Ingredients

1 lb boneless skinless chicken thighs
1 can (16 oz) baked beans
1 can (15 to 19 oz) Progresso™ cannellini beans, rinsed, drained
1/4 cup barbecue sauce
1 bag (12 oz) frozen cut green beans, thawed, drained
1 cup coarsely chopped carrots (about 2 medium)
1 can (1.75 oz) shoestring potatoes (1 cup)

Steps:

Heat oven to 375°F. Spray 2-quart casserole with cooking spray. Cut each chicken thigh into 4 pieces. In casserole, mix chicken and remaining ingredients except shoestring potatoes.
Cover and bake 1 hour, stirring once. Uncover casserole; stir well. Bake uncovered 25 to 30 minutes longer, topping with shoestring potatoes for last 10 minutes, until chicken is no longer pink in center.

This recipe turns the flavors of a backyard barbecue into a casserole with chicken, bacon, cheese, beans, barbecue sauce, and fluffy biscuits!

Ingredients

4 slices center cut bacon
12 oz cooked shredded or chopped skinless chicken breast
15.5 oz can of navy beans or white beans (drained and rinsed)
1 cup barbecue sauce (I use Stubbs Original and highly recommend it)
8 oz can tomato sauce
1 (7.5 oz) can of refrigerated biscuit dough, biscuits cut into quarters
4 oz 1 cup 50% reduced fat shredded Cheddar cheese

Steps:

Pre-heat the oven to 350. Lightly mist a 9x13 baking dish with cooking spray and set aside.
Cook the bacon according to package directions until crisp and set on paper towels to dry. Chop into smaller pieces.
Place the chicken, beans, barbecue sauce, tomato sauce and chopped bacon in the baking dish and stir together until combined. Add the biscuit pieces and stir in to coat. Bake for 25 minutes. Remove from the oven and sprinkle the cheddar cheese over the top. Return to the oven for another 15 minutes until the casserole is hot and the biscuits have bubbled up. Slice into 6 pieces and serve.

Preheat oven to 350F (180C). Spray an 11 x 7-inch baking dish with cooking spray and set aside.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook onion and bell pepper just until tender (about 3 minutes). Reduce heat to low, add barbecue sauce, and simmer until thickens slightly (about 1-2 minutes). Stir in frozen corn, tomatoes, chicken, and ½ cup of the cheddar cheese.
In a separate bowl, prepare cornbread batter according to package instructions. Stir in remaining ½ cup of cheese.
