BASIL CHEESE POLENTA WEDGES
This is from Swanson's Chicken Broth...you can serve topped with Meat Sauce or as a side dish!! Options for grilling, baking or pan-frying given. Cooking time includes chilling.

Steps:
- Heat broth, cornmeal, bay leaf and pepper in saucepan to a boil.
- Stir in oil.
- Cook and stir 10 minutes or until mixture thickens.
- Remove bay leaf.
- Stir in basil and hceese.
- Pour mixture into greased 9" pie plate.
- Cover and chill 2 hours or until firm.
- Cut polenta into 6 wedges.
- To grill: brush wedges on both sides with olive oil. Place on hot grill and cook 4 minutes, turning once.
- To bake: place wedges on greased baking sheet. Bake at 375º for 20 minutes or until browned and crispy, turning once.
- To pan-fry: heat oil in nonstick skillet. Add wedges and cook 10 minut4es or until browned and crispy, turning once.
FRIED MOZZARELLA WEDGES W/ HOMEMADE MARINARA
These thick mozarella wedges are a lot like what you'll get at a restaurant, and the hearty homemade marinara is the perfect complement.

Steps:
- Saute onions in saucepan (do not brown).
- Add liquid drained from diced tomatoes.
- Add basil, Italian seasoning, sugar & red pepper. Simmer 30 minutes or until liquid is reduced by half.
- Remove from heat & set aside.
- Cut cheese into thick slices & cut diagonally triangles.
- Beat egg whites with water & set aside.
- Mix bread crumbs, garlic salt, & Italian seasonings; set aside.
- Blend flour with corn starch; set aside.
- Heat oil for deep frying to 360 degrees.
- Dip cheese in flour, then in egg, then coat with bread crumbs.
- Place in hot oil & fry a few seconds until golden.
- Remove from oil and drain.
- Add all tomatoes to saucepan & cook 1-2 minutes or until heated.
- Pour marinara into dipping bowl & top with parmesan.
CHEESE AND BASIL GIANT SCONES
Our friend Dennis gave us this recipe, we had it at his house a few times. His mother would make scones like this because she didn't like the waste when u use a cookie cutter. Points 3.

Steps:
- Preheat oven to 450 degrees.
- Prepare a cookie sheet with a generous amount of nonstick cooking spray.
- Combine 2 cups flour, cheese, basil, baking powder, baking soda, and pepper in a medium bowl.
- Add buttermilk and oil; mix only until dry ingredients are moistened.
- Divide dough into two balls.
- Knead each ball gently three times on a surface floured with the remaining 1 tablespoon flour.
- On prepared cookie sheet, pat dough into two circles, each 7 to 8 inches in diameter.
- With a sharp knife, score each disk 1/4 inch deep into six wedges; do not cut through.
- Brush tops of the disks with egg.
- Bake 10 to 12 minutes or until golden brown.
- Cut each disk into six wedges while hot.
- Serve warm or at room temperature.

- Heat oven to 400°F. Grease cookie sheet. Crumble cheese into small bowl; mash with fork. Stir in eggs, basil and white pepper until well mixed.
- Cut phyllo sheets lengthwise into 2-inch strips. Cover with plastic wrap, then with damp towel to keep them from drying out. Place 1 level teaspoon cheese mixture on end of 1 strip. Fold strip over cheese mixture, end over end in triangular shape, to opposite end. Place on cookie sheet. Repeat with remaining strips and cheese mixture. Brush triangles lightly with margarine.
- Bake 12 to 15 minutes or until puffed and golden brown. Serve warm.
