Yield 1 head cauliflower
Number Of Ingredients 21
Steps:
- For the BBQ rub: Whisk together turbinado sugar, salt, granulated sugar, chili powder, smoked paprika, granulated garlic, onion powder, cayenne, cumin and pepper in a medium bowl. Set aside.
- For the cauliflower: Heat a grill for cooking over high heat and line a baking sheet with a large doubled piece of heavy-duty foil.
- Place cauliflower on prepared baking sheet. Coat entire head of cauliflower in butter using a pastry brush, then sprinkle 1/4 cup of the BBQ rub on the entire surface, including the bottom. Roll the edges of the foil up to create a rim around the cauliflower, then tent with more foil. Place baking sheet on grill and cook, covered, for 15 minutes. Carefully remove the foil lid and cook, covered, until just tender, another 25 minutes. Brush on BBQ sauce and continue to cook, covered, until nicely glazed, about 5 minutes. Cut up and serve with homemade ranch dressing, for dipping.
- Mix the mayonnaise, buttermilk, garlic, dill, honey and mustard in a bowl. Season to taste with salt and pepper. Store in an airtight container for up to one week.
CAULIFLOWER HOT WINGS WITH VEGAN AIOLI
Steps:
- Heat the oven to 350 °F.
- Carefully cut the cauliflower into bite-sized florets.
- In a large bowl, combine the all-purpose flour, the plant-based milk, the water, the garlic power, the paprika powder, the salt, and the black pepper. Stir until well combined. For a gluten-free version substitute the all-purpose flour with chickpea flour (also omit the water if using chickpea flour).
- Dip the florets into the batter, so they're completely coated.
- Roll them in the panko breadcrumbs. Omit this step for a gluten-free version. However, they're way crispier with the panko breadcrumb coating.
- Line a baking sheet with parchment paper and lay the cauliflower florets on the baking sheet. Don't put them on top of each other. Bake for 25 minutes at 350 °F.
- Transfer the cooked cauliflower wings to a bowl. Combine the BBQ sauce with a teaspoon sriracha sauce and pour it over the baked cauliflower wings. Evenly coat them from all sides by stirring them a few times.
- Put the coated hot wings back on a baking sheet lined with parchment paper. Bake again for 20 minutes at 350 °F.
- Serve immediately and sprinkle with the green onions and serve with vegan aioli or vegan ranch sauce. Enjoy!

Yield 4 to 6 servings

Steps:
- Preheat the oven to 450 degrees F. Lightly spray a nonstick baking sheet with cooking spray.
- In a large bowl, whisk together the rice flour, garlic powder, cumin, paprika, salt and pepper. Whisk in 1 cup water until completely incorporated and you have a thin batter. Add the cauliflower florets and toss to coat completely with the batter. Use tongs or a fork to remove the florets from the bowl, allowing excess batter to drip off. Place in a single layer on the prepared baking sheet.
- Bake until the batter begins to set, about 10 minutes. Use tongs or a spatula to flip the florets and bake the other side until the batter looks completely dry, about 10 minutes longer.
- Meanwhile, combine the barbecue sauce and butter in a small saucepan. Cook over medium heat, stirring occasionally, until the butter is melted.
- When the cauliflower is done, use a pastry brush to completely coat the florets with the sauce. Bake again until the florets are crispy and the sauce is completely absorbed, 8 to 10 minutes. Serve with carrot and celery sticks on the side.

- Wash and dry a medium head of cauliflower. Cut cauliflower crown bit-size pieces removing any stems.
- In a small bowl add 3 large eggs beat. In a large bowl add 2 cups of panko bread crumbs. Dip each piece of cauliflower first in the egg mixture and then into the panko bread crumbs. Before adding each piece to the panko bread crumbs be sure to shake off any excess egg. Toss the cauliflower in the panko bread crumbs and then place on a wire rack that will sit on top of the baking sheet. Ensure the cauliflower pieces are not touching or crowded so there is room for air to fully circulate around each piece. Air-fry or bake for 15 minutes. If using a convection oven flip the cauliflower pieces halfway through cooking.
- Meanwhile in a small pot over medium-high heat add 1/4 cup hoisin sauce, 1/3 cup honey, 1 tbsp soy sauce, 1 tbsp ketchup, 1 tbsp rice vinegar, 1 tsp sesame oil, 1/4 tsp ground ginger and 2 minced garlic cloves. Stir to combine and let come to a small boil.

- Preheat oven to 450°F and line baking sheet with parchment paper. This makes clean up much easier because clean-up is a breeze.
- Cut the cauliflower florets into small bite-size pieces. I like to make mine a little chunky, but you can cut them as small or large as you like.
- For this cauliflower wing batter, you want it to be nice and thick with a little bit of seasoning so it will stick to the cauliflower bites. Combine flour, non-dairy milk, and spices in a bowl, and whisk together.
- Coat each cauliflower bite in the batter. I simply put a handful of them in the bowl at one time and roll them around until coated.

- Basically, the wings are prepared quickly. While the cauliflower is baking in the oven, you can stir up the BBQ sauce.
- First you divide the cauliflower into bite-sized florets. You can halve or even quarter large florets here. Preheat the oven to 400°F (200°C).
- Now take a mixing bowl and add the flour, water, pepper, garlic powder, onion powder, salt and smoked paprika. Mix together to a homogeneous dough. The dough should be rather liquid so that we can knock the florets on the edge of the bowl and the excess part runs off.
- Dip the florets in the dough so that they are completely covered and tap the cauliflower briefly on the edge of the bowl.

- Mix all the ingredients (minus the vegan butter and hot sauce, this is added separately!) into a mixing bowl.
- The batter shouldn't be so thick that it doesn't drip, but also not so thin that it doesn't coat or stick to the cauliflower. If you're using rice flour, you may need to add a little more liquid to get the batter the right consistency. It tends to be slightly thicker.

- Preheat oven to 425 degrees F (218 C) and line a large baking sheet with parchment paper. If you have a cooling rack that is oven safe, you can place that over the parchment paper; it will help the cauliflower crisp up even more. However, we tested it with and without and both work. The primary difference is when not using a cooling rack, the cauliflower undersides can get a little more brown. But the easy workaround is cooking the cauliflower in the upper third of the oven to prevent the bottoms from burning.
- Add cauliflower florets to a large mixing bowl and season with a bit of salt and pepper (pepper optional). Toss to combine and set aside. (Reserve large mixing bowl for use later.)
- Next, prepare cashew coating by adding cashews, salt, cayenne pepper, garlic powder, paprika, and arrowroot starch (or cornstarch or potato starch) to a food processor. Mix until a semi-fine meal is achieved. A little texture is okay (see photo), but you want it pretty fine so it coats the cauliflower. Transfer coating to a shallow dish (shallow enough to dip the cauliflower in) and set aside.
