¾ cup warm water (110 degrees F/45 degrees C)
1 tablespoon powdered egg substitute
2 tablespoons vegetable oil
2 tablespoons sugar
1 teaspoon salt
1 cup bread flour
1 cup whole wheat flour
1 teaspoon rapid rise yeast

Steps:

  • Dissolve egg substitute in warm water. Place all ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Whole Wheat cycle and Regular bake time; press Start.
  • After 5 minutes, check how the dough is kneading, it may need either 1 tablespoon of flour or 1 tablespoon of water, depending on the consistency. Once the bread is done, allow it time to cool on a wire rack before cutting.

This is a foolproof, beginner 100% whole wheat bread, easy to make with a stand mixer like a Kitchenaid®.

1 ¾ cups warm water
2 tablespoons honey
¾ teaspoon active dry yeast
3 ½ cups whole wheat flour, or more as needed, divided
1 tablespoon olive oil
1 teaspoon sea salt

Steps:

  • Mix the warm water, honey, and yeast in a stand-mixer bowl until mixture becomes foamy, about 5 minutes.
  • Add half the whole wheat flour, olive oil, and salt to the mixture. Mix with a spatula or wooden spoon until incorporated. Let sit for 1 to 2 minutes.
  • Mix with a dough hook attachment on low speed, slowly adding the remaining whole wheat flour, increasing the speed to high. Mix on high until the batter is combined and not sticking to the sides of the bowl, about 7 minutes. Cover the bowl with a towel and let rest for 15 minutes.
  • Meanwhile, prepare a 9x5-inch loaf pan with parchment paper. Flour a surface to work the dough.
  • Place the dough onto the floured work surface and shape into a loaf. Use more flour if necessary. Place into the prepared loaf pan.
  • Let shaped dough sit in a warm place until it has risen over the top of the pan, about 1 hour.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until top of the loaf sounds hollow when tapped, about 35 minutes. Remove from the oven and let cool for 15 to 20 minutes before removing from the pan and transferring to a wire rack. Let cool an additional hour before slicing; otherwise it will feel doughy.

⅓ cup honey
5 cups bread flour
3 tablespoons butter, melted
⅓ cup honey
1 tablespoon salt
3 ½ cups whole wheat flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
  • Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
  • Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
  • Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely.

A really easy,soft bread. I like it best when it is warmed up. This recipe makes either one big loaf or two regular sized loaves. If your mixer does not have a dough hook then a strong arm works just as well.

4 1/2 cups whole wheat flour (divided)
1/4 cup sugar
1 tablespoon salt
1/2 ounce dry yeast
1/4 cup oil
1 cup milk
1 cup water
1 large egg (room temperature)

Steps:

  • Grease one or two loaf pans.
  • In a large mixing bowl combine 1 1/2 cups flour, sugar, salt, and yeast.
  • Heat the oil, milk, and water to 100-110 degrees.
  • Add the warmed ingredients and egg to the bowl and blend at low speed until everything is evenly moistened. Beat 3 minutes more at medium speed. Using a dough hook stir in 2 1/2 - 3 cups flour.
  • If you choose to make 2 loaves, divide the dough and let it rise in the greased pans,otherwise leave it in the bowl to rise and put the dough in the greased pan when your oven is preheated.
  • Cover with plastic wrap or towel and place in a warm place (80-85 degrees), or put the covered dough on a rack over a pan of very hot water in the oven. The dough should double in about one hour.
  • Preheat oven to 375 degrees.
  • Bake for 30- 40 minutes. Remove it from the pans and cool on a baker's rack.

3 cups water, lukewarm (100-115ºF)
3/4 teaspoon dry yeast
7 1/2-8 cups whole wheat flour
2 1/2 teaspoons salt
2 tablespoons oil

Steps:

  • Proof yeast in half a cup of the water, with about a teaspoon of flour- let it sit, covered, until it becomes bubbly& active.
  • Combine the rest of the water with the yeast/water in a large bowl, and gradually add about half of the flour.
  • Stir the mixture about 100 times in the same direction, until it is well-mixed and strands are beginning to form.
  • Stir in the salt and oil.
  • Add the remaining flour half a cup at a time, stirring well, until it is too stiff to stir with a spoon.
  • Turn out onto a lightly floured board and knead for about 20 minutes, adding flour as nescessary to keep the dough from sticking to the board.
  • The dough should be springy and nice to work with.
  • When it has been sufficiently kneaded, cover it with a damp cloth for about 10 minutes and wash and grease the bowl lightly.
  • After it has rested, knead the dough a few more times (it should feel really nice by now!) and place it in the bowl, covered with the damp cloth, a plastic bag, and maybe a plate.
  • Let the dough rise until it springs back when you stick your finger in it, and it is about twice the size as it was before (this takes about 2 hours; longer or shorter depending on the room temperature- I prefer a longer (cooler) rise, because it allows the flavour to develop more... but sometimes you just don't have time for that sort of thing).
  • Deflate the dough by punching or kneading it a few times, and let it rise again- this time, it should take about half the amount of time as it did before.
  • When the dough has risen twice, deflate it again and cover it with the damp cloth again for about 10 minutes (to let the gluten relax, apparently.. it makes it easier to manage if you do this), then divide it into and shape it into loaves, buns, etc.
  • Let the shaped dough rise on a baking sheet or in a loaf-pan for about an hour maybe- it will rise a bit more in the oven.
  • Slash the top of the bread if you want, so that it doesn't bust open in the oven.
  • Bake at 400º for 20 minutes, and then turn the oven down to 350º and bake for 20-30 minutes longer, until the loaf is a lovely brown and sounds hollow when you thump it on the bottom.
  • (Buns and smaller loaves take a shorter time).
  • Try to let the loaf cool (out side of the loaf pan, or it will get a bit soggy) before you tear into it.

  • Dont use the rapid rise cycle on your machine as a longer, slower rise helps develop the flavor.
  • I use this for rolls or for loaves.

2 1/2 teaspoons active dry yeast
1 1/2 tablespoons brown sugar
1 tablespoon vital wheat gluten
1 1/2 cups whole wheat flour
2 tablespoons canola oil
1 tablespoon orange juice
1 teaspoon salt
1 1/2 cups bread flour

Steps:

  • In a large bowl, put water and add yeast. Stir to dissolve.
  • Add brown sugar, gluten and whole wheat flour. Beat well. Let yeast develop for about 10 minutes.
  • Add oil, orange juice and salt, mix thoroughly.
  • Add 1 cup bread flour, beat well. Work in the remaining bread flour to form a soft dough.
  • Turn out to a lightly floured surface and knead 6 to 8 minutes, or until dough is smooth and elastic.
  • Place the dough in a large oiled bowl and turn to coat. Cover with a clean towel and let it rise in a warm, draft free place about one hour, or until doubled in bulk.

  • Bake loaf in a preheated oven ( 375º F ) for 30 to 35 minutes, or until top is golden brown.

This is a great light wheat bread that rises high and is a good sandwich bread. I adapted "Country White Bread or Dinner Rolls (Bread Machine)" Recipe # 71373 by DDW . Instructions are for use with a Cuisinart Food Processor. I also changed the ingredients just a bit. The original recipe was by DDW, and it was GREAT, so I have to give credit where it is due.

1/3 cup warm water
2/3 cup cold water
1 large egg, beaten
4 1/2 teaspoons vegetable oil
2 cups bread flour
1 1/4 cups whole wheat flour
2 tablespoons sugar
1 1/2 teaspoons salt
2 1/2 teaspoons active dry yeast
1 tablespoon vegetable oil

Steps:

  • Add yeast and sugar to 1/3 cup warm water. Set aside and allow to proof for 5-10 minutes.
  • Place bread flour, whole wheat flour, salt and 4 1/2 teaspoons of oil in food processor. Process for approximately 10 seconds to combine.
  • Add the egg and the 2/3 cup cold water to the yeast mixture and mix well.
  • With the processor running, add the yeast mixture through the feed tube in a slow steady stream as fast as the flour will absorb it.
  • When the liquid is absorbed and mixture has formed a ball of dough that has cleaned the sides of the work bowl, process for 45-60 seconds longer to knead.
  • Place the 1 tablespoon of vegetable oil in a large bowl. Using your fingers/hands, coat the sides of the bowl. Rub your hands with the oil to make handling the dough easier.
  • Remove the dough from the workbowl and place in oiled bowl. Flip dough over so it is oiled on all sides. Lay plastic wrap on top of dough to keep it from drying while rising (you should have enough oil on the top of your dough so the plastic won't cling to it).
  • Place dough in a warm, draft free area and allow to rise until double in bulk. I warm my oven slightly (2 minutes) and allow the dough to rise there. It is quicker. The dough has risen enough when you poke it with your finger and the indentation stays.
  • Once dough has risen, remove it from the bowl and punch it down. Reshape it to fit in a greased bread pan. Re-place plastic wrap (being sure you put the oiled side down) and allow to rise a second time, once again until doubled.
  • Preheat oven to 375`. Bake for 20-30 minutes or until your loaf is brown on top and sounds hollow when you tap it.

Greast tops with oil and let rise until double again. Bake at 350 degrees for 40 minutes. Do not overbake.
  • May add 1 cup natural bran if desire. Use 1/2 Cup let flour.
  • Yield: 4 loaves.

  • Mix as you usually mix your bread, food processor, bread machine, whatever. If you use a bread machine, use it on the dough cycle (trust me, bread is a million times better when not baked in a machine). I like that this recipe can be left in a bread machine for hours with a timer - set it up in the morning, come home at night to fresh bread dough.
  • After initial rise/fall, punch down, and shape. This recipe generally takes about 45 minutes on the second rise to double in size.
  • Bake at 425 for 30-40 minutes, misting the oven twice with water at 5 and 15 minutes (make sure you don't spray the light in your oven, it'll break).

After trying Kim's (my sister-in-law) moist wheat bread, I HAD to have the recipe! It was delish! You HAVE to follow this recipe to a "T" if you want it to be moist, light, & fluffy... Don't substitute or skip any of the ingredients. I had to order the SAF yeast and Dough Enhancer from www.beprepared.com (which took a few days to get delivered, but it was worth it). The vital wheat gluten is VITAL! This is the best whole wheat bread I've ever eaten - even better than specialty bread store's bread!

8 -9 cups whole wheat flour (divided)
1 1/2 tablespoons saf instant yeast
1 1/2 tablespoons dough enhancer
3 tablespoons vital wheat gluten
1 tablespoon salt
3 cups warm water (114* - 116*)
1/2 cup vegetable oil (I use light-tasting olive oil)
1/2 cup honey
1 tablespoon liquid lecithin (found at health food stores)

Steps:

  • In a medium-sized bowl, put 4 cups of the flour, the yeast, the dough enhancer, the vital wheat gluten, and the salt.
  • In the mixer bowl (I mix mine in a Bosch mixer), put water, oil, honey, and lecithin.
  • Add the dry ingredients from the bowl to the liquid in the mixer bowl.
  • Beat with wire attachment until it forms a smooth batter. (About 3 minutes.)
  • Place the dough hook on the mixer.
  • Gradually add more flour and mix until it forms a soft dough. Continue mixing for about 10 minutes to knead the dough.
  • Remove the dough from the bowl and form it into 3 loaves.
  • Place in PAM-sprayed bread pans and spray the top of the loaves with PAM and allow to rise for about one hour.
  • Preheat your oven to 350* and Bake for 20-25 minutes or until golden brown.
  • ** If you don't use all white-wheat flour, cut down on the baking time as it will brown more quickly. **You can use red wheat flour, but it is slightly heavier. I prefer using all white wheat flour or 1/2 white wheat and 1/2 red wheat flour, but any flour will work.
