Steps:
- Combine the spinach and basil in a large salad bowl.
- Heat the olive oil in a skillet over medium heat.
- Add the garlic and pine nuts; mix well.
- Sauté until the pine nuts are brown.
- Add the prosciutto; mix well.
- Cook just until heated through, stirring constantly.
- Pour over the spinach mixture, tossing to coat.
- Season with the salt and pepper; sprinkle with the Parmesan cheese.

I swapped out the spinach for green kale which I roughly cut across the leaves and it was delicious. I skipped the pine nuts on top as I didn't have any at that time.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat, once the water is boiling, stir in the bow tie pasta and return to a boil.
- Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12-15 minutes or to your liking them rinse with cold water to cool and drain well in a colander set in the sink.
- Toss the spinach and basil together in a large bowl.
- Heat the olive oil in a skillet over medium heat; cook and stir the garlic in the hot oil for 1 minute; stir in the prosciutto and cook 2 to 3 minutes more, remove from heat.
- Add to the bowl with the spinach and basil mixture; toss to combine. Pour in the drained pasta and toss again.
- Season with salt and pepper. Sprinkle with the Parmesan cheese and pine nuts to serve.

SPINACH BERRY SALAD WITH CANDIED WALNUTS
Steps:
- For the dressing: Whisk together the vinegar, mustard, honey, jam, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Whisk in the oil in a slow stream and continue whisking until the dressing is emulsified.
- For the salad: Toss together the spinach, blackberries, onions and Candied Walnuts in a large salad bowl. Drizzle with the dressing and toss. Using a vegetable peeler, shave some cheese over the top.
- Line a baking sheet with parchment paper and set aside.
- Melt the butter in a medium saucepan over low heat. Add the walnuts and stir to coat. Raise the heat to medium, add the sugar and cook until the sugar is dissolved and caramelized, stirring often, about 5 minutes. Stir in the cinnamon, 1/2 teaspoon salt and 1/4 teaspoon pepper, then transfer the mixture to the baking sheet. Spread the nuts in a single layer. Let the walnuts cool until hardened, about 15 minutes.

- Hard boil eggs, peel and set aside.
- Wash spinach, removing tough ends, and tear into bite size pieces and place in large salad bowl.
- Add chiffonade of basil to spinach.
- Wash the mushrooms and slice thin, add to salad bowl.
- Wash tomato, dice; adding to salad bowl.
- Peel, pit and slice avocado, lengthwise, place in salad bowl along with feta cheese.
- Remove about 1 teaspoon of lime zest, cut lime in half and juice.
- In a blender jar, combine the lime zest and juice with remaining ingredients for the vinaigrette, pulse until thoroughly blended, pour over salad ingredients tossing to coat.
- Divide salad mixture into 4 equal portions and place on chilled salad plates.
- Thinly slice egg and garnish each salad with egg slices.
- Add a few grinds of fresh black pepper and serve.
SPINACH AND BASIL SALAD WITH PINE NUT DRESSING
This salad has fresh spinach and basil leaves and is topped with a creamy pine nut dressing. From the R.S.V.P. section of a May 1989 issue of Bon Appetit. It was requested from Woodrow's Bar and Grill in Princeton, New Jersey.

- Dressing:.
- Puree 1/2 cup pine nuts in processor; add egg, shallot and lemon juice and puree.
- Gradually add oil and vinegar alternately through feed tube and blend until smooth; season to taste with salt and pepper.
- (Can be prepared 1 day ahead. Cover and refrigerate.).
- Salad:.
- Toss spinach and basil in large bowl .
- Thin dressing with water if desired and spoon enough dressing over greens to season to taste and toss.
- Divide greens among plates, top with cheese and remaining pine nuts and serve.

This I had years ago at Woodrow's Bar and Restaraunt. I wrote for the recipe and got it!! It's fabulous!! I've also made it with grilled chicken and served it on top for a Heartier Meal!! It's refreshing in the summer with fresh basil out of the garden.

- Dressing-Put pine nut in a food processor add whole egg,shallots, and lemon juice,Puree.
- Slowly add oil in a stream alternate with vinegar till all is incorporated.
- Season with salt and pepper to taste.
- Salad-- On 8 plates arrange 2 1/2 ounces of spinach leaves and 12 basil leaves.
- Divide dressing over the salads.
