BATTER-FRIED FISH
Whether I'm fixing cod fillets or my husband's catch of the day, this fish fry batter makes the fish golden and crispy. Club soda gives it a different twist, and the sweet and zippy sauce complements the fish nicely. -Nancy Johnson, Connersville, Indiana

CAPTAIN D'S BATTER-DIPPED FISH
This is a clone that should be pretty close to the fish you get at Captain D's. I listed two optional ingredients because I ran across a recipe very similar except with a little spice added. Captains D's fish is basically a variation of Fish n Chips, so this probably something you can tweak and perfect by watching videos of fish n chips being prepared. Note: I have spoken to some and they've suggested that maybe Captain D's uses Cod. I've tried Cod and the meat just did not taste like the Captain D's in my area, so experiment with Cod, Pollock, Haddock, etc and see what works for you. Also, make sure your fish is dry. You don't want to try to make this with wet and water-logged fish. Pat it dry with a paper towel. I've known some to then rest the fish in the fridge or counter top to allow to fish to dry out some. Not using fresh fish can give you even more trouble.

Steps:
- Combine the flour, cornflour, baking powder and turmeric in a large bowl, season, then spoon 1 tbsp onto a plate and set aside. Gradually pour the beer and water into the bowl, stirring with a wooden spoon until you have a smooth, lump-free batter. Leave to rest for 30 mins while you prepare the chips.
- Heat oven to 200C/fan 180C/gas 6. Boil a large pan of water, then add the chipped potatoes and boil for 2-3 mins until the outsides are just tender but not soft. drain well, then tip onto a large baking tray with the flour, oil and some salt. Gently toss together until all the potatoes are evenly coated and the flour is no longer dusty. Roast for 30 mins, turning occasionally, until the chips are golden and crisp.
- To cook the fish, heat the 1 litre oil in a deep saucepan until a drop of batter sizzles and crisps up straight away. Pat the fish dry with kitchen paper, then toss it in the reserved turmeric flour mix. Shake off any excess, then dip into the batter. Carefully lower each fillet into the hot oil and fry for 6-8 mins - depending on the thickness of the fish - until golden and crisp. Using a large slotted spoon, lift out the fish, drain on kitchen paper, then sprinkle with salt. Serve with the hot chips and Homemade tomato sauce (see 'goes well with').

UNBELIEVABLE FISH BATTER
In the early 1950's, I received this recipe on an open-line, talk-radio show. It makes the lightest, crispiest batter imaginable. This makes enough to coat approximately 2 pounds of fish.

Steps:
- Preheat the oil to 350 degrees in either a deep fryer or a medium sized saucepan. In a medium bowl, mix together the flour, cornstarch, baking powder, salt, and cayenne pepper. Whisk in the water. The batter will get a little foamy, continue to mix. Pat the fish dry with a paper towel to remove excess moisture. Coat the fish in the batter, working to fully coat each fillet. Deep-fry the fish for 3 to 4 minutes. You want to cook the fish until it is golden brown. If you fry multiple pieces at once you may want to separate the pieces when cooking. Drain fish on a wire rack.

- Whisk together a 1:1:1.5 ratio of egg to ice water to all-purpose flour, or 1 egg, 1 cup of ice water and 1 1/2 cups of all-purpose flour, just until it forms a batter.
- Take the fish out of the refrigerator just before the 15 to 20 minutes is up. Pat the fish dry with paper towels and season it to taste.
- Take the batter out of the freezer and give it a stir. Set up a rimmed baking sheet with a wire baking rack on top of it beside the batter.
- Dip each fish fillet in the batter one at a time and coat heavily with the batter. Lift the fillet out of the batter and place it on the wire rack.
- Place the pan of battered fillets in the freezer, uncovered. Let the fillets freeze, about 45 minutes.
- Set the oven to 425 degrees Fahrenheit. Pour about 1/4 inch of oil in the bottom of a shallow baking dish or a rimmed baking sheet.
- Place the oiled pan on the middle rack and let it heat up with the oven. Take the fillets out of the freezer after 45 minutes.
- Open the oven and slide out the rack with the dish on it. Lay the fillets in the dish, spacing each about 1 inch apart, and pour a drizzle of oil or melted butter on top of each.
THE BEST FAST FOOD FISH SANDWICHES, RANKED

- Culver’s North Atlantic Cod Fillet Sandwich. Photo: Culver’s. After publishing the Popeyes Cajun Flounder review a few weeks back, I heard from several commenters who insisted that Culver’s positively owned the fast fish sandwich market.
- Captain D’s Giant Fish Sandwich. This one may be a bit tricky to find because Captain D’s exists solely in the south and certain parts of the Midwest.
- Popeyes Cajun Flounder Sandwich. Advertisement. You can read my full review of this sandwich here. If you’d rather not, I’ll sum it up for you: tasty sandwich.
- Arby’s King’s Hawaiian Fish Deluxe Sandwich. You’ll see two Arby’s contenders on this list: the King’s Hawaiian Deluxe, which is new, and the chain’s standard Crispy Fish Sandwich.
- Culver’s Northwoods Walleye Sandwich. Advertisement. After we published the original Fast Fish Power Ranking on March 3, we heard from Associate Editor Aimee Levitt’s mother about a glaring omission: the Culver’s Northwoods Walleye Sandwich.
- Dairy Queen Wild Alaskan Fish Sandwich. I’m always pleasantly surprised when I swing by a DQ for something other than a blizzard. It’s never top of mind, but every time I visit I’m reminded that the Queen has a serious knack for fries and dishes out some of the best chicken tenders on the fast food market.
- White Castle Panko Breaded Fish Slider. Photo: White Castle. I’ve got a soft spot for White Castle, because the sliders remind me of school lunch hamburgers.
- Long John Silver’s Classic Battered Alaskan Pollock Sandwich. Photo: Long Jonn Silver’s. Advertisement. Picture this: you’re an extraterrestrial and you’ve just landed on Earth.
- McDonald’s Filet-O-Fish. Speaking of fish sticks: Takeout editor-in-chief Marnie Shure posited that Filet-O-Fish devotees love the sandwich because it reminds them of fish sticks.
- Arby’s Crispy Fish Sandwich. Like I mentioned above, Arby’s recently upgraded its fish sandwich offerings. The Crispy Fish Sandwich has been around for a while and, like the Hawaiian Deluxe, serves up a very generous slab of fish.
