BAUERNFRüHSTüCK-FARMERS BREAKFAST OMELET
Posting this for World Tour 2006; this is a great light dinner for 2 or three people and it of course is a wonderful breakfast. Not for the diet conscious by any means :-P

Steps:
- In a frying pan, fry the bacon until crisp; remove and drain on paper towel.
- Drain most of the bacon fat from the frying pan, add the butter and saute' the onion until soft.
- Add the potatoes and brown lightly.
- Beat the eggs lightly and add the salt, pepper and milk, and finally the chopped bacon.
- Pour the egg mixture over the onions and potatoes and stir occasionally until cooked.

HEARTY GERMAN FARMER'S BREAKFAST (BAUERNFRUHSTUCK)
Great hearty rib-sticking meal for breakfast, lunch or supper! Very popular in my household. This is a versatile one-pan recipe-- you can sub or add ingredients as desired-- try ham, mushrooms, tomatoes, or chives. (Note: For an equally delicious simplified version of Bauernfruhstuck using frozen Potatoes O'Brien, please see my recipe #278230). Delicious! P.S. Any leftovers you have make a wonderful breakfast the next day--reheat a few seconds in the microwave (although I've been known to eat this cold), and serve with toast or stuff into a flour tortilla for a quick breakfast on-the-go.

Steps:
- In a skillet over low heat, cook bacon until crisp. Remove to paper towel. Reserve 2 tablespoons drippings; add potatoes, green pepper, onion, salt and pepper. Cook and stir over medium heat until the potatoes are golden brown.
- Stir in eggs and milk, and cook and stir until eggs are almost set, about 2 minutes.
- Reduce heat to low. Add cheese and bacon, stirring gently until heated through and eggs are set.
- Serve immediately.
- Leftovers are tasty the following day. Good wrapped in a flour tortilla for a breakfast burrito, breakfast on the go.
- Serves 4 to 6.

- In a bowl whisk together eggs, egg whites, 1/2 teaspoon of the salt and 1/8 teaspoon of the pepper. Set aside.
- Spray a non-stick skillet with Pam and set over medium-high heat.
- Add onion, garlic and remaining salt (1/4 teaspoon) and 1/8 teaspoon pepper; cook, stirring occasionally for 2-5 minutes or until onion is softened.
- Add tomato and cook an additional 2 minutes. Transfer mixture to a bowl and stir in cheese and basil. Set aside.
- Wipe out skillet with a paper towel.
- Add oil to skillet and heat over medium-high heat. Pour in egg mixture and cook until eggs are set (3-5 minutes), lifting edges to allow uncooked eggs to flow under.
- Spoon cheese mixture over half of the eggs, folding the other half of the eggs over the cheese mixture to enclose the filling. Cook turning once for about 2 more minutes or until filling is heated through.
- Cut into 4 serving pieces and serve.

FARMERS OMELET
Here where I live, an omelet is not eaten for breakfast, but rather for dinner or a great luch in the middle of the day. This wonderful omelet can of course, be eaten any time. It comes from our local market, SPAR, which had it published in a brochure. Very simple to make, and a good, old-fashioned, farm-type dish. Velbekomme!

- Cut potatoes and sausages (or bacon) in small pieces. Fry them lightly in a frying pan. Whisk together the eggs, water and salt. Pour this over the items in the pan. On top, lay the leeks that have been sliced, and also slices of the tomatoes. Turn the heat down tolow and let "set". Serv with a good type bread.

- Cook the sliced potatoes in a wide frying pan in olive oil on a medium heat for 20 minutes. Half way in add the diced onion. Use a lid as this cooks them a bit quicker. Don’t stir too often or it won’t crisp up.
