1 lb lean (at least 80%) ground beef
1 box Hamburger Helper™ Cheddar cheese melt
1 2/3 cups milk
1 1/3 cups hot water
1/4 cup barbecue sauce
1 tablespoon dried minced onion
1 cup crushed barbecue-flavored potato chips

Steps:

  • In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain.
  • Stir in uncooked pasta and sauce mix (from Hamburger Helper box), milk, hot water, barbecue sauce and onion. Heat to boiling, stirring occasionally. Reduce heat; cover and simmer about 10 minutes, stirring occasionally, until pasta is tender. Remove from heat.
  • Cover; let stand 5 minutes (sauce will thicken as it stands). Top with chips just before serving.

2 cups Original Bisquick™ mix
1 teaspooon ground mustard
1 cup milk
1 egg, beaten
1 teaspoon vegetable oil
1 cup chopped red bell pepper
1/2 cup chopped onion
1 pound cooked beef, shredded (about 2 cups)
1 cup barbecue sauce
2 cups shredded Cheddar cheese (8 oz)
1 cup dill pickle slices

Steps:

  • Heat oven to 350° F. Spray 13x9 inch pan with cooking spray. In large bowl, stir Bisquick mix, mustard, milk and egg until mixed. Pour and spread into pan.
  • Bake 15 to 17 minutes or until toothpick inserted in center comes out clean. (Top will not brown.) Remove from oven.
  • Meanwhile, in 10-inch skillet, heat oil over medium heat. Cook bell pepper and onion 3 to 4 minutes, stirring occasionally, until crisp-tender. Stir in barbecue sauce and beef. Cook until hot. Spread over baked bread base. Top with cheese and pickle slices.
  • Bake 5 to 6 minutes or until cheese is melted. Cut into squares.

3 tablespoons chopped fresh flat-leaf parsley
1 tablespoon finely chopped garlic
1 tablespoon Worcestershire sauce
1 teaspoon Montreal-style steak seasoning
6 slices white bread
6 slices Colby-Jack cheese

Steps:

  • Combine ground beef, parsley, garlic, Worcestershire sauce, and steak seasoning in a bowl; mix until thoroughly combined. Form into 3 evenly-sized patties.
  • Warm a nonstick griddle over medium heat. Place burgers onto the warm griddle and cook to desired doneness, 4 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Remove burgers and set aside.
  • Warm a second griddle over medium heat. Butter 1 side of each bread slice. Place a slice of bread onto the griddle, butter-side down. Add a slice of cheese, a burger, and a second slice of cheese. Top with another slice of bread, butter-side up. Repeat with remaining burgers.
  • Cook until bread is golden brown on the bottom, 3 to 5 minutes. Flip and cook until the other side is golden brown and cheese is melted, 3 to 5 minutes more.

Steps:

  • Heat oil in large nonstick skillet on medium-high heat. Add onions; cook 8 min. or until golden brown, stirring frequently and adding barbecue sauce the last few minutes. Remove onions from skillet; set aside. Carefully wipe skillet clean with paper towel.

1 pound ground beef
1 pinch salt and ground black pepper to taste
2 tablespoons butter
1 onion, sliced
6 slices dark rye bread
3 slices American cheese
3 slices Swiss cheese

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Pat out three 1/3-pound hamburger patties, pressing each patty down with your index and middle fingers to get a nice, flat burger instead of a ball. Season patties on both sides with salt and pepper.
  • Cook on the preheated grill until no longer pink in the centers, 10 to 12 minutes, flipping halfway. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Meanwhile, melt butter in a saucepan over low heat. Increase heat to medium-low, add onion, and saute until tender, 5 to 7 minutes.

1-1/2 lb crock pot cooked beef brisket or eye round (see recipe below if you are not doing this from leftovers)
1 medium onion, chopped
1 green pepper, chopped
1 Tbsp cilantro
1 tsp oregano
2-3 c reserved gravy/au jus from crock pot
2-3 Tbsp your fave BBQ sauce (I used Famous Dave's Sweet and Spicy)
4 slice lightly toasted rye bread with seeds (or not)
4 slice Swiss or sharp white chedder cheese to cover
fresh cilantro or parsley, for garnish
BEEF AND AU JUS - IF STARTING FROM SCRATCH
3 lb beef brisket or eye round
1 can(s) low sodium beef broth
1 can(s) water
1 pkg dry Italian salad dressing seasoning

Steps:

  • 1. IF STARTING FROM SCRATCH, HERE'S HOW TO COOK THE CROCK POT BEEF: Place 3 lbs of beef into crock pot with beef broth, water and Italian seasoning. Cook for 10 hours on low. This beef and it's au jus can be used for a number of recipes, including chimichanga filling, tacos, shredded beef nachos, etc.
  • 2. With 1-1 1/2 lbs of shredded tender beef remaining in crock pot, remove enough liquid to keep it totally drenched but not too soupy. Put that liquid aside for another use. Add chopped onion, pepper, cilantro and oregano into the crock pot with remaining beef and au jus. Turn crock pot up to high and cook for 40-60 mins.
  • 3. Take mixture out of crock pot and place in bowl. Add your BBQ sauce and combine.
  • 4. Place heaps of meat mixture onto the lightly toasted rye bread slices. Top with cheese. Broil until cheese melts and is bubbly brown.

250g strong cheddar , grated
4 tomatoes , roughly chopped
1 green or red chilli , deseeded and finely chopped
½ large bunch coriander , leaves roughly chopped
8 flour tortillas (we used Discovery)
oil , for brushing

Steps:

  • Put the cheese, tomatoes, chilli and coriander leaves into a bowl with some seasoning, then mix well.
  • Warm tortillas in the microwave according to pack instructions - this makes them more bendable. Divide the cheese mix over one half of each tortilla. Fold over the other half to make 8 half-moons, then press down to seal.
  • Brush the tops with a little oil, then sit, oil-side down, on a hot area of the barbecue. Cook for a couple of mins until crisp and golden, brush the uncooked side with oil, then flip over for another few mins. Slice into wedges, then pile onto a platter while you cook the rest.
