- Place each chicken breast on a double thickness of heavy-duty foil (about 12 in. square). Combine the oil, rosemary, thyme, basil and garlic; drizzle over chicken. Top with potatoes, squash, onion and butter. Sprinkle with salt and pepper. Fold foil over mixture and seal tightly. , Grill, covered, over medium heat for 30 minutes or until a thermometer reads 170°. Open foil carefully to allow steam to escape.

BBQ CHICKEN BAKED POTATOES

- For the chicken: Add the chicken, BBQ sauce, honey, vinegar, salt, chipotles, garlic and onion to a multi-cooker along with 1/4 cup of water and toss to combine. Cover and position the vent to Sealing. Set to pressure cook on high and set the timer to 12 minutes.
- When the time is up, quick-release the steam, then remove the lid. Remove the chicken to a large bowl and shred with 2 forks. Add the sauce to the meat in 1/4-cup increments until it has become saucy but not soupy. Reserve the remaining sauce for serving or freeze for future use (see Cook's Note).
- For the potatoes: Preheat the oven to 400 degrees F.
- Prick each potato all over with a fork. Rub vegetable oil on each potato and bake on a baking sheet for 1 hour. Slice the potatoes lengthwise three-quarters of the way through. Add 2 cups chicken, 1/2 cup sour cream, 1/2 cup Cheddar, 1/4 cup green onion and drizzle of reserved sauce to each potato. Serve immediately.

- Heat oven to 400°F.
- Line 15x10x1-inch pan with foil; spray with cooking spray. Coat chicken with coating mix as directed on package; place on 1/3 of the prepared pan.
- Mix oil and chili powder until blended. Toss beans with half the oil mixture, then toss potatoes with remaining oil mixture. Place beans on prepared pan next to chicken, then place potatoes next to beans.

- Preheat oven to 325 degrees F (165 degrees C).
- Arrange chicken breasts, potatoes, and onion in a large baking dish.
- Mix ketchup, brown sugar, Worcestershire sauce, vinegar, margarine, lemon juice, dry mustard, salt, paprika, chili powder, and red pepper flakes in a saucepan. - Preheat oven to 200°C/390°F.
- Sauce: Mix all Sauce ingredients in a ceramic/glass baking dish (Note 3), then mix in water.
- Add chicken and turn to coat. Place chicken skin side down.
- Bake for 20 minutes. Remove from oven, turn chicken, spoon over Sauce.
- Bake for a further 30 minutes, then remove and spoon over Sauce.
- Skim off fat (optional): Tilt pan and spoon or drain off excess fat.
- Broil/grill - Change to broiler/grill on high. Spoon sauce over chicken generously, then place under grill / broiler for 2 to 3 minutes to caramelise the chicken and the sauce to thicken more. Do not walk away - this can happen quickly!

- Preheat outdoor grill to medium-high heat according to manufacturer's directions. Place four 18x12-inch pieces of heavy foil on counter. Spray each with cooking spray. For each packet, spread a generous teaspoon barbecue sauce in center. Place 1/2 cup potatoes in single layer over sauce. Spoon another teaspoon sauce over potatoes.
- Top potatoes with chicken. Spoon 1 teaspoon sauce over each breast. Top each with 1/4th bell pepper, onion and black pepper. Bring up short sides of each foil packet and double fold top. Double fold both ends to seal each packet, leaving space for steam to gather.

- Preheat the oven to 350 degrees. Scrub the potatoes to remove all dirt and then rinse and dry thoroughly. Poke several holes into each potato with a fork and then place them on a baking sheet.
