- Preheat an outdoor grill for medium heat, and scrape the grates clean. Spray grates with nonstick cooking spray.
- In a bowl, mix together the ground beef, ground pork, bread crumbs, onion, egg, Worcestershire sauce, garlic, tarragon, sea salt, and black pepper. Divide the mixture in half, and form 2 loaves, each about 4 inches in diameter and 6 inches long. In a small bowl, mix the barbecue sauce with ketchup until well combined.
- Place each meatloaf directly on the prepared grill grates, then spread each with about 3 tablespoons of barbecue sauce mixture; grill until the loaves reach an internal temperature of at least 160 degrees F (73 degrees C), about 1 hour.

- Set up your barbecue for the heat canyon technique (place the coals on opposite sides of the barbecue to make two heat walls - this will create sections of hot, direct heat on the sides, with an indirect, cooler area in the middle to ensure your meat gets consistent heat throughout the cook). Place a drip tray inside the middle of the barbecue. Cover with the lid and allow to heat up like an outdoor oven - you want a temperature of around 160°C/320°F.
- To make your sauce, combine the BBQ sauce and ketchup with a few drops each of Tabasco and chilli sauce, then set aside. Finely dice the onion, pepper and carrot, then put into a large bowl with all the mince, the garlic, bay, Worcestershire sauce, breadcrumbs, salt and pepper. Beat the eggs and add to the mixture, then use your hands to scrunch and mix it all together. Grate in half the cheese (if using), and scrunch to combine.
- Remove the mixture to a clean work surface and shape into a rectangular loaf (roughly 25cm in length). Using the handle of a wooden spoon, make four diagonal indents (roughly 1cm deep) into the top of the loaf at 3cm intervals, then pour over half the sauce. Place the meatloaf on a big piece of tin foil or in an old roasting tray, then place on the middle of the barbecue. Cover with the lid and cook for 1 hour to 1 hour 15 minutes, or until cooked through. Grate and sprinkle over the remaining cheese (if using), and continue cooking for a minute or so with the lid on, until melted. When I've made 'barbeque meatloaf' before I've simply used the standard spoon-the-glaze-on-top-of-the-loaf-and-bake-it method. This time I wanted to line the loaf pan with some of the sauce, press the meat in, and let it roast in the goodness. I was envisioning a beautiful, glossy finish when I turned it on to the serving platter. It wasn't quite as aesthetically pleasing as I hoped (ugly). But, hey--this is quick and dirty home cooking. - Preheat oven to 325 degrees F (165 degrees C).

- Preheat oven to 350° Fahrenheit (180° Celsius).
- Transfer diced bread into a bowl (soup bowl will do) and pour over the milk. Soak until soft, but don't wait until it turns mushy.
- In a mixing bowl, mix together (with hand) the soaked bread with ground meat, egg, salt, pepper, garlic powder, basil, Worcestershire sauce and BBQ sauce. This will only take a minute or two. You want all the ingredients to be distributed evenly.

- Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
- Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
- Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
- Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.

- Prepare a grill for medium-high heat.
- Stir together the milk, egg, breadcrumbs, Worcestershire sauce and 1 tablespoon of the barbecue sauce in a medium bowl.

- Get your grill ready: Set up your grill for indirect cooking with a foil drip pan. We are looking for a medium high heat of about 400°F.
- Gather your ingredients: You can always make the meatloaf ahead and have it ready to go in your refrigerator. If your meatloaf is chilled it can be placed directly on the grill for an allover crust.
- Cook the vegetables: Heat the oil in nonstick skillet on your side burner over medium heat. When hot cook the onions until golden, about 6 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Blend the meat: Process saltines and milk in food processor until smooth, add the beef and pork and pulse until well combined, about ten 1-second pulses.
- Shape the loaf: Transfer meat mixture to a sheet of foil and shape into 9- by 5-inch loaf. Wet your hands and smooth the top of the meatloaf.
- Place on the grill: Place the meatloaf on indirect heat over the dip pan so that the grease will drain into the pan, close the lid and let it cook for about 45 minutes at 400°, if you like you can add a handful of wood chips at this time for a little smoky flavor.
- Making the glaze: Whisk all the ingredients in saucepan until sugar dissolves. Simmer the glaze over medium heat until slightly thickened, about 5 minutes.
- Glazing the meatloaf: Do not glaze the meatloaf until it forms a crust. This is the greatest part of cooking it free form on a grill, after 45 minutes take the temperature and glaze it for the first time.

- In a large bowl, pour milk over bread slices and allow to soak for a couple minutes. Then stir (or use your hands) break up the bread (should basically fall apart).
- Add the eggs, Parmesan cheese, parsley flakes, seasoned salt, salt, and pepper. Stir to combine.
- Form the beef mixture into a loaf shape and place on a baking pan or broiler pan. I use a broiler pan so the grease can drain away while the meatloaf cooks. I also make sure to line the bottom section (the part without the holes) of the broiler pan with foil for simple clean up.
