LEMON BASIL SORBETTO

Number Of Ingredients 4

2 cups sugar
4 sprigs fresh basil, plus 5 leaves, chopped
Zest of 4 lemons, removed with a vegetable peeler, plus 2 cups lemon juice (from about 10 lemons)
Pinch of kosher salt

Steps:

  • In a small sauce pan, combine 2 cups water, the sugar, basil sprigs, lemon zest and salt. Bring to a simmer over medium-low heat, stirring often to dissolve the sugar. Remove from the heat and allow to cool to room temperature.
  • Strain the syrup into a bowl and stir in the lemon juice. Pour the syrup into an ice cream maker and freeze according to the manufacturer's directions. Once partially frozen, sprinkle in the basil leaves and continue to freeze until firm. Pour into an airtight container and place in the freezer to freeze completely.
  • Serving option: Scoop 1 or 2 small scoops of sorbetto into a coupe glass and top with a splash of prosecco.

1 c. sugar
1 c. lightly packed fresh basil
6 c. frozen mixed berries
3/4 c. lemon juice (from about 4 lemons)

Steps:

  • In medium saucepan, combine sugar and 1 cup water. Heat on high until sugar dissolves, stirring occasionally. Add basil. Remove from heat, cover and let stand 15 minutes. Strain syrup into medium bowl, discarding basil. Refrigerate until cold.
  • In blender, puree frozen berries, lemon juice and cooled basil syrup until smooth. Transfer to metal 8-inch square baking pan. Cover with plastic wrap and freeze only until firm enough to scoop (about 2 hours). If sorbet is too hard to scoop, let stand at room temperature until slightly thawed.

1 wineglass water (about 5 ounces)
1 wineglass sugar (equal in weight to the water)
5 to 6 limes, zested
1 glass lime juice
1 very large bunch basil, pounded to a puree

Steps:

  • Place the water and sugar in a pan, bring to a boil, and simmer for 4 minutes with the lime zest. Remove from the heat, and allow to cool for a while. Add the lime juice and basil puree. Stir this up and leave to infuse for a while. Pass it through a coarse sieve and pour into a plastic tub or earthenware dish and place in the freezer. Generally, sorbet takes 2 hours to set. Try to stir it around every 30 minutes, if you remember. Serve it in a glass on its own.

1 cup milk
1 cup whipping cream (unwhipped)
5 lemons, juice of (1 cup lemon juice)
2/3 cup sugar (berry or superfine sugar)
1/2 teaspoon lemon zest

Steps:

  • Mix all ingredients together, stirring well. If you cant get berry sugar or superfine sugar, regular sugar can be used if you put it thru a food processor and pulse a few times.
  • Cool in fridge for at least two hours.
  • Using ice cream machine follow manufactures intructions. (25 minutes) Is how long mine takes.
  • Scoop out pulp from lemons. Trim bottom of lemon cups so they dont rock.
  • When sorbet is ready scoop into lemon cups and garnish with lemon zest.
  • Return to freezer until ready to serve or store lemon sorbet in freezer and scoop just before serving.

1 ¾ cups white sugar
1 ¾ cups water
½ cup fresh basil sprigs
2 cups fresh lemon juice
1 tablespoon lemon zest
8 slices lemon
1 sprig fresh basil

Steps:

  • Combine sugar and water in a saucepan over medium-high heat and bring to a boil, 3 to 5 minutes. Boil for 1 minute, stirring occasionally. Add basil sprigs, lemon juice, and lemon zest. Remove from heat and allow to cool for about 20 minutes.
  • Pour into a 9x13-inch metal baking pan or two 8-inch metal cake pans.
  • Place in the freezer for about 30 minutes. Remove basil leaves and stir. Freeze for 6 to 8 hours, stirring sorbet with a fork about once per hour until all the liquid is frozen.
  • Scoop sorbet into individual serving dishes and garnish with lemon slices and fresh basil leaves.
