BARBECUE BEEF CUPS
This is a quick and easy recipe given to me by a friend. My family loves it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
- In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
- Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup.
- Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes.

BBQ GROUND BEEF BISCUIT CUPS
Steps:
- Brown ground beef in a nonstick skillet, crumbling it as it cooks. Drain off any grease.
- Stir in the bbq sauce, minced onion, brown sugar if using, mustard, and jalapenos. Simmer for 1 minute and remove from heat.
- Preheat oven to 400 degrees. Spray 10 cups of a 12-cup muffin tin with cooking spray.
- Separate each biscuit into 2 pieces by pulling apart the layers. Stretch each piece and mold it into the bottom and up the sides of the muffin cups.
- Divide the ground beef mixture between the biscuit-lined cups.
- Top each one with cheese.
- Bake for 10 to 12 minutes or until the edges of the biscuits are golden. Let sit for 1 minute and then run a knife around the edge of each one to loosen and remove them from the pan.

- Scoop mixture into each biscuit cup.
- Place muffin tin in preheated oven (350) for about 15-20 minutes, or until slightly golden-brown edges.
- Sprinkle cheddar cheese on top once removed from oven. Serve!

- Preheat oven to 375 degrees. Lightly grease 2 (12 cup) muffin pans.
- Separate dough into biscuits. Press biscuit dough into bottom and up sides of 20 muffin cups; set aside.
- In a large skillet, cook ground chuck over medium high heat until beef is browned and crumbles. Drain well. Stir in corn, bacon, barbecue sauce, onion powder, garlic powder and 1 cup cheese. Spoon evenly into prepared muffin cups; sprinkle evenly with remaining cheese.
- Bake 12 minutes, or until biscuits are lightly browned. Serve with carrot and celery sticks, if desired.

- Brown meat with peppers in medium skillet. Remove from heat. Stir in barbecue sauce.

BEEF BISCUIT CUPS

Very easy to make, spices can be added to personal taste, same with types of cheese, sauce, etc. This can easily be adjusted to a lower fat version by adjusting the ground beef fat content, biscuits and cheese. - Brown ground beef, drain, add spaghetti sauce and seasoning.
- Cook over medium heat about 5-10 minutes or until heated through.

- Spray or grease the cups of a muffin tin.
- In a skillet over medium heat, cook beef until browned; drain off drippings.

- Flatten each biscuit with your hand or a rolling pin and press into the cups of the muffin tin; the dough needs to come to the top of each cup.
- Place a portion of the beef mixture into each dough cup.
