Baked Macaroni and Cheese image

Get Alton Brown's Baked Macaroni and Cheese from Good Eats on Food Network, a classic recipe made with cheddar cheese and topped with buttery breadcrumbs.

1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
3 tablespoons butter
1 cup panko bread crumbs

Steps:

  • Preheat oven to 350 degrees F.
  • In a large pot of boiling, salted water cook the pasta to al dente.
  • While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
  • Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
  • Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
  • Remember to save leftovers for fried Macaroni and Cheese.

I shouldn't be surprised that there are more than 600 recipes for this dish. After reading many, many of them, I have come to the conclusion that this one has it's place here at Zaar. The sauce is smooth and creamy, with little pockets of melted cheese throughout. I hope you like this as much as I do. Cooking time includes the making of the sauce and baking.

1 cup pasta, with nooks & crannies for holding the sauce
2 tablespoons butter
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup onion, chopped finely
2 tablespoons flour
1 cup milk
1 cup sharp cheddar cheese, grated
1/3 cup sharp cheddar cheese, cubed
1/2 teaspoon chives, chopped, mostly for colour
1/4 teaspoon red pepper flakes (optional)

Steps:

  • Preheat oven at 350°F.
  • Cook pasta in boiling salted water until al-dente. Drain and set aside.
  • Heat the milk in the microwave, on high for 1-1/2 minutes.
  • In a medium saucepan, melt butter. Add salt, pepper and chopped onion. Sauté on medium heat, until the onion is transparent and soft, but not brown.
  • Sprinkle the flour on top, and allow the butter to absorb some of it before stirring.
  • Add the hot milk in 3 additions, stirring constantly. The mixture will get thick very quickly.
  • After the final addition of milk, continue heating the mixture, on medium heat, stirring constantly, until thick and bubbly.
  • *Remove from heat* and stir in the grated cheese, chives and red pepper flakes.
  • Add the drained pasta and mix well.
  • Fold in the cubed cheese.
  • Pour into two greased onion soup bowls.
  • Bake for 20 - 25 minutes.
  • Allow to cool a bit before serving.

1 cup shredded Asiago cheese

Steps:

  • In a Dutch oven, cook pasta according to package directions. , Meanwhile, in a large saucepan, melt butter over medium heat. Add garlic if desired; cook and stir for 1 minute. Stir in flour, pepper and salt until blended; cook and stir until golden brown, about 5 minutes. Gradually whisk in milk, stirring until smooth. 2 (11 ounce) cans condensed cream of Cheddar cheese soup
1 ⅜ cups milk
2 teaspoons prepared mustard
¼ teaspoon ground black pepper
3 cups rotini pasta
2 tablespoons bread crumbs
1 tablespoon butter, melted

Steps:

  • Cook pasta in a large pot of boiling, salted water until al dente. Drain.
  • In a large bowl, combine condensed soup, milk, mustard, and pepper. Stir in macaroni. Transfer mixture into a greased 2 quart casserole. Combine bread crumbs and melted butter or margarine in a cup. Sprinkle over macaroni mixture.

2 tablespoons butter
¼ cup all-purpose flour
2 cups milk
1 cup shredded Cheddar cheese
8 ounces cubed processed cheese food

Steps:

  • In a large pot with boiling salted water cook elbow macaroni until al dente. Drain.
  • In a medium saucepan, over medium heat melt butter or margarine. Whisk flour and stir vigorously. Add milk and cook until thick and bubbly, about 5 to 7 minutes. Add cheeses and stir until completely melted.
  • In a large bowl mix together the drained pasta and cheese sauce mixture. Toss to coat evenly.

1 1/2 cups milk
14 ounces extra sharp white cheddar cheese, shredded, divided
1 (14 1/2 ounce) can stewed tomatoes
1/4 cup dry breadcrumbs

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  • In a large saucepan over low heat, warm soup and add milk; stir. Add 1/4 of cheese to soup and remove mixture from heat when cheese is melted.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Add macaroni and tomatoes to soup; stir and pour into a 9x13 inch baking dish. Cover with bread crumbs and remaining cheese.
  • Bake in preheated oven for 25 to 40 minutes or until the cheese is a golden brown; serve.
