EASY GINGERBREAD COOKIES

Flavorful, whole-wheat gingerbread with just a hint of natural sweetness. These are a perfect holiday cookie to make with the kids. Double the batch to make more.

Number Of Ingredients 11

1 cup white whole wheat flour ((or half all-purpose and half whole-wheat flour))
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon allspice
1/8 teaspoon salt
2 tablespoons maple syrup
1 tablespoon molasses
2 tablespoons milk
1/4 cup unsalted butter ((softened at room temperature))
sprinkles, raisins, chocolate chips

Steps:

  • Place all ingredients into a bowl and use your hand to mix together to form a dough. You'll want to be gentle but thorough to incorporate the butter into the dough. (If the dough seems a little too dry once you've incorporated the liquid and butter into the flour, you can add another tablespoon of milk but go easy on the liquid as more will make the dough stickier. It's ready when it holds together when you try to form it into a ball.)
  • Make a flattened disc of dough. Optional: Wrap in plastic. Refrigerate for about 10 minutes. This will make the dough a little less sticky for rolling out, but it works okay to skip this step too if the kids don't want to wait.
  • Preheat the oven to 370°F and line two baking sheets with parchment paper.
  • Roll the dough ¼-inch thick between two pieces of parchment or plastic wrap. (You can do it on a lightly floured surface, but I always find this easier. You'll want to use parchment paper if you skipped chilling the dough so it doesn't stick.)
  • Cut out the dough with a cookie cutter and transfer to the prepared baking sheets. Bake for 8 to 10 minutes, until lightly browned around the edges. (Keep an eye on them after 8 minutes since the edges can brown fast. 9 minutes was perfect in my oven.)
  • Remove from the oven, let cool on the baking sheet for a minute, and transfer to a wire rack to cool completely.
  • Use a small butter knife to spread on the icing or pipe on as desired. If adding sprinkles or other decorations, add them to the iced cookies right away before it dries.

6 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup (2 sticks) unsalted butter
1 cup dark-brown sugar, packed
4 teaspoons ground ginger
4 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 teaspoon finely ground black pepper
1 1/2 teaspoons salt
2 large eggs
1 cup unsulfured molasses
Royal Icing with Tamara and Daniele, optional

Steps:

  • In a large bowl, sift together flour, baking soda, and baking powder. Set aside.
  • In an electric mixer fitted with the paddle attachment, cream butter and sugar until fluffy. Mix in spices and salt, then eggs and molasses. Add flour mixture; combine on low speed. Divide dough into thirds; wrap in plastic. Chill for at least 1 hour.
  • Heat oven to 350 degrees. On a floured work surface, roll dough 1/8-inch thick. Cut into desired shapes. Transfer to ungreased baking sheets; refrigerate until firm, 15 minutes. Bake until crisp but not darkened, 8 to 10 minutes. Let cookies cool on wire racks, then decorate with royal icing, if desired.

6 cups unbleached all-purpose flour, plus more for dusting
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup (2 sticks) unsalted butter, room temperature
1 cup dark-brown sugar, packed
4 teaspoons ground ginger
4 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 teaspoon finely ground pepper
1 1/2 teaspoons kosher salt
2 large eggs
1 cup unsulfured molasses
Currants, for decorating
Royal Icing, for decorating

Steps:

  • In a large bowl, sift together flour, baking soda, and baking powder. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Mix in spices and salt. Add eggs and molasses; mix well. With the machine on low speed, gradually add flour mixture, and beat until combined. Divide the dough into thirds, and wrap each piece of dough in plastic. Chill at least 1 hour.
  • Preheat oven to 350 degrees. Line baking sheets with Silpat nonstick baking mats or parchment paper. Set aside. On a lightly floured work surface, roll out dough to 1/8 inch thick. Cut into gingerbread boys and girls. Transfer to prepared baking sheets.
  • To decorate cookies: Press currants into dough to create buttons. Bake cookies until crisp but not darkened, about 20 minutes. Transfer to a wire rack. Let cool completely.
  • Decorate cooled cookies with Royal Icing.

½ cup unsalted butter at room temperature
¾ cup packed dark brown sugar
½ cup fancy molasses
2 large eggs at room temperature
3.25 cup all-purpose flour
1 tbsp ground ginger
½ tsp ground cinnamon
½ tsp ground allspice
½ tsp baking powder
½ tsp baking soda
½ tsp salt

Steps:

  • Beat the butter, brown sugar and molasses together until light and fluffy. Add the eggs, beating well after each addition.
  • In a separate bowl, sift the flour, ginger, cinnamon, allspice, baking powder, baking soda and salt. Add this to the butter mixture and stir until blended. Shape the dough into 2 disks, wrap and chill for about an hour up to 2 days (the dough will still be soft, even once chilled).
  • Preheat the oven to 350 F and line 2-3 baking trays with parchment paper. On a lightly floured surface, roll out the first disk of dough until just over 1/8-inch thick. Use a cookie cutter of your choosing to cut out cookie shapes and lift then carefully to the prepared trays, leaving about ½-inch between them. Continue with the second piece of dough - any scraps can be stored chilled and then re-rolled until it has all been used.
  • Bake the cookies for 15-18 minutes until you see them brown a little just around the edges. Let the cookies cool for a few minutes on the tray before removing to cool completely.
  • The cookies will keep for up to 10 days in an airtight container.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease 2 baking trays.
  • Sift flour, ginger, and baking soda together into a large bowl. Add butter chunks and stir until they are coated with flour. Mix the butter and flour together with your hands until mixture resembles fine bread crumbs.
  • Whisk white and brown sugars, maple syrup, egg, and oil together in a small bowl until combined. Add to flour mixture and knead until a ball of dough forms, adding water, if needed.

1/2 cup water
4 cups confectioners' sugar
Food coloring (optional)

Steps:

  • In a medium bowl, beat together meringue powder and water until soft peaks form. Gently stir in sugar until fully incorporated. Icing consistency can be adjusted by adding more or less water by the tablespoon. Beginning with a few drops of food coloring; mix well to achieve desired colors.

This is the very first gingerbread cookie I ever tried and it is still my favorite to this day. It has a nice chewy texture straight out of the oven and gets hard when it cools. But, as soon as you bite a chunk off, it melts in your mouth! I think the orginal recipe came from Taste of Home in their Christmas cookbooklet. The dough needs to refrigerate for at least 2 hours to let the flavors blend together, so plan ahead and don't skip this step.The recipe was for rolled cookies, but you can just as easily roll the dough into balls and push them down a little before baking. The dough does puff up quite a bit during baking, but it flattens back down as it cools. You can also substitute margarine for the shortening without changing the texture.

  • Cream shortening and sugar. Beat in egg and molasses.

  • Roll dough out on a floured surface (try to use the least amount of flour that you can to keep dough from sticking) to about 1/8" thick. Using a large cookie cutters (I use a 3 1/2" gingerbread man), cut out cookies and place on ungreased cookie sheets. Reroll dough scraps and repeat.
  • Bake @ 350 degrees for 8 to 10 minutes or until edges begin to brown. Remove cookie sheet from oven and allow cookies to cool on the sheet until they have flattened again. Carefully remove from cookie sheets and allow to completely cool on a wire rack.

Steps:

  • Cream pudding and pie filling mix with butter and sugar; add egg, and blend well.

120g unsalted butter, softened
1½ tbsp black treacle
170g soft light brown sugar
½ tsp fine sea salt
1 medium egg
200g plain flour
¼ tsp bicarbonate of soda
¼ tsp ground cloves
1½ tsp ground ginger
½ tsp ground cinnamon
60g golden caster sugar

Steps:

  • Beat together the butter, treacle, brown sugar and salt in a large mixing bowl. Add the egg, then beat through all of the remaining dry ingredients apart from the caster sugar. Chill the mixture in the fridge for 1 hr.
  • Heat the oven to 200C/180C fan/gas 4. Line two baking sheets with baking parchment. Roll the mixture into 20 even-sized balls (weighing for accuracy, if you like). Tip the caster sugar onto a small plate, then add each ball and roll around to coat. Space each ball out on the baking sheets. Bake for 9-10 mins until golden brown. Leave to cool completely on a wire rack.
