SOUTHERN SWEET POTATO SALAD
From my Cooks of the Green Door cookbook. Haven't tried this salad, but it sounds really delish! Feel free to modify the amount of sour cream and mayo to suit your tastes.

Steps:
- Bring a large pot of salted water to a boil. Add sweet potato cubes. Boil about 5-7 minutes just until tender but firm enough to hold their shape. Drain into a colander and rinse under cold water. Drain well. In a large bowl gently toss sweet potatoes with celery, green onions, raisins, pineapple and pecans.
- In medium bowl, mix together mayonnaise, sour cream, vinegar, honey, salt and pepper. Gently toss with sweet potato mixture. Cover and refrigerate until serving time.
TROPICAL SWEET POTATO SALAD
A great choice instead of the traditional potato salad. The spices, pineapple, and toasted pecans provide the perfect complement to the naturally sweet yams.

Steps:
- In a large saucepan, cook sweet potatoes for 8-10 minutes in boiling water just until tender. Do not overcook.
- Drain and toss with lemon juice, and set aside.
- Add celery, green onions, pineapple chunks, and pecans.
- In a small bowl, combine mayonnaise, orange rind, orange juice, ghoney, ginger, and salt.
- Mix the mayonnaise dressing with sweet potato mixture, tossing gently.
- Serve immediately, or cover and chill.

Steps:
- Arrange potatoes in an even layer in a 15x10-inch jelly-roll pan.
- Coat with cooking spray, and sprinkle with 1/2 teaspoon salt.
- Bake at 400°F for 25 minutes or just until tender. Let cool slightly.
- Stir together remaining 1/4 teaspoon salt, celery, and next 9 ingredients in a large bowl until blended.
- Add potatoes, and toss gently to coat.
- Sprinkle with crumbled bacon, if desired; garnish, if desired.
- Serve warm or chilled.

DURKEE SWEET POTATO SALAD
I've never liked traditional sweet potato casserole with marshmallow and all that, but I'm SO GLAD someone talked me into trying a bit of this! It's more savory than sweet. The Taste and texture of hard-boiled egg bits and crunchy celery in the smooth, tangy potatoes is terrific! The Durkee's "Famous" Sauce Dressing comes bottled and can be usually be found with steak sauces, Hollandaise and the like. Feel free to bake 3-4 sweet potatoes versus using canned ones. Prep time doesn't include boiling the eggs. ENJOY!

SWEET POTATO SALAD
This recipe comes from Stefano de Pieri - great Italian chef. However this is very Asian fusion inspired but is fantastic. I have successfully made it with a mixture of butternut pumpkin and sweet potato.

Steps:
- Cut sweet potato into chunks, toss in a little olive oil place in large baking dish with garlic cloves.
- Season to taste with salt and pepper amd bake at 220 Degrees C for 45 minutes to 1 hours.
- Remove from oven peel garlic and keep warm.
- Mix red onion, chilli and herbs into potato and garlic.
- Whisk remaining ingredients including the remaining olive oil, and toss through salad.
- Lastly top with peanuts and serve, extra herbs and black pepper.
- Fantastic!

- Bring a large pot of salted water to a boil. Add diced sweet potatoes and cook until tender but still firm, about 10 minutes. Drain and let cool.
- In a large bowl, combine sweet potatoes, onion and celery.
- In another bowl, stir together mayonnaise, honey and mustard. Stir into sweet potato mixture.
- Refrigerate until cold.
- Just before serving, top salad with chopped pecans.
