Sausage balls are a classic party appetizer for a crowd and they couldn't be simpler--just mix, shape and bake. We've included thinly sliced scallions in our version for subtle onion flavor and a touch of color.

1 pound ground pork sausage, such as Jimmy Dean, at room temperature (see Cook's Note)
2 cups biscuit baking mix, such as Bisquick (see Cook's Note)
1/2 cup thinly sliced scallions, optional
One 8-ounce package sharp Cheddar, grated

Steps:

  • Preheat the oven to 350 degrees F and line 2 baking sheets with parchment.
  • Combine the sausage, baking mix and scallions if using in a large bowl and gently knead with your hands until the baking mix is fully incorporated. Add the Cheddar and continue to mix until the cheese is evenly distributed.
  • Using a tablespoon to scoop, divide the mixture into walnut-size pieces and shape into balls with your hands. Arrange on the lined baking sheets about 2 inches apart, about 20 balls per baking sheet.
  • Bake until the sausage balls are golden brown and cooked through, about 26 minutes. Serve warm or at room temperature.

These sausage balls are the perfect bite-size combination of cheese, meat and biscuits -- all rolled into one. A staple around the holidays in the South, they are perfect on their own as an appetizer, or served as a side dish at your holiday table.

1 pound spicy Italian sausage, casings removed
4 cups grated extra-sharp Cheddar
2 cups baking mix, such as Bisquick
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • In a large bowl, combine the sausage, Cheddar, baking mix, garlic powder and salt and knead with your hands until a homogenous dough forms (this will take about 5 minutes). Pinch off golf ball-size pieces of dough, roll them into balls and arrange them 1 inch apart on the prepared baking sheets.
  • Bake until the sausage balls are golden brown and cooked through, about 25 minutes. Let cool for 5 minutes and serve warm or at room temperature. Store any leftover sausage balls in an airtight container for up to 1 week.

1/2 lb bulk pork sausage
1/2 lb ground chuck
1 egg, slightly beaten
1 cup cheddar cheese
1/3 cup fine breadcrumbs
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon vinegar
1 tablespoon soy sauce

Steps:

  • Mix sausage, chuck, egg, cheese, and bread crumbs. Shape into two dozen 1/2 balls.
  • In an ungreased skillet, brown balls slowly on all sides, about 15 minutes. Pour off excess fat.
  • Combine remaining ingredients and pour over meat.
  • Cover and simmer about 10 minutes, stirring occasionally to coat meatballs.

1/2 teaspoon sage
1/2 cup ketchup
1 tablespoon vinegar
2 tablespoons brown sugar
1 tablespoon soy sauce
1 cup sour cream
1/3-1/2 cup horseradish, drained
1 teaspoon Worcestershire sauce
1/2 teaspoon celery seed
1/2 teaspoon salt
1/2 teaspoon paprika

Steps:

  • Mix sausage ball ingredients well.
  • Roll into balls about 1-inch in diameter.
  • Brown on all sides.
  • Pour off grease.
  • Mix sauce ingredients; ketchup, vinegar, brown sugar and soy sauce well.
  • Pour mixture over sausage balls. Turn to cover well.
  • Simmer for about 30 minutes.
  • Mix all Tangy Sour Cream Dip ingredients well.
  • Spear toothpick into hot sausage ball, then dip into tangy sour cream dip.

2 eggs
1/2 cup evaporated milk
1 cup dry bread crumbs
1 small onion, chopped
1 teaspoon salt
1/2 teaspoon pepper
2 pounds ground beef
SAUCE:
1-1/2 cups water
2/3 cup packed brown sugar
1/4 cup chili sauce
3 tablespoons cider vinegar
3 tablespoons soy sauce
2 tablespoons ketchup
1-1/2 teaspoons ground ginger
1/4 teaspoon salt
1/8 teaspoon pepper
Dash Worcestershire sauce

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. With wet hands, shape into 1-in. balls. In a large skillet, brown meatballs in small batches over medium heat, turning often. Remove with a slotted spoon and keep warm; drain. , In the same pan, combine sauce ingredients. Bring to a boil over medium heat. Reduce heat; add the meatballs. Simmer, uncovered, for 30 minutes or until sauce is absorbed.

These sausage balls are made with Neese's® Sausage. Perfect for breakfast and great for the holidays. I have provided the doubled recipe. You can cut it in half if you wish. I usually bag half the recipe and put into fridge and freeze the other half. Great in toaster oven.

1 pound hot pork sausage (such as Neese's® Hot Sausage), at room temperature

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease a baking sheet.
  • Mix baking mix, Cheddar cheese, sage-flavored pork sausage, and hot pork sausage together in a bowl. Roll mixture into golf ball-sized balls; arrange balls on the prepared baking sheet.
  • Bake in the preheated oven until meatballs are no longer pink in the middle and browned on the outside, 25 to 30 minutes.

1 large egg, lightly beaten
1 can (5 ounces) evaporated milk
1 cup quick-cooking oats
1/2 cup finely chopped onion

1/4 teaspoon garlic powder

1-1/2 pounds ground beef
SAUCE:
1 cup ketchup
3/4 cup packed brown sugar
1/4 cup chopped onion
1/2 teaspoon Liquid Smoke, optional
1/4 teaspoon garlic powder

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 350° for 18-20 minutes or until meat is no longer pink; drain. , Meanwhile, combine the sauce ingredients in a saucepan. Bring to a boil. Reduce heat and simmer for 2 minutes, stirring frequently. Pour over meatballs. Bake 10-12 minutes longer.
