Bean and Cheese Burritos image

Classic bean and cheese burritos! These comforting burritos are loaded up with creamy refried beans, gooey cheese and a spicy red sauce. Perfect for serving to the family, this meal comes together in less than 30 minutes!

1 (16 ounce can) refried beans (no salt added)
½-⅔ cup chicken broth
¼ tsp chili powder
¼ tsp garlic powder
¼ tsp dried oregano
¼ tsp ground cumin
¼ tsp salt
1 cup red enchilada sauce
2 cups mild cheddar cheese (shredded)
10 flour tortillas (10 inch)

Steps:

  • Preheat oven to 350℉. Spray a large baking sheet with cooking spray and set aside.
  • In a medium size pot, add the refried beans and heat over medium heat.
  • Stir in the chicken broth to get desired consistency, should be smooth and not thick or chunky, the amount needed can vary depending on the brand of beans you are using.
  • Add in the seasonings and stir to combine. Taste and adjust as needed.
  • Lay one tortilla flat on a clean work surface.
  • Spread a layer of refried beans, about 1/3 cup, then top with 2 tbsp of the red sauce. Sprinkle with shredded cheddar cheese.
  • Fold the bottom and top of the tortilla over while rolling to form the burritos. Lay the folded burrito on the baking sheet, seam side down.
  • Continue until all burritos are filled and rolled and on the baking sheet.
  • Bake for 8-10 minutes, tortillas will be slightly tanned and crisp on the bottom.
  • Let cool for several minutes before serving, filling will be hot.
  • Serve with additional red sauce or favorite hot sauce, sour cream, or guacamole.

1 tablespoon olive oil
1 cup onion, chopped
4 garlic cloves, minced
1 (28 ounce) can chopped tomatoes
1 (8 ounce) can tomato sauce
1 (4 ounce) can diced green chilies
1 tablespoon fresh oregano, chopped (or 1 tsp. dried)
1 tablespoon fresh basil, chopped (or 1 tsp. dried)
1/4 teaspoon salt
1/2 teaspoon black pepper
1 (14 1/2 ounce) can vegetarian refried beans
1 (16 ounce) can black beans, drained
1 cup monterey jack cheese, grated
1 cup cheddar cheese, grated
10 flour tortillas

Steps:

  • Saute onion in oil, just until softened. Add garlic and stir for 30 seconds. Add tomatoes, tomato sauce, chilies, oregano, basil, salt, and pepper. Bring to a boil. Reduce heat and simmer for 15 minutes.
  • Combine the black beans and refried beans in a bowl. Combine both types of cheeses in a separate bowl.
  • Place 6 tablespoons or 1/10th of the beans and about 2 tablespoons of cheese in a tortilla. Roll it up and place it in and ungreased 9 x 13 baking dish. Repeat with all 10 tortillas.
  • Pour the sauce on top and sprinkle with the remaining cheese. Bake at 350 degrees for 20 minutes.

1 (12 ounce) can enchilada sauce
3 cups shredded cheddar cheese
1 medium onion, chopped
picante sauce
sour cream
black olives

Steps:

  • Heat oven to 350.
  • Place frozen burritos in an oven safe dish.
  • Cover with the enchilada sauce, and the chili.
  • Sprinkle with the cheese and onions.
  • Bake for 40 mins or until burritos are heated thru.
  • Garnish with sour cream, picante sauce, and black olives before serving.

1 tablespoon salsa
½ teaspoon chili powder
¼ teaspoon garlic powder

½ cup shredded Mexican cheese blend
1 ½ tablespoons vegetable oil, or as needed

Steps:

  • Combine refried beans, salsa, chili powder, garlic powder, and cumin in a mixing bowl; stir until smooth.
  • Spoon about 3 tablespoons of the bean mixture onto the center of a tortilla and smooth into a thin layer. Sprinkle with a large pinch of shredded cheese and roll tightly. Repeat with remaining bean mixture, tortillas, and cheese.

Quick and easy spicy bean burritos that the whole family will enjoy! Tex-Mex is a highly spiced and vibrant style of cooking that developed as an evolution of Northern Mexican cuisine. These burritos are fairly spicy with 1/2 tbsp chili powder and medium salsa. Feel free to increase the chili powder if using a milder salsa. I also use whole-wheat tortillas for extra fibre. These freeze well.

1 (14 ounce) can vegetarian baked beans, in tomato sauce
1/2 tablespoon chili powder
1/2 teaspoon oregano
1/2 teaspoon cumin
64 inches flour tortillas
1/2 cup part-skim mozzarella cheese, shredded (approx amount)
1/2 cup low-fat cheddar cheese, shredded (approx amount)
1/2 cup salsa (approx amount)
1/2 cup pepper, chopped (optional)
1/4 cup nonfat sour cream (optional)

Steps:

  • In a food processor, process beans and seasonings until smooth.
  • Spread out the 8 tortillas; add an equal amount of the bean mixture in the center of each tortilla.
  • On top of the bean mixture on each tortilla, add a sprinkle of mozzarella and cheddar cheese, some salsa, chopped pepper, and sour cream.
  • Fold tortillas up into burritos (fold the bottom third of tortilla over the filling; fold over both sides of tortilla; roll up to enclose the filling).
  • Place burritos in a nonstick frying pan or electric frying pan over medium heat.
  • Flip burritos often until golden brown.
  • OAMC; To Freeze - For a quick snack or dinner later on, after finishing frying, place single burritos (or family size portions if for a family meal) into plastic storage bags, then place individual bags into large freezer bag and freeze.
  • To re-heat - When ready for a burrito, pop it out of the bag and heat in the microwave for 1-2 minutes on medium power. Or, for a crispier burrito, pan fry the burrito until warm the outside is crisp.
