This ground beef and zucchini recipe is a delightful summer meal. For a change of pace, substitute your favorite barbecue sauce for the marinara in this baked stuffed zucchini. -Taste of Home Test Kitchen

4 medium zucchini
1 pound ground beef
1/2 cup chopped onion
3/4 cup marinara or pasta sauce
1 large egg, beaten
1/4 cup seasoned bread crumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Monterey Jack cheese, divided

Steps:

  • Cut zucchini in half lengthwise; cut a thin slice from the bottom of each with a sharp knife to allow zucchini to sit flat. Scoop out pulp, leaving 1/4-in. shells. , Place shells in an ungreased 3-qt. microwave-safe dish. Cover and microwave on high for 3 minutes or until crisp-tender; drain and set aside. , Meanwhile, in a large skillet, cook beef, onion and zucchini pulp over medium heat until meat is no longer pink; drain. Remove from the heat; stir in the marinara sauce, egg, bread crumbs, salt, pepper and 1/2 cup cheese., Spoon about 1/4 cup into each shell. Microwave, uncovered, on high for 4 minutes. Sprinkle with remaining cheese. Microwave 3-4 minutes longer or until a thermometer inserted into filling reads 160° and zucchini are tender. If desired, broil zucchini 3 in. from the heat for 3-5 minutes or until the cheese is golden brown. Serve with additional marinara sauce.

Stuffed Zucchini with Meat, Italian style, nothing says Italian Summer Dinner Dish then this. A delicious meatball mixture stuffed inside a hollowed out Zucchini and then pan-fried or baked to perfection.

5 medium zucchini
2-3 tablespoons olive oil
1-2 pinches salt
3/4 cup water
2 slices bread (I use day old Italian if extra thick use 1 1/2 slices)
1/2 pound ground beef
1 large egg
1/4 cup freshly grated parmesan cheese
1/2-1 teaspoon parsley (or 1 tablespoon fresh)
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 -1 clove garlic minced

Steps:

  • If the zucchini is long, cut it in half, then hollow it out, rinse and set aside.
  • In a small bowl soak the bread for about 30 seconds in either water or milk. Remove the crust and squeeze out the excess moisture, crumble and place in a medium bowl, add the ground beef, egg, parmesan cheese, spices and garlic, and mix well.
  • Stuff the meatball mixture into the zucchini. In a medium to large frying pan add 2 tablespoons of oil and place the stuffed zucchini in the pan, sprinkle with a pinch or 2 of salt and extra spices if desired, drizzle with approximately 1 tablespoon of olive oil. Add the water, cover the pan slightly. Cook on low/medium heat until the zucchini is tender and water has evaporated. Raise the heat, and uncover and cook till zucchini is slightly browned, turn and brown the other side. Serve immediately. Enjoy!

1/2 cup onion, chopped
1/4 cup olive oil
1/2 cup fresh mushrooms, coarsely chopped
1 garlic clove, minced
1 (3 ounce) package cream cheese
1 egg, beaten
1/2 cup parmesan cheese
3/4 cup fresh parsley, chopped
1/8 teaspoon pepper
parmesan cheese

Steps:

  • Slice zucchini in half lengthwise. Scoop out insides leaving about 1/4-in shell.
  • Finely chop zucchini pulp; set aside. Saute onion in oil in large heavy skillet. Add mushrooms, garlic and reserved chopped zucchini; cook over medium heat until most of moisture evaporates.
  • Add cream cheese, egg, Parmesan, parsley, and pepper.
  • Mix well; cook for about 10 minutes.
  • Cool filling slightly and fill zucchini shells.
  • Sprinkle with additional Parmesan cheese. Place on jelly roll pans; bake for 30 minutes at 350°F until bubbly and golden brown on top.

2 large thick zucchinis, ends trimmed
1 teaspoon vegetable oil
½ onion, chopped
3 cloves garlic, minced
¾ pound ground beef
½ teaspoon ground paprika
2 tablespoons butter
3 tablespoons all-purpose flour
¾ cup milk
¼ teaspoon white pepper
¼ teaspoon ground nutmeg, or to taste
salt to taste
¾ cup grated Parmesan cheese, divided

Steps:

  • Bring a large pot of water to a boil, and immerse the zucchini in the boiling water. Set heat to medium, and cook the zucchini until they feel slightly soft when pressed with a wooden spoon, about 20 minutes. Drain the zucchini, and set aside to cool.
  • Heat the vegetable oil in a skillet over medium heat, and cook and stir the onion and garlic until the onion is translucent, about 5 minutes. Stir in the ground beef, and cook and stir the meat, breaking it up as it cooks, until the beef is no longer pink, about 8 minutes. Stir in the paprika, and set the beef mixture aside.
  • Cut the zucchinis in half lengthwise, and scoop out the flesh with a spoon, leaving a 1/2-inch thick shell. Chop the scooped-out zucchini flesh, and mix into the ground beef mixture.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a saucepan over low heat, melt the butter and whisk in the flour until smooth. Pour in the milk, a little at a time, and bring the mixture to a simmer, whisking constantly. Whisk in white pepper, nutmeg, and salt, and stir in half the Parmesan cheese to create a smooth sauce. Mix the white sauce thoroughly with the ground beef mixture. Place the zucchini halves into a baking dish. Fill the zucchini shells with the creamy beef mixture, and sprinkle each with about 1 1/2 tablespoons of the remaining Parmesan cheese.
  • Bake in the preheated oven until the Parmesan cheese topping begins to turn golden brown, about 15 minutes.

Steps:

1 lb zucchini (approximately 6 small zucchinis)
8 ounces flavored cream cheese
8 ounces cream cheese
4 tablespoons scallions (optional)
2 cherry tomatoes (optional)

Steps:

  • Preheat oven to 425°F.
  • Halve zucchini lengthwise.
  • Scoop out middle (seeds and some meat) of zucchini.
  • Chop tomatoes and scallions, or any other vegetables you would prefer to use.
  • Blend together flavored cream cheese and regular cream cheese. A mixer works best, but this can also be done by hand.
  • Add chopped vegetables to cream cheese and mix.
  • Scoop or pipe cream cheese mixture into hollowed-out zucchini and place in casserole dish.
  • Cook for 15-20 minutes or until the top of the cream cheese is starting to brown/stiffen.
  • NOTE: Some moisture will be released during cooking and the zucchini will still be firm after 15-20 minutes. You may cook longer, but the cream cheese will start to liquefy.
