This is from International Vegetarian Recipes and submitted by Felix Weber from Bavaria, Germany. A nice sauce to serve with rice or pasta and vegetables!

1 medium potato, peeled and cubed
1 small carrot, thickly sliced
1 small onion, quartered
1 -2 garlic clove
1 cup vegetable broth (or water)
1 teaspoon salt
4 ounces silken tofu
1/2 cup nutritional yeast
1 dash hot sauce (optional)

Steps:

  • Cook potato, carrot, garlic, and onion in the 1 cup of water till vegetables are very soft, about 10-15 minutes.
  • Pour into blender, along with tofu, salt and brewers yeast, and puree.
  • Add more broth or water if necessary.
  • The ending consistency should be very thick, like a cheese sauce.
  • If you like a bit of a "kick" to the sauce, like what using sharp cheddar would give, add some hot sauce.
  • You'll be tempted to use more than 1 cup of water, but don't until the final pureeing stage, since you don't want to end up making this too thin.
  • You can always add more water/broth/white wine at the end; however, this is not a sauce you can "cook down".
  • Serve over cooked rice, mixed with pasta, and vegetables, etc.

I've tried so many vegan cheese recipes and they all taste, well, not like cheese. So I gave up and made my own. You can mix the sauce into macaroni, drizzle over fries, or use it in any other deserving dish.

2 small russet potatoes, peeled and cubed
½ cup carrots, chopped
⅓ large yellow bell pepper, chopped
¼ large yellow onion, peeled and chopped
5 tablespoons prepared garlic hummus
⅓ cup coconut milk, or more as needed
½ tablespoon nutritional yeast
1 ½ teaspoons lemon juice
1 teaspoon garlic powder
black pepper to taste
2 pinches salt, or to taste

Steps:

  • Fill a pot with water and bring to a boil. Add potatoes, carrots, bell pepper, and onion and cook until potatoes are tender, 15 to 20 minutes. Cook 1 more minute. Drain.
  • Combine potatoes, carrots, bell pepper, onion, hummus, coconut milk, nutritional yeast, lemon juice, garlic powder, black pepper, and salt in a blender or food processor; blend until smooth and creamy.

  • Chop potatoes, carrots, onion, and garlic and cook for about 10 minutes, or until the vegetables are soft enough to blend.
  • As soon as the vegetables are soft enough to blend, remove them with a slotted spoon from the cooking water and blend them with 175 ml of that cooking water along with the remaining ingredients in a blender for about 2 minutes until smooth and creamy. (The consistency of the sauce depends on the amount of the liquid).
