BUTTERSCOTCH BROWNIES (LOW-FAT BUT YOU'D NEVER KNOW IT)
When I found this recipe in an old Better Homes and Gardens dessert cookbook I had to try it out of simple curiosity. Even though it was not considered a low-anything recipe, there was absolutely no fat added; no butter, no shortening, no oil, no nothing. I am quite finicky when it comes to desserts, and I'd rather not have it than compromise. These surprised me. They were delicious, chewy, rich, almost like candy (which is why it is cut into small pieces) and you'd never know there was no fat added, other than what is in the egg and nuts.

Steps:
- Grease an 8x8 inch baking pan. Preheat the oven to 350.
- In a bowl, beat the egg well. Add the sugar and vanilla and mix well.
- Sift the flour with the salt and baking soda,then stir into the egg mixture.
- Stir in the nuts.
- Spread the batter in the prepared pan and bake for about 20 minutes.
- Cut into 16 squares while still warm.
- Cool, then remove from pan.

- 1. Heat oven to 350 degrees. Grease bottom and sides of a square 8×8 baking dish with shortening. 2. Melt butter in a 1 1/2 qt saucepan over low heat; remove from heat. Stir in brown sugar, vanilla, milk, and egg. Stir in remaining ingredients. Spread in pan (batter will be thick). 3. Bake for 25 minutes or until golden brown. Cool for 5 minutes in pan on wire rack. 4. Cut into rows 4x4. We like to top ours with some warmed salted caramel and a glass of milk.

RICH AND CHEWY LOW FAT BROWNIES
Amazingly rich and chewy, you would never know these are low fat. I have people asking me for this recipe whenever I make it. The applesauce is the secret ingredient in these delicious brownies! One suggestion I have to make them fudgier is to use a very high quality cocoa. I usually use Watkins or Epicure Selections and found a big difference from that and the kind you can buy in the store. It makes them a real dark chocolate in the middle and they are rich and chewy! This recipe also doubles well and will fit into a 9x13 pan.

Steps:
- Cream butter and sugar in a large bowl using a hand mixer. Add egg whites, applesauce and vanilla.
- Mix all other ingredients in a separate smaller bowl and add to the wet ingredients in the large bowl. Do NOT overmix!
- Spray 8x8 dish with PAM and bake at 350 degrees for 30-35 minutes. ENJOY!

- 3. Combine butter, brown sugar, and vanilla until creamy. Beat in eggs. Gradually add flour mixture.

Steps:
- In bowl, stir and set aside: flour, baking powder, salt and cocoa.
- In a glass bowl: add bittersweet chocolate and butter. Melt over a pot of boiling water. Be careful not to get any water in the chocolate!
- When melted, set aside to cool for 3-4 minutes.
- Whisk into melted chocolate: sour cream, sugar, egg and egg white, and vanilla.
- Fold in flour mixture.
- Stir in Hershey's syrup.
- Put aluminum foil on the bottom of a 8x8 baking pan. Spray with cooking spray. Pour brownie mixture into pan.
- Bake at 350°F for 20-25 minutes or until toothpick inserted in middle comes out with a few moist crumbs attached.
- Take out of oven and let it cool for about an hour before taking out of pan to cut into squares (They mentioned if you take them out without cooling, it won't get as moist).
