Steps:

  • Preheat the oven to 400 degrees F. Mix the parmesan, basil and lemon zest in a bowl.
  • Transfer a heaping tablespoon of the cheese mixture to a silicone- or parchment-lined baking sheet and lightly pat down. (A silicone baking mat is highly recommended for this recipe.) Repeat with the remaining cheese mixture, spacing the spoonfuls about 1/2 inch apart. Bake 3 to 5 minutes, or until golden and crisp. Let cool, then use a flat spatula to remove.

1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves)
1/3 cup dry white wine
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)
1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
  • Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
  • Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

Steps:

  • Lightly pound chicken to an even 3/4-inch thickness. Pat chicken dry using paper towels and place in a large resealable plastic bag.

3 tablespoons fresh lemon juice, plus 1/4 cup
1 1/2 teaspoons fennel seeds, coarsely crushed
1 1/2 teaspoons salt

3 bone-in, skin-on chicken thighs
3 bone-in, skin-on chicken breasts
1 cup lightly packed fresh basil leaves
1 large garlic clove
1 teaspoon grated lemon peel

Steps:

  • Whisk 1/3 cup of oil, 3 tablespoons of lemon juice, fennel seeds, 3/4 teaspoon of salt, and 1/2 teaspoon of pepper in a resealable plastic bag. Add the chicken and seal the bag. Massage the marinade into the chicken. Refrigerate at least 30 minutes and up to 1 day, turning the chicken occasionally.
  • Meanwhile, blend the basil, garlic, lemon peel, remaining 1/4 cup lemon juice, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth. Gradually blend in the remaining 1/3 cup oil. Season the basil sauce, to taste, with more salt and pepper, if desired.
  • Prepare the barbecue for medium-high heat or preheat a grill pan over medium-high heat. Remove chicken from the marinade. Discard the marinade. Grill the chicken until just cooked through, about 8 minutes per side. Transfer the chicken to serving plates, drizzle with the basil sauce and serve.

4 skinless, boneless chicken breasts (6 to 8 ounces each)

Steps:

  • Spread 1/4 cup flour on a large plate. Season the chicken with salt and pepper, then dredge in the flour and shake off the excess. Heat a large nonstick skillet over medium-high heat. Add the olive oil and heat until shimmering, then add the chicken and cook until golden and almost cooked through, 5 to 6 minutes per side.
  • Push the chicken to the edges of the skillet, add the shallot and basil stems to the middle and cook until softened but not browned, about 1 minute. Stir in the remaining 1 tablespoon flour and cook 1 minute. Add the chicken broth and lemon juice and bring to a boil, scraping up any browned bits. Here's an easy 30 minute dinner idea for you! Pan-seared Chicken in Lemon Basil Cream Sauce is super easy to throw together, and uses up some of that fresh garden basil. Chicken tenderloins are quick to cook on the stovetop, and the sauce has such bright lemony flavor!

2 pounds chicken tenderloins (thawed)
1/4 cup flour
1 teaspoon dried basil
1 teaspoon salt
3/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon butter
1 tablespoon oil
1 & 1/4 cups chicken broth*
1/3 cup fresh lemon juice (2 lemons-zest them first!)
1/2 cup cream
1-2 tablespoons lemon zest (to taste**)
1/4 cup fresh basil (chiffonade)
fresh basil (more to garnish)

Steps:

  • Dry the chicken tenderloins with a paper towel.
  • On a plate or shallow dish, mix together the flour and spices: basil, salt, pepper, cayenne, garlic, and onion.
  • Dredge the chicken in the flour mixture to coat both sides.
  • Heat a large skillet to medium high heat. When it is hot, add 1 tablespoon butter and 1 tablespoon oil, and swirl to coat.
  • Add about half the chicken tenderloins. Don't add them all at once or they will steam, not sear, and that won't get you those nice crispy brown edges. Leave about an inch in between each piece of chicken.
  • Sear for about 4 minutes. Keep an eye on it and make sure it's not cooking too quickly. Turn the heat down to medium if necessary.
  • Flip the chicken and cook for another 2 minutes or so, until brown.
  • Remove the chicken to a plate and sear the other batch, adding more oil if the pan gets dry.
  • When the chicken is done and out of the pan, add the chicken broth and lemon juice. Keep the heat on medium high. Scrape up the browned bits with a wooden spoon.
  • Bring to a boil and simmer for about 3 minutes.
  • Add the cream. Bring to a simmer again and continue simmering for 5-8 minutes until the sauce has thickened some.
  • Remove from heat and add fresh basil and lemon zest. Return the chicken to the pan.
  • Serve with pasta, rice, mashed potatoes, cauliflower rice, etc.

2 (5 ounce) chicken breasts
2 tablespoons olive oil, or more as needed
salt and freshly ground black pepper to taste
⅛ teaspoon garlic powder, or to taste
1 medium lemon, halved
1 bunch fresh basil, chopped

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
  • Wash chicken breasts and pat dry with paper towels. Trim and discard fat. Tenderize chicken with a meat mallet. Rub 1 tablespoon olive oil on each breast, lightly covering both front and back. Season with salt, pepper, and garlic powder and set on the prepared baking sheet.

2 lbs chicken, bone in, with skin (about 4 pieces)

4 large fresh basil leaves
4 garlic cloves, mashed slightly with the side of a knife
1/2 lemon, cut into 4 thin slices

  • Preheat oven to 400°F.

1 tbsp butter
1 onion (finely chopped)
2-3 garlic cloves (minced )
1 cup fresh basil (roughly chopped )
1 tsp dried herbs of your choice ((basil, rosemary, sage, thyme or Herbs de Provence all work well))
1 cup whipping or heavy cream
1-2 tsp lemon juice
salt and pepper (to taste )
500 g (1lb) pasta (cooked )
500 g (1lb) chicken breasts
1 cup flour (seasoned with salt and pepper )
3 eggs
2 cups panko breadcrumbs
2 tsp lemon pepper
1 tsp salt
1 tsp garlic powder
½ cup grated Parmesan

Steps:

  • Halve the chicken breasts horizontally, creating two thin cutlets.
  • In a shallow bowl, add the flour and season with salt and pepper. In a separate bowl beat the eggs and in another bowl combine the breadcrumbs, Parmesan, garlic powder, lemon pepper and salt.
  • Coat the chicken first in the flour, then in the egg and finally in the breadcrumbs. For a thicker coating, repeat the egg and breadcrumb step.
  • In a large pan set over medium-high heat heat a few centimeters/1 inch of vegetable oil.
  • Fry the chicken for 3-4 minutes per side until golden brown on both sides and cooked through.
  • Remove and allow to drain on a wire rack set over a sheet pan.
  • Melt the butter in a pan then add the onion. Cook until soft and translucent.
  • Add the garlic, basil and dried herbs (if using) and cook for another 30 seconds.
  • Pour in the cream and allow to come to a simmer. Simmer for 5-7 minutes until the sauce covers the back of a spoon easily.
  • Transfer sauce to a food processor or blender (or use an immersion blender) and blend until smooth.
  • Pour the sauce back into the pan and add lemon juice, salt and pepper to taste. Bring to a simmer and add cooked pasta then serve with the crispy chicken.

2 large lemons
2 garlic cloves, coarsely chopped
1 tablespoon olive oil
salt & pepper
2 teaspoons fresh basil, chopped (or 1/2 tsp dried)

Steps:

  • Zest the lemon and squeeze the juice, combine zest and juice with oil, basil and garlic in a small bowl.
  • Put chicken breasts between wax paper and pound to an even thickness.
  • Place in glad bag or bowl with marinade and leave for 30 minutes to 20 hours.
  • Grill chicken on bbq, broil it, or even cook it in a hot skillet, 6-8 minutes approximately.

4 tablespoons prepared basil pesto
2 tablespoons fresh chopped garlic (or to taste)
2 large lemons (fully zested (about 2 1/2 tablespoons), then squeezed (about 1/2 cup juice ))
1 cup olive oil
2 teaspoons italian seasoning
1 tsp salt
1/2 tsp pepper
1/2 tsp red pepper flakes, or to taste

Steps:

  • Combine all together in a large jar with a tight-fitting lid, or a sturdy zip lock bag, or a non-metallic bowl. This will make about 2 1/2 cups.
  • Before adding your protein or veggies, save back about 1/2 of the marinade to baste while cooking, or reserve to top after your dish is plated. You'll probably have enough to use for another purpose (use on pasta, pizza, etc).
  • In the remaining marinade, add your protein or vegetable of choice and let rest for the recommended length of time: chicken about 1-2 hours, seafood, and fish no longer than 30 min, veggies 30 min, firm tofu (pressed dry) 1 hour, and beef 1 hour or up to overnight.
  • Grill until cooked through, set aside, and let rest, then slice and spoon or brush with reserved marinade.

This is a super easy, 5-ingredient, very flavorful entree that was given to me by a friend. You can cook it all on the stove-top or finish it in the oven. And it can be gluten-free.

1/3 cup olive oil, divided
1/3 cup lemon juice
1/3 cup soy sauce (gluten-free)
4 tablespoons dried basil
4 chicken pieces

Steps:

  • Sprinkle chicken, both sides, with basil (1 T per piece). It should be a liberal coating; you can even use more than what's listed.
  • Heat a fry pan on medium-high and add 1 T of the olive oil.
  • Mix remaining oil, lemon juice and soy sauce. Set aside.
  • Brown chicken in oil, both sides. Add liquid mix. Bring to a boil.
  • At this point you can either place chicken in an oven pan and bake at 375°F or just turn the stove down to a simmer; cook for 15-20 min for boneless and 40-45 min for bone-in chicken.

1 cup olive oil
8 cloves garlic, coarsely chopped
1/2 cup fresh lemon juice (2 to 3 lemons)
4 chickens (2 1/2 pounds each) butterflied (see Note)
8 lemon slices
32 basil leaves
Kosher salt and freshly ground pepper

Steps:

  • Mix together the olive oil, garlic and lemon juice in a large shallow pan or baking dish. Add the chickens and turn to coat. Cover and marinate in the refrigerator for at least 2 hours or up to 4 hours. Preheat a gas or charcoal grill to medium high. Remove each chicken from the marinade and shake off any excess (discard the used marinade). Loosen the skin around the breast, and place 1 lemon slice and 4 basil leaves on each breast. Stretch the skin over them, and secure with toothpicks if too loose. Season the chickens with salt and pepper. Grill skin-side down until golden brown, 4 to 5 minutes. Turn over and continue grilling until cooked through, turning occasionally, 15 to 20 minutes. Place on a large serving platter.
  • NOTE: To butterfly a chicken, split it down the backbone with a sharp knife, and open it out flat.

Steps:

  • Preheat the oven to 400 degrees F. Place the chicken in a baking dish; sprinkle both sides with salt and pepper and arrange skin side up. Loosen the skin from each chicken breast and slip a basil leaf between the skin and the meat. Add the garlic to the baking dish. Place a slice of lemon on top of each piece of chicken. Drizzle with oil. Bake, basting occasionally with pan juices and turning the chicken and the baking dish occasionally so the chicken browns evenly, 35 to 40 minutes. If using a whole chicken, the baking time will be about 50 minutes. To serve, place a browned lemon slice and garlic clove on top of each portion of chicken.
