BASIC BULGOGI MARINADE FROM BON APPETIT



Basic Bulgogi Marinade from Bon Appetit image

For this basic bulgogi recipe, cutting the meat into very thin strips allows it to absorb the hot-sweet-salty marinade in minutes, not hours.

1/4 pear, grated
3 garlic cloves, grated
2 tablespoons soy sauce
1 teaspoon crushed red pepper flakes or 1 teaspoon chili sauce
1 tablespoon grated peeled ginger
1 tablespoon light brown sugar
1 tablespoon toasted sesame oil
2 tablespoons vegetable oil, divided
1 teaspoon kosher salt, to taste
1/4 cup sliced scallion (for serving)

Steps:

  • Combine pear, garlic, soy sauce, pepper flakes, ginger, sugar, and sesame oil in a bowl and whisk to combine.
  • Using a sharp knife, slice meat into very thin strips.
  • Add beef and marinade to a large releasable bag, seal bag, and squish everything around until the meat is coated.
  • Toss in the fridge for 8 hours.
  • When ready to cook, let the meat sit on the counter and come to room temperature.
  • Heat one tablespoon of oil in a frying pan set over medium high heat.
  • Cook half the meat to desired doneness and set aside.
  • Repeat last two steps with the rest of the meat.
  • When ready to eat, sprinkle with green onions.

  • Blend 1 garlic clove and next 7 ingredients in mini processor. Arrange salmon in 11x7x2-inch glass baking dish. Spoon marinade over. Let marinate 5 minutes.
  • Preheat oven to 500°F. Arrange fish, with some marinade still clinging, on rimmed baking sheet. Transfer any marinade in dish to small saucepan. Roast fish until just opaque in center, about 8 minutes. Bring marinade in saucepan to boil; set aside and reserve for glaze.
  • Meanwhile, heat oil in large nonstick skillet over high heat. Add bok choy and mushrooms; using garlic press, press in 1 garlic clove. Stir-fry until mushrooms are tender and bok choy is wilted, about 4 minutes. Season with salt and pepper.
