh herbs if desired, and serve hot.
  • Freezer-Friendly Instructions: This dish can be frozen for up to 3 months. Reheat in the microwave or on the stovetop.

Eaten on it's own, or used in other dishes, this is good! This hearty stew packs lots of flavor and nutrition! Adapted from The Everything Vegetarian Cookbook by Jay Weinstein.

1 lb great northern bean, cooked very soft (or one 28 ounce can of large white beans)
2 tablespoons olive oil
2 tablespoons garlic, chopped (about 5 cloves)
2 medium onions, diced
2 teaspoons fresh rosemary, chopped (or 1/4 tsp. dried)
1 dried new mexico chili (or 1/4 tsp. crushed red pepper flakes)
1 head escarole (about 6 cups leaves, or an equal amount of spinach, torn into large pieces)
6 ripe plum tomatoes, seeded and diced (about 1 1/2 cups)
2 ounces unsalted butter
1/4 cup flat-leaf Italian parsley, rough chopped
1/2 cup parmigiano-reggiano cheese, grated (optional)
kosher salt & freshly ground black pepper
3 drops extra virgin olive oil (or a nice flavored oil)

Steps:

  • Strain the cooking liquid from the beans and reserve(you should have about 2 cups of liquid-add water if necessary to reach this amount). Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until it turns white and fragrant, only aobut 30 seconds. Stir in the onions, rosemary, and chili. Cook gently until the onions are very soft, about 10 minutes, stirring occasionally. Add the beans and enough bean cooking liquid to make the mixture brothy; simmer 5 minutes.
  • Stir in the escarole or spinach; simmer until it is all wilted. Add the tomatoes, butter, parsley, and cheese if using. Remove from the heat, and stir until the butter is melted in, adding additional bean liquid as necessary to keep it brothy. Season well with salt and pepper.
  • Serve warm, drizzled with extra virgin olive oil.
  • Note:.
  • This stew can be prepared just up to adding wscarole. Refrigerate for up to 3 days. The flavors will marry and the dish will be even better.

SEARED SNAPPER WITH VIDALIA ONIONS AND BEAN RAGOUT

1 cup cranberry beans
6 cups water
2 tablespoons olive oil
2 ounces pancetta, diced
1 medium onion, coarsely chopped
1 carrot, coarsely chopped
1 celery stalk, coarsely chopped
1 tablespoons sherry vinegar
3 to 4 cups chicken stock
1 bouquet garni (parsley, thyme and bay leaf)
1 tablespoon salt
2 tablespoons olive oil
4 ounces chanterelles, trimmed
2 plum tomatoes, chopped
1 medium Vidalia onion or any sweet variety onion, thinly sliced
2 tablespoons olive oil
1 tablespoon olive oil
2 tablespoons minced shallots
1 cup sherry
1/2 cup veal stock
1/3 cup heavy cream
1/2 cup reserved bean liquid
Salt
2 (6-ounce) snapper fillets, skin on
1 tablespoon olive oil
Salt
White pepper
1 sprig rosemary

Steps:

  • For the Bean Ragout: Soak the beans in water overnight. Drain and reserve.
  • In a saucepan, heat 2 tablespoons of oil and saute the pancetta until lightly browned. Add the onions, carrots, and celery and saute until lightly golden brown, about 5 to 8 minutes. Add the reserved beans, vinegar, stock, bouquet garni, and salt. Bring to a boil, then lower to a simmer. Cook until just tender, about 40 minutes.
  • For the Chanterelles: In a heavy skillet, heat the remaining 2 tablespoons of olive oil. Add the chanterelles and saute for 5 minutes or until golden brown. Add the tomatoes and saute another 3 minutes. Taste and adjust seasoning with salt and pepper.
  • Vidalia Onion: In a medium saute pan, over high heat, saute onions in olive oil until crisp and golden in color. Reserve.
  • For the Sauce: In a saucepan, over medium heat, add oil. When oil is hot, add shallots and saute until translucent. Deglaze with sherry and reduce in half. Add veal stock, cream, and some of the bean cooking liquid and continue to reduce until thick. Taste, and adjust seasoning with salt and pepper.
  • For the Fish: Season fish with salt and pepper. In a non-stick saute pan, heat the olive oil until smoking. Sear fillets, skin side down for 3 minutes and golden in color. Add rosemary sprigs to oil. Turn fish over and cook on other side until translucent.
  • To serve: divide the onions and place in center of each serving plate. Add the bean ragout on the side and place the seared fillet in center on top of onions and bean ragout. Top with the chanterelles. Coat with sauce.

2 tablespoons olive oil
1 large onion, diced
4 garlic cloves, minced
3/4 pound ground beef (15 percent fat)
3 spicy Italian sausages, casings removed
2 14 1/2-ounce cans diced tomatoes in juice with garlic, oregano, and basil
2 14-ounce cans low-salt chicken broth
1 15-ounce can cannellini (white kidney beans), drained
1 1/2 cups chopped fresh basil, divided
2 teaspoons dried oregano
1/4 teaspoon dried crushed red pepper
1/2 cup small elbow macaroni
1 6-ounce bag baby spinach leaves
1/3 cup grated Romano cheese
Additional grated Romano cheese

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion and garlic and sauté 6 minutes. Add beef and sausage and sauté until brown, breaking up meats with back of fork, about 5 minutes. Add tomatoes with juice, broth, beans, 1 cup basil, oregano, and dried crushed red pepper. Simmer 15 minutes to blend flavors, stirring occasionally. Add pasta and cook until tender but still firm to bite, about 15 more minutes. Add spinach and cook just until wilted, stirring occasionally, about 4 minutes. Mix in 1/3 cup cheese and remaining 1/2 cup basil. Season ragout with salt and pepper; ladle into bowls. Serve, passing additional cheese separately.

FRESH SHELL BEAN AND GREEN BEAN RAGOUT



Fresh Shell Bean and Green Bean Ragout image

A mixture of fresh green beans (haricots verts, yellow wax beans, romano beans, or Blue Lake beans) makes this dish both beautiful and tasty. Each variety cooks in a different amount of time, so cook them separately. The same water can be used. Cook yellow wax beans first, to preserve their color. A variety of shell beans can be used as well, but once again, be sure to cook different beans separately.

Number Of Ingredients 9

1 pound fresh shell beans (such as cranberry, cannellini, or flageolet)
3/4 pound green beans
2 tablespoons olive oil
1 onion, diced
2 garlic cloves, peeled and chopped
2 teaspoons chopped savory, marjoram, or parsley
Salt
Fresh-ground black pepper
Extra-virgin olive oil

Steps:

  • Shell: 1 pound fresh shell beans (such as cranberry, cannellini, or flageolet)
  • Cook the beans in lightly salted boiling water until creamy and tender. Start checking after 15 minutes. When they are done, let the beans cool in their cooking liquid.
  • Meanwhile, snap off the stem ends, and pull off the tails if dry or tough, from: 3/4 pound green beans.
  • Cut into 1-inch bite-size pieces. Cook until tender in salted boiling water, drain, and spread out on a baking sheet or plate to cool.
  • Heat in a heavy-bottomed pan over medium heat: 2 tablespoons olive oil.
  • Add: 1 onion, diced.
  • Cook until translucent, about 10 minutes, then add: 2 garlic cloves, peeled and chopped, 2 teaspoons chopped savory, marjoram, or parsley, Salt, Fresh-ground black pepper.
  • Cook for 4 minutes. Drain the shell beans, reserving their cooking liquid. Stir the shell beans and 3/4 cup of their liquid into the onions. Raise the heat and bring to a boil. Stir in the green beans and return to a boil. Turn down the heat and cook for another minute or so to warm the beans through. Taste for salt and add more as needed. Serve with a drizzle of: Extra-virgin olive oil.

1 (1-pound) bag frozen edamame (soybeans in the pod) or 1 1/4 cups frozen shelled edamame, not thawed
2/3 cup finely chopped onion
2 garlic cloves, minced
1 Turkish bay leaf or 1/2 California bay leaf
2 (3-inch) fresh rosemary sprigs
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 medium carrot, cut into 1/8-inch dice
1 medium celery rib, cut into 1/8-inch dice
1 (15- to 16-ounces) can small white beans, rinsed and drained
1 1/2 cups chicken stock or low-sodium broth
2 tablespoons unsalted butter
2 tablespoons finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh chervil (optional)
Garnish: fresh chervil sprigs

Steps:

  • Cook haricots verts in a large pot of boiling salted water until just tender, 3 to 4 minutes. Transfer with a slotted spoon to a bowl of ice and cold water, then drain.
  • Add edamame to boiling water and cook 4 minutes. Drain in a colander, then rinse under cold water. If using edamame in pods, shell them and discard pods.
  • Cook onion, garlic, bay leaf, rosemary, salt, and pepper in oil in a 2- to 4-quart heavy saucepan over moderately low heat, stirring, until softened, about 3 minutes. Add carrot and celery and cook, stirring, until softened, about 3 minutes.
  • Add white beans and stock and simmer, covered, stirring occasionally, 10 minutes. Add haricots verts and edamame and simmer, uncovered, until heated through, 2 to 3 minutes. Add butter, parsley, and chervil (if using) and stir gently until butter is melted. Discard bay leaf and rosemary sprigs.

THREE-BEAN AND VEGETABLE RAGOUT

1 medium green peppers or 1 medium red pepper, chopped

1 (19 ounce) can chickpeas, drained, rinsed
1 cup vegetable stock

Steps:

  • In a large saucepan, heat oil over medium heat. Add onion, peppers and garlic and cook until softened- about 5 minutes.
  • Stir in carrots, tomatoes, kidney beans, chickpeas, broth, tomato paste and seasonings. Simmer over medium low heat, covered for about 30 minutes. Stir ocassionally.
  • Add beans and cook until heated and tender.
  • Serve with soft polenta, couscous or mashed potatoes.
  • Spinkle with cheese.

Sausage, Escarole and White Bean Ragout image

Flavorful sausage and bold escarole are filling additions to this French-accented stew from Dec 2006 "Cooking Light." Super easy to make. Substitute mustard greens to mimic the bitter flavor of escarole, or use spinach for milder flavor (I found spinach too bland and think escarole gives just the right punch). Serve with a crusty baguette or rolls.

12 ounces sweet Italian turkey sausage
cooking spray
1 cup onion, chopped
1 cup red potatoes, peeled and cubed (about 6 oz.)
1/3 cup Chardonnay wine or 1/3 cup other dry white wine
1 tablespoon garlic, minced
1 (16 ounce) can cannellini beans or 1 (16 ounce) can other white beans, rinsed and drained
1 (14 ounce) can reduced-sodium fat-free chicken broth
4 cups escarole, sliced (about 4 oz.)
1 teaspoon fresh rosemary, chopped
2 tablespoons parmesan cheese, grated

Steps:

  • Heat a large nonstick skillet with high sides over medium-high heat. Coat pan with cooking spray.
  • If you prefer crumbled sausage, remove casings. Add sausage and onion to pan, and cook 4 minutes or until sausage browns, stirring to crumble.
  • If you prefer sausage slices, cook whole sausages in a little water until almost firm. Slice sausages and return to pan with onion and cook until onion is lightly browned and no pink remains in sausage.
  • Stir in potatoes, wine, garlic, beans and chicken broth; return to simmer. Cover and cook 7 minutes.
  • Stir in escarole and rosemary, and cook for 4 minutes or until the escarole wilts, stirring occasionally.
  • Ladle 1 1/4 cups soup into each of 4 shallow bowls, and sprinkle each serving evenly with 1 1/2 teaspoons cheese.

  • Place beans in a large heavy pot and add cold water to cover by 1". Bring to a boil. Reduce heat, cover pot, and simmer, occasionally skimming surface, until beans are tender enough to be easily smashed with the back of a spoon, about 1 hour. Season with salt and stir in ½ cup oil.
  • Meanwhile, process parsley, half of garlic, and ½ cup oil in a small food processor until smooth. Cover parsley oil; set aside. Heat 2 Tbsp. oil in a large skillet over medium-low. Add onion, fennel, celery root, celery, bay leaves, remaining garlic, and 1 tsp. salt to skillet, cover, and cook, stirring occasionally, until vegetables are very soft but haven’t taken on any color, 15–20 minutes. Remove bay leaves and mix vegetables into cooked beans.
  • Preheat oven to 400°. Carefully purée 3 cups bean mixture and liquid in a blender until smooth and creamy; mix back into bean mixture. Stir in kale; season with salt. Pour ragout into a 3-qt. baking dish and bake until thick and bubbling and top is browned, 30–35 minutes. Let cool 10 minutes before serving. (Ragout will thicken as it sits.)
  • Meanwhile, heat remaining 2 Tbsp. oil in a large skillet over medium-high. Cook panko, tossing often, until golden brown, about 3 minutes. Transfer to paper towels to drain; season with salt.
