1 medium onion, chopped
3 garlic cloves, minced
3/4 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
2 large eggs, lightly beaten
1 teaspoon each dried basil, oregano and parsley flakes
3/4 teaspoon salt
1 pound lean ground turkey
1 pound lean ground beef (90% lean)
Optional: Hot cooked pasta and pasta sauce

Steps:

  • Preheat oven to 375°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Cool slightly., In a large bowl, combine bread crumbs, cheese, eggs, seasonings and onion mixture. Add turkey and beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls., Place meatballs on a rack coated with cooking spray in a 15x10x1-in. baking pan. Bake until lightly browned and cooked through, 18-22 minutes. If desired, serve with pasta and pasta sauce.

2 tablespoons extra-virigin olive oil, plus more for brushing
4 cloves garlic, sliced
Pinch of red pepper flakes
1 28-ounce can plum tomatoes
1 15-ounce can plum tomatoes
4 large sprigs basil
3/4 pound pancetta, diced and browned
1 cup meatballs, cooked and quartered
1 cup sliced roasted red peppers
1 cup chopped black or green pitted olives
3 cups shredded mild provolone cheese
1 cup freshly grated ricotta salata

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil. Cook the rigatoni until very al dente, 2 to 3 minutes less than the label directs; drain.
  • Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until the garlic is golden. Crush the plum tomatoes into the skillet with your hands; rinse out each can with 1/2 cup water and add the water to the skillet. Add the basil; simmer, uncovered, until the sauce is thickened, about 15 minutes. Discard the basil; season the sauce with salt. (Alternatively, heat 4 cups prepared tomato sauce.)
  • Stir the pancetta into the sauce, then add the meatballs, roasted red peppers and olives.
  • Brush a 3-to-4-quart baking dish with olive oil. Toss the cooked pasta with the sauce and half of each cheese. Spread in the prepared baking dish. Sprinkle the remaining cheese over the pasta. Bake, uncovered, until browned, about 15 minutes. Let rest 15 minutes before serving.

1 teaspoon dried oregano
½ teaspoon garlic (powder or granulated)
1 teaspoon onion powder
1 teaspoon salt

1/3 cup breadcrumbs (Italian or plain)
1/3 cup milk
1 egg
1 tablespoon olive oil
24 ounce tomato sauce

Steps:

  • Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
  • In a large mixing bowl add ground beef, oregano, garlic, onion, salt and pepper.
  • Place the breadcrumbs in the milk and allow them to sit for a minute to soften and absorb some of the milk. Drain any excess milk from the breadcrumbs and add them to the meat mixture. This milk and breadcrumb mixture is called a panade and helps to keep the meatballs soft and tender.
  • Crack an egg and add the egg to the meat mixture.
  • Cover your hands with the olive oil generously to keep the meat mixture from drying out when you mix the meat. Mix the meast just enough that the breadcrumbs and spices are distributed well into the mixture, but not to overmix. Using your hands over a spoon also helps you to keep from overmixing the meat.
  • Once the meat is mixed, with oiled hands portion the meat into about twelve equal sized meatballs. Give the meatballs a quick and gentle roll, then place each meatball on the baking sheet, leaving about 2 inches between meatballs.
  • Bake meatballs for 18-20 minutes. Flip the meatballs after about 10-15 minutes to help them to brown more evenly. Meatballs should be cooked all the way through and no longer pink in the center.
  • While meatballs are cooking, place tomato sauce in a covered pot with a lid on the stove and heat through until it is simmering.
  • Toss meatballs in the tomato sauce, and enjoy hot.

  • In a large pan add the olive oil, garlic, tomato puree/passata, salt, fresh basil, oregano and water. Mix to combine.

1 (3 1/2 oz) onion (finely diced)
1 garlic clove (crushed or grated)
1 pound 2 ounces ground veal and pork (or use pork and beef or turkey)
1 3/4 ounces breadcrumbs
1 tablespoon Dijon mustard
4 sprigs flat-leaf parsley (leaves picked, finely chopped)
1 large egg
1/2 teaspoon salt (plus more if needed)
Freshly ground pepper (to taste)
1/4 cup all-purpose flour
2 cans (14 ounce) diced tomatoes
Pasta of your choice (to serve)
Grated Parmesan (to serve)

Steps:

  • In a large skillet over medium-low heat, warm 1 tablespoon of the oil. Add the onion and garlic and cook until softened, but not browned, 5 to 7 minutes. Dump the onion mixture into a large bowl and let cool. Wipe the skillet clean.
  • Add the meat, breadcrumbs, mustard, parsley, egg, salt, and some pepper to the cooled onions and mix.
  • Use your hands to roll the mixture into 1-1/4 inch (3 cm) meatballs. You should have about 15 meatballs.
  • Place the flour on a plate or in a baking dish and roll the meatballs in the flour to coat. Dust off any excess.
  • In the same large skillet over medium-high heat, warm the remaining 1 tablespoon olive oil. Working in batches, if necessary, add the meatballs and brown on all sides.
  • Return all the meatballs to the skillet, then carefully add the canned tomatoes and 3/4 cup (200 ml) water. Be cautious: the skillet will be hot and might spit.
  • Cover and simmer until the meatballs are cooked through to an internal temperature of 160°F (71°C) and the flavors have melded, 20 to 25 minutes. Taste and adjust the seasoning with more salt, if needed.☞TESTER TIP: If you prefer a spicy sauce, season with some red pepper flakes.

  • Preheat oven to 220°C/Gas Marm 6. Place the breadcrumbs in a bowl with 2 tablespoon of milk or water to soak. Rub a layer of oil over the red peppers, place them in the baking tray and roast in the oven for 25-30 minutes, turning occasionally, until dark and blistered all over.
  • While the peppers roast, peel and finely slice the onion. Peel and finely chop or crush 3 garlic cloves. Heat 1 tablespoon of oil in a saucepan. Gently fry the onions for 5 minutes, until starting to soften. Add two thirds of the garlic to the onions and cook for another 2 minutes.
  • Add the bay leaf, white wine, Worcester sauce and brown sugar to the pan. Allow it to bubble and reduce by half. Tip in the chopped tomatoes. Fill the empty tin two thirds full of water, give it a quick swill around and tip that in too.
  • Season with salt and pepper and gently simmer for 15 minutes while you make the meatballs. Put a large pan of salted water on to boil. Mix the soaked breadcrumbs with the beef, oregano, Italian hard cheese and remaining garlic. Season well with salt and pepper and mix thoroughly. Divide into 16 equal-sized balls.
