GARLIC PAN- ROASTED GAME HENS



Garlic Pan- Roasted Game Hens image

2 teaspoons Dijon mustard
Salt
3 tablespoons olive oil
2 game hens, about 1 and 1/2 pounds each, split in half
4 small peeled garlic cloves
1/4 cup red wine vinegar
1/4 cup chicken broth
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary

Steps:

  • Heat the olive oil in a large skillet, over medium heat for about 2 minutes or until almost smoking. Add the game hens, skin side down, and saute for 5 minutes or until golden. With tongs, turn the hens over, add the garlic and saute for another 5 minutes.
  • Add the vinegar and broth which will bubble up, then the thyme and rosemary. Cover and simmer, over low heat, for 25 to 30 minutes or until the juices run clear, not rosy, when the thigh is pricked with a fork. Transfer the hens to a plate. Stir the mustard into the juices in the skillet and boil down furiously, until 1/2 cup of liquid remains, scraping the brown cooking particles into the sauce. Season with salt and pepper, spoon over the hens and serve immediately.

1 onion, diced
1 bottle apple cider vinegar
Barbecue sauce
3 Rock Cornish game hens
Olive oil
Barbecue dry rub
Salt and freshly ground black pepper
3 aluminum cans

Steps:

  • Combine onion, apple cider vinegar, and barbecue sauce. Set aside.
  • Coat hens with oil, dry rub, salt, and pepper. Refrigerate overnight.
  • Cut aluminum cans in half. Fill cans with onion, vinegar, and barbecue sauce mixture. Place the cans on a hot grill, and set the hens on top of the cans. Grill for approximately 1 hour.
  • Brush lightly with barbecue sauce after 1 hour of cooking.

TEQUILA AND LIME GAME HENS (OR CHICKEN)



Tequila and Lime Game Hens (Or Chicken) image

Split game hens marinated in tequila and roasted. COULD BE GRILLED IN SUMMER. Serve with rice. This is for 4 servings, 1/2 hen each, or 2 servings if you want a whole hen per person. Prep time includes overnight marinating. NOTE: A cut up fryer chicken could be used instead of game hens.

2 Cornish hens
1/2 cup fresh lime juice
1/3 cup gold tequila
1/4 cup olive oil
2 tablespoons Cointreau liqueur
2 garlic cloves, peeled and minced
1 jalapeno pepper, minced (leave seeds in)
salt and pepper

Steps:

  • Split game hens in half.
  • In bowl, combine lime juice, tequila, olive oil, Cointreau, garlic and jalapeno.
  • Place split hens in oblong baking dish and pour tequila mixture over; turn hens to coat.
  • Cover and marinate, turning once or twice, overnight in refrigerator.
  • Remove from refrigerator and let set at room temperature about 1 hour before cooking.
  • Preheat oven to 400°F.
  • Coat a shallow baking pan with nonstick cooking spray.
  • Remove hens from marinade and arrange, skin-side up, in baking pan.
  • Season with salt and pepper to taste.
  • Bake at 400 degrees on upper rack of oven, basting occasionally with marinade, until skin is golden and juices from thighs, pierced at their thickest part, run pinkish-yellow, 30-40 minutes. (Or bbq using your favorite method, spit or on the grill).
  • Boil remaining marinade and pour over hens just before serving. (Add more tequila if needed, to make enough sauce).

Got this easy recipe from a friend of mine who loves game hens so I thought I would post it here for you to try sometime. i like these, but don't make them as often as I could/should.

4 Cornish hens (approx. 1 lb. each)
1 tablespoon olive oil
salt
black pepper
oregano, to taste
1/4 cup butter
1/4 cup finely chopped onion
1/4 cup finely chopped celery
2 cups small white bread cubes
1/2 teaspoon dried oregano leaves
1/4 teaspoon celery salt
1 dash black pepper
1 tablespoon water
1/2 cup water
2 tablespoons butter
salt
pepper

Steps:

  • Remove bags of liver and neck from hens, rinse hens and pat dry.
  • Rub skins with oil.
  • Season hens inside& out with salt,pepper and oregano, set aside.
  • Stuffing:.
  • Make stuffing by heating butter till bubbly (do not burn).
  • Add onion and celery and cook for 1 minute.
  • Stir in bread cubes, oregano, celery salt, pepper and water.
  • Loosely stuff each hen with 1/4 of the stuffing.
  • Place stuffed hens in a roastin pan and cook at 450 degrees for 20 minutes.
  • Reduce heat to 350 and roast for another 30 to 40 minutes or until juices run clear when thigh is pricked with a fork.
  • Place on warm serving platter.
  • Sauce:.
  • Skim off exces fat from juices in pan, add water and butter.
  • Simmer for 2 miutes, season to taste and serve with hens.

4 teaspoons fresh thyme, chopped
fresh thyme, for garnish
3 garlic cloves, finely chopped
2 teaspoons lemons, zest of
2 teaspoons lime zest
1 teaspoon honey

2 rock cornish game hens, halved lengthwise

Steps:

  • Prepare BBQ (Medium heat).
  • Combine olive oil, chopped thyme, garlic,lemon peel, lime peel, honey, salt, and pepper in a baking dish and stir marinade to blend well.
  • Place hens on work surface and cover with plastic wrap and pound gently with mallet to flatten slightly.
  • Place hen halves in marinade in dish, using fingers, rub both sides of hens with marinade.
  • Let marinate 20 minutes at room temperature.
  • Grill hen halves until just cooked through and skin is lightly charred, brushing with remaining marinade, about 12 minutes per side.
  • Arrange hen on plates and garnish lemon wedges, lime wedges, and fresh thyme sprigs.

4 Cornish hens, without giblets thawed
1 tablespoon cumin, crushed
2 teaspoons oregano leaves
1 teaspoon vegetable oil
4 garlic cloves, minced
2 teaspoons salt, kosher
4 teaspoons lime peel, grated
1/2 cup lime juice
1/4 cup olive oil
2 large chipotle chiles in adobo, finely chopped, with
1 teaspoon adobo sauce

Steps:

  • Heat a small skillet over medium.
  • Add cumin seeds; heat 1 minute.
  • Add oregano; cook and stir 30 seconds or until cumin is lightly toasted.
  • Add 1 teaspoon oil and garlic; cook 30 seconds.
  • Remove from heat.
  • Blend cumin mixture and remaining ingredients, except hens, in a small bowl.
  • Wash hands.
  • Rinse hens and pat dry.
  • Lightly salt and pepper inside of hens.
  • Secure wings to hens and tie legs together with string, if desired.
  • Place marinade in a large resealable plastic bag; add hens and seal bag.
  • Wash hands.
  • Turn bag to coat hens evenly with marinade.
  • Refrigerate at least 8 hours or overnight, turning occasionally.
  • Set up grill for indirect cooking: For gas grill, preheat all burners on high.
  • Turn one burner off; place food over "off" burner.
  • Reset remaining burner(s) to medium.
  • Close lid.
  • For charcoal grill, arrange hot coals around outer edge of grill; place disposable pan in open space; place food over open area.
  • Close lid. Heat to medium.
  • Wash hands.
  • Remove hens from marinade; discard leftover marinade.
  • Place hens (not touching) over indirect heat on grill.
  • Wash hands.
  • Grill hens, covered, 50 to 60 minutes or until done (internal temp 180ºF).
  • Let stand 5 minutes before serving.
  • Serving Suggestion: Serve with black bean salad and corn on the cob. Refrigerate leftovers.
