GRILLED BRATWURST
Grilled Bratwurst is a simple, yet flavor-packed German sausage. It's the perfect choice for lunch, dinner, or anytime you're in the mood for a good, savory brat.

Steps:
- Preheat your grill for Medium heat (325-350 degrees F) for two-zone cooking.
- Place the bratwursts on the indirect side of the grill and cook for 15-18 minutes or until the internal temperature of the bratwurst reaches 150-155 degrees F. Turn occasionally to evenly cook the bratwurst.
- Transfer the brats to the direct heat side of the heat and grill for 1-2 minutes to cook the exterior casing.
- Place the buns slit side down on the grill and grill for a few seconds until they are crisp.
- Remove the buns and the bratwursts from the grill. Place a brat in a bun, and top with your preferred toppings (mustard and sauerkraut for me!)

BEER-SIMMERED BRATWURST

- Preheat the grill for direct grilling, high heat.
- Combine the beer, caraway, coriander, mustard seeds, onions, garlic and ginger in a large stockpot. Then, add the bratwurst. Place the pot on the grates of the grill and bring to a simmer. Simmer the sausages until half-cooked, about 5 minutes. Remove the pan from the grill and let the bratwurst sit in the liquid for 30 minutes. Transfer the brats to a platter or cutting board and strain the liquid into a bowl, discard the solids.
- Brush the sausages with canola oil and grill until the casings are crisp and golden brown and the sausages are cooked through, 4 to 6 minutes per side. Keep warm until serving.

- Grill bratwursts, covered, on an oiled rack over medium heat or broil 4 in. from heat 10 minutes, turning frequently. I made this recipe last night for the first time and they are good! This is great if you are having a gang in and want a "do it yourself" style dinner (whatever) have baked beans on the side.

Steps:
- Put the brats, onions, peppercorns, cloves, garlic in a saucepan, pour in the beer.
- Bring to a boil and simmer the brats 15 minutes.
- Drain (you can do this early in the day and then just have the BBQ step to do before serving).
- BBQ the brats about 10 minutes.
- Spray with water while BBQing to form a crisp skin.
- Serve on the roll with mustard and hot peppers or other relish or serve them as your meat for dinner.
BBQ BRATWURST IN BEER
These are really good served on an Italian bun topped with your favoritew condiments. I love a dark sweet mustard,raw sweet onion, tomatoe, horseradish and chopped hot or sweet peppers. - Prick the sausages with a fork and place them in a glass or stainless steel bowl.
- Pour the beer in a sauce pan add the sage leaves, worcestershire sauce, onion and pepper, bring to a boil and then pour over the sausages.

BEER BRATS

- Place brats in a Dutch oven with onions and butter, cover the brats with beer. Bring to a boil and reduce to simmer until brats are cooked. Remove brats and set aside beer mixture. Grill brats until golden brown and return to beer mixture until ready to serve. Serve brats on fresh baked brat buns with sauerkraut, onions, green peppers, ketchup, and/or mustard.
GRILLED BRATWURST AND BEER
I found this recipe in a Weber BBQ cookbook and liked it for it's simplicity and for the fact that I could let them cook away on the grill with a minimum of supervision. My guests loved them! The next day, I re-grilled the leftovers and they were just as good, if not better, than they were the night before. My brats were quite large with 4 of them to a pound so the serving size here is approximate.

- Set up your grill for cooking indirectly over medium heat- for a gas grill just leave one burner unlit and for charcoal, move hot coals to the outside edges of the grill.
- Place a foil pan in the center of the cooking grate and pour the beer into the pan, then add onion and green pepper; place brats on grill alongside the pan and cook, turning occasionally, until they're lightly browned.
- Place brats into the pan with the beer and vegetables, cover grill and cook for 25 minutes.
- Serve on buns with mustard and chopped onions.
- Leftover brats can be re-grilled right on the grill for several minutes, until hot.

- At least 12 hours before grilling your beer brats, marinate the brats. Add the bratwurst sausages, sliced onion, and beer to a large airtight container or resealable bag. Shake to combine. Marinate in the refrigerator for at least 12 hours, or for up to 24 hours.

Between the time it takes to bring the brats to a boil & boiling the brats, this should take about 20-25 minutes total. Be patient & keep the grill lid closed as much as possible so you don’t release unnecessary heat from the grill – it’ll only make things take longer!
- Once boiled, use grill tongs to carefully transfer the beer boiled brats directly to the grill grates. Grill 2-3 minutes per side, until charred as desired & the internal temperature reaches 160 degrees F. Transfer to a plate to rest & cool slightly before serving.
