BBQ Pork Loin Tacos are a colorful and easy weeknight dinner. Zesty BBQ sauce paired with sweet and spicy pineapple salsa and crunchy red cabbage!

1-2 pound pork tenderloin (trimmed)
1 teaspoon chili powder
1 teaspoon sugar
1 teaspoon garlic powder
2 teaspoons Kosher salt
1 cup BBQ sauce
1 cup pineapple (chopped into bite-size pieces)
2 tablespoons jalapeno (seed and minced)
2 tablespoons red bell pepper (seeded and minced)
2 tablespoons red onion (minced)
2 tablespoons lime juice
12 small corn tortillas
2 cups red cabbage (shredded)
Fresh jalapeno (optional)
Cilantro (optional)
Lime Wedges (optional)
Maldon sea salt (optional)

Steps:

  • Preheat oven to 400 degrees. Coat a baking dish with cooking spray.
  • In a small bowl, combine chili powder, garlic powder, sugar and Kosher salt in a small bowl.
  • Pat pork loin dry with a paper towel and crust with spice mixture.
  • Bake for 25-35 minutes or until pork reaches an internal temperature of 145 degrees. Remove to a cutting board and allow to rest for 5 minutes before chopping into bite-size pieces.
  • Transfers to a mixing bowl and toss with BBQ sauce.
  • Meanwhile, prepare pineapple salsa by combining all ingredients in a bowl and tossing. Set aside until it's time to assemble tacos.
  • Wrap corn tortillas in aluminum foil and place in hot oven for 5 minutes.
  • Assemble tacos by dividing BBQ pork, red cabbage and pineapple salsa in each corn tortilla. Garnish with fresh jalapenos, cilantro, Maldon sea salt and lime wedges, if desired.

Coffee-Rubbed Grilled Pork Tenderloin Tacos with Pineapple Cucumber Salsa image

1 tablespoon brown sugar
1 tablespoon chili powder
1 tablespoon coffee grounds
Fine sea salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Freshly ground black pepper
Two 12-ounce pork tenderloins
2 tablespoons vegetable oil
Eight 6-inch flour tortillas
1 1/2 cups finely diced pineapple
1/2 English cucumber (peeled and seeds removed), finely diced
1/2 jalapeno, minced, or to taste
1/2 lime, juiced
1/2 red onion, finely diced
1/4 cup chopped fresh cilantro leaves, plus more for serving
2 cups red cabbage, shredded
1 cup sour cream
1 lime, cut into wedges

Steps:

  • For the pork tenderloin tacos: Preheat an outdoor grill to high heat on one side and medium-low heat on the other. Mix to combine the brown sugar, chili powder, coffee grounds, garlic powder, onion powder, paprika, 1 1/2 teaspoons salt and 1/2 teaspoon black pepper in a small bowl. Brush the pork tenderloins all over with the oil, then sprinkle over the dry rub on all sides.
  • Grill the pork on the high-heat side until it is nicely charred on all sides, 8 to 10 minutes. Move the pork to the medium-low heat side of the grill for indirect grilling. Cover the grill and continue grilling until an instant-read thermometer inserted into the center of the tenderloin registers 150 degrees F, 10 to 12 minutes longer. Remove from the grill and tent loosely with aluminum foil. Let the pork rest for 10 minutes. Thinly slice for tacos.
  • To warm the tortillas, heat the tortillas on the grill over low heat, turning once to brown them up a bit. Wrap them in foil to keep them warm until it's time to eat.
  • For the pineapple cucumber salsa: Stir to combine the pineapple, cucumber, jalapeno, lime juice, onion, cilantro, 1/2 teaspoon salt and 1/4 teaspoon black pepper in a large bowl.
  • For the assembly: To build each taco, place some pork onto a tortilla. Top with some shredded cabbage, pineapple cucumber salsa, sour cream and cilantro. Serve with lime wedges.

2 lbs pork loin
2 cups barbecue sauce
1 cup ketchup
1/2 cup water
2 tablespoons garlic powder
1 red onion, minced
6 diced tomatoes
1 cup fresh cilantro
1 lemon, juice of
salt and pepper
25 corn tortillas

Steps:

  • PORK.
  • Place pork in a pot, ketchup, barbecue sauce, garlic powder and water, simmer for an hour and a half, until the meat is very soft. You can use a slow cooker.
  • SALAD.
  • Place all ingredients in a bowl stir well.
  • TO SERVE.
  • Heat 2 tortillas and place 2 tablespoons of meat and a teaspoon of salad, and ready to enjoy.

1/2 cup frozen apple juice concentrate
2 tablespoons honey mustard
2 tablespoons fresh rosemary, minced
3 garlic cloves, minced
1 tablespoon olive oil
1 shallot, minced
1/2 teaspoon pepper
1 1/2 lbs pork tenderloin, fat trimmed

Steps:

  • Combine all the ingredients (except pork), whisk well.
  • Pour over the loin in a zip lock plastic bag or glass bowl.
  • Marinade in the fridge for at least 2 hours.
  • Remove loin from marinade, save marinade.
  • Cook 6 inches from high heat source for about 15 minutes turning frequently and basting with the marinade The outside should be nicely browned and the inside just a slight pink color Rest for 5 minutes and slice into 1/2-inch slices.
  • Heat any remaining marinade and serve over the pork.
