OVEN-BAKED OMELET
Set out everyone's favorite toppings so they can make their omelet slice however they like.

- Preheat oven to 400°F. Grease a 13- x 9-inch baking dish with cooking spray. Whisk together eggs, heavy cream, scallions, salt, garlic powder, black pepper, and 1 cup of the cheese in a large bowl. Pour egg mixture into prepared baking dish; top with remaining 1 cup cheese.
- Bake in preheated oven until eggs are puffed and lightly golden around edges, about 25 minutes. Top with herbs and additional black pepper. Serve immediately with desired toppings (below). The omelet will deflate as it cools.
EGG AND CHEESE BREAD OMELET
Cooking all the components of an egg sandwich - including the bread and cheese - in the same skillet means you end up with a dish that's like a cross between scrumptious French toast and a gooey grilled cheese in one. Inspired by a viral video of a vendor in India making a similar dish, we created this version that's perfect for breakfast, lunch, or dinner (with a salad alongside).

Steps:
- Combine the eggs, scallion and 1 tablespoon water in a small bowl and whisk to combine.
- Heat the butter in a large nonstick skillet over medium-high heat until melted and starting to brown around the edges. Add the egg mixture and swirl the pan to coat the bottom. Working quickly, dip 1 slice of the bread in the eggs, then flip it and place close to one edge of the pan. Repeat with the remaining slice of bread, setting it across the pan from the first bread slice (near the opposite edge) so they are in a straight line with eggs all around. Season with a pinch salt.
- Continue to cook the eggs until they are completely set on the bottom, 1 to 2 minutes. Slide a large metal spatula under the bread slices and flip the whole omelet in one single motion. Put the cheese on top of the omelet, covering the bread slices. Using the spatula, fold one side of the omelet (but not the bread side) over the bread and cheese followed by the other side. Then fold in half to form a sandwich and continue to cook until the bread on the bottom is golden brown, 1 to 2 minutes. Flip and cook until the other side is golden brown, 1 to 2 minutes.
OVEN BAKED OMELET
Whenever I make an omelet, it flops when it should flip. Baking it in the oven removes that obstacle. You can add any sort of filling to this versatile recipe, and it can be used to feed a crowd.

Steps:
- Preheat the oven to 450°F.
- Mix eggs, milk, flour, salt and pepper until smooth.
- Pour half of the egg mixture into a greased 9x13-inch pan.
- Place cheese on top of egg (you can also add any other filling that you want). Pour the rest of the egg mixture over the filling.
- Bake for 15-20 minutes or until eggs begin to turn golden brown around the edges. Use a knife to loosen the omelet from the pan before slicing.
- If you want, sprinkle some additional cheese on top.
- Slice and serve.
- To save a step, combine most of the cheese with the egg mixture before pouring rather than putting them in the pan separately.
BAKED BAGEL OMELET

- Preheat the oven to 400 degrees F. Line a small baking sheet with aluminum foil and spray generously with nonstick cooking spray.
- Place the bagel halves cut-side up on the baking sheet. Use your fingertips to work around the middle of each bagel half, scooping out the excess bread. Be careful to keep the shape and integrity of the bagel; if the bagel tears or cracks, flatten a piece of interior to mend the hole. Sprinkle 1 teaspoon each of the ham, green peppers and red peppers in each bagel half "moat," then sprinkle each with one-quarter of the scallions.
- Put the eggs in a container with a pour spout. Whisk in the milk and 1/2 teaspoon each salt and pepper. Slowly pour one-quarter of the egg mixture into each bagel half "moat," making sure the egg does not overflow.
- Bake until the eggs are just set and the edges of the bagels are turning golden brown, 12 to 15 minutes. Remove the baking sheet and place a slice of cheese on top of each bagel half. Return to the oven and bake until the cheese is melted and bubbling, about 3 minutes. Serve warm sprinkled with fresh parsley and a dash of hot sauce as desired.

- Preheat oven to 350 degrees F (175 degrees C). Grease a large 6-cup muffin tin with cooking spray.
- Mix potatoes, melted butter, salt, and pepper together in a large bowl.
- Divide potato mixture among muffin cups. Press to create a thin crust over the bottom and up the sides of each cup.
- Bake in the preheated oven until edges are a light golden brown and potatoes are tender, about 30 minutes. Crack an egg gently into each cup. Continue cooking until egg whites are set and yolk is runny, about 6 minutes. Remove from the oven; cover eggs with provolone cheese.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Toss prosciutto with maple syrup and pepper in a small bowl. Spread out on a small baking sheet lined with aluminum foil.
- Place muffin tin and baking sheet under the preheated broiler. Broil until cheese is melted and prosciutto is crisp, about 1 minute.
- Transfer egg baskets to a serving plate. Chop prosciutto and sprinkle on top.

We love this omelette with toasted English muffins and jam. Found it on a My Great Recipes card tucked in a book I bought at a thrift store. The card says for 2 servings, use half the ingredients, use an 8-inch pan and bake for 15 minutes; for 8, double the ingredients and bake in two pans.

- Preheat the oven to 350 degrees.
- Lightly grease a well seasoned iron skillet, and place it in the oven while the oven is preheating, and you are preparing the omelet.
- Separate the egg whites from the yolks.
- Beat the egg whites until stiff but not dry.
- Beat the egg yolks well, slowly add the flour and stir until smoothly blended.
- Add the milk and mix well.
- Lightly fold in the stiffly beaten egg whites.
- Remove the skillet from the oven and pour the omelet into it.
- Bake for 10 minutes or until the omelet is set in the center and lightly browned.
- When the omelet is done, remove from the oven and loosen the sides with a spatula.
- Place a platter close to the skillet, and with a spatula loosen the bottom of the omelet and slide it out onto the platter.
- Pour the melted butter over the omelet, and sprinkle with salt and pepper.
- **Note:If desired, you can place the asparagus spears in a wheel pattern on top of the omelet before placing it in the oven and/or sprinkle the grated cheese over the top.

- Heat a 12" oven-proof skillet over medium-high heat.
- Cook bacon until crisp, about 10 minutes. Drain, crumble, and set aside.
- Pour off and discard all but 1 tablespoon of bacon grease.
- Add potatoes to skillet, cover, and cook over medium-high heat for 15 minutes, stirring every 3 minutes.
