BEST MEATLOAF | WEIGHT WATCHERS
This easy to make, moist & flavourful meatloaf is perfect for anyone wanting a healthier version of this American classic. Perfect for anyone following the Weight Watchers plan, low in WW Personal Points. It was just 6 SmartPoints on the Green plan and 5 SmartPoints on the Blue or Purple plan.

Steps:
- Preheat the oven to 180°C / 160°C Fan / 350°F.
- Use 5 pumps of calorie controlled spray oil to grease a loaf tin (approx 9 inches by 5 inches)
- Place the ground beef, breadcrumbs, eggs, Worcestershire sauce, grated onion, minced garlic, black pepper, crumbled stock cubes/bouillon, milk and 2 tablespoons of the tomato ketchup into a large bowl.
- Mix with a wooden spoon (or your hands if you prefer) to combine all of the ingredients.
- Stir in the chopped parsley if using.
- The mixture will be wet but this leads to a moist, succulent meatloaf that is less inclined to crumble once cooked.
- Place the meat loaf mixture into the pre greased loaf tin and smooth the top.
- Mix the remaining 4 tablespoons of ketchup with the sugar, white wine vinegar and mustard to make a glaze.
- Spread half of the glaze on top of the meatloaf and set aside the rest for later.
- Place the meatloaf on the middle shelf of the preheated oven and cook for 50 minutes.
- Remove the meatloaf from the oven and spread over the remaining glaze.
- Place back in the oven for a further 25 minutes.
- Remove from the oven and let the loaf stand for 10 minutes or so before slicing it into 8 generous slices.

- Preheat oven to 350 F and line a baking sheet with parchment paper.
- Combine the beef, pork, bread crumbs, barbecue sauce, egg, onion, bell pepper, garlic powder, salt, and pepper together in a bowl.
- Transfer the mixture to the prepared sheet pan and shape by hand into a loaf, about 8x4 inches.
- Whisk together the sauce ingredients and set aside 3 tablespoons. Brush the remaining sauce over the top of the meatloaf.
- Bake for 1 hour.
- Remove the meatloaf and brush the reserved sauce on top. Bake for 15-20 more minutes.
BARBECUE-GLAZED TURKEY MEATLOAF
Meatloaf is a comfort food classic, and this slow cooker version is as delicious as any cooked in the oven. Mixed with herbs and seasonings, the ground meat is bound with cheese, breadcrumbs, and a whole egg, which help the loaf hold its shape. - Fold a 24-inch length of foil in half lengthwise. Fit into the bottom and up the sides of a 5 to 6-quart slow cooker insert.
- Put the turkey, bread crumbs, cheese, onion, egg, oregano, salt, and pepper in a medium bowl; using you hands, mix until well combined. Shape the mixture into a loaf and place on the foil in the slow cooker.
- Cover the slow cooker and cook until the meatloaf juices run clear or an instant read thermometer inserted in the center of the meatloaf registers 165°F, 3 to 4 hours on high or 6 to 8 hours on low.
- In a small bowl, combine the ketchup, sugar, Worcestershire sauce, and mustard. Spoon the mixture over the meatloaf, spreading it smooth. Cover the slow cooker and cook until the glaze is heated through, about 30 minutes longer. With the help of the foil, lift the meatloaf from the slow cooker and transfer to a platter. Discard foil and cut the meatloaf into 6 slices. Yields 1 slice meatloaf per serving.

Very easy quick meatloaf recipe. I make many varieties of meatloaf... sometimes the Italian with breadcrumbs, garlic, eggs, etc... This version is a tasty quick BBQ recipe that is great for busy nights or dinner in a rush. - While oven is preheating, mix in a large bowl all ingredients except for the 1/8 cup of BBQ sauce.
