1 cup yogurt, preferably whole milk
1/2 cup crumbled blue cheese
1 tablespoon freshly squeezed lemon juice, or more as needed
Salt
ground black pepper
1 head iceberg lettuce, cored and cut into 8 wedges
1/2 cup toasted and chopped hazelnuts, pecans or walnuts, optional

Steps:

  • Mash yogurt with blue cheese, lemon juice, a pinch of salt, and a grinding or two of pepper. Taste and adjust the seasoning, adding more lemon juice if necessary.
  • Place each wedge of iceberg lettuce on a plate, drizzle with dressing and sprinkle with nuts if using.

1 cup mayonnaise
1/2 cup crumbled Maytag or other blue cheese (about 3 ounces), divided
1/2 cup half and half
2 tablespoons sour cream
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • In a medium bowl, whisk together the mayonnaise, 1/4 cup blue cheese, half and half, sour cream, lemon juice, Worcestershire, and salt, until smooth. Gently stir in the remaining 1/4 cup blue cheese and season with pepper to taste. Use now or store in the refrigerator for up to 3 days.

50ml buttermilk
50g soured cream
50g mayonnaise
1 tsp lemon juice
75g blue cheese , crumbled
½ small pack chives , snipped
1 iceberg lettuce washed and quartered
25g walnuts , toasted and chopped

Steps:

  • Make the dressing in a medium-sized bowl by combining the buttermilk, soured cream, mayonnaise, lemon juice and 50g of the blue cheese. Season and stir through the chives. Chill until ready to serve.
  • When ready to serve, pour half the dressing over the lettuce wedges and crumble over the remaining blue cheese and a scattering of walnuts. Serve the rest of the dressing on the side.

1 cup mayonnaise
1 cup heavy cream
2 tablespoons tarragon vinegar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 head iceberg lettuce, cut in quarters, or 2 heads Bibb lettuce, cut in half
Heirloom tomatoes, or other good tomatoes

Steps:

  • Place the cheese, mayonnaise, heavy cream, vinegar, salt and pepper in the bowl of a food processor fitted with a steel blade. Process until smooth.
  • Place a wedge of lettuce on each serving plate with 2 slices of tomato. Pour enough dressing over the lettuce to moisten. Serve immediately.

This recipe reminds me of childhood. It's extremely retro, with an optional update. Definitely not for the nutrition-conscious. Did you know iceberg lettuce has the poorest nutritional content of all lettuces? The lettuce certainly won't boost your vitamin A or C levels, or fatten you up but the dressing sure will! This was in today's NY Times, an article about "loser lettuces" (iceberg and romaine) by Mark Bittman, the Minimalist. I would take exception with calling romaine a loser lettuce; unlike iceberg it has lots of nutrition. Then again, sometimes you just can't beat the crunchy cold of iceberg. I made this last night and it was just as I remembered it :)

1 head romaine lettuce, chopped
6 slices bacon, cooked and cut into bite-size pieces
6 mushrooms, sliced
1 medium avocado, sliced
1 cup fresh large tomatoes, cut into bite-size pieces
4 ounces sharp cheddar cheese, cubed
3 hard-boiled eggs, chopped
1 tablespoon red onion, finely chopped
2 tablespoons toasted nuts (optional, I used walnuts)
4 ounces blue cheese
3 tablespoons plain yogurt
1 tablespoon mayonnaise
1 teaspoon fresh dill (or 1/2 t dried dill)
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon garlic powder

Steps:

  • Mix yogurt, mayonnaise, dill, salt, pepper, and garlic powder in a bowl. Crumble in blue cheese and mash with a fork, stirring until thick and creamy, but still chunky.
  • Place lettuce in a large bowl and add bacon, mushrooms, cheddar cheese, red onion, and nuts (if using). Toss briefly just to combine ingredients.
  • Add tomatoes and avocado. Gently and briefly toss.
  • Scoop salad into individual serving bowls. Top each with eggs and then salad dressing.
